No doubt about this sweet potato pudding. Made with pumpkin, flaked coconut and marshmallows, it'll be a sweet surprise for your family.

Steps:
- Heat oven to 350ºF.
- Mix all ingredients except marshmallows and coconut until blended; spoon into 2-qt. casserole sprayed with cooking spray.
- Bake 45 min. or until heated through.
- Heat broiler. Top casserole with marshmallows. Broil, 6 inches from heat, 1 to 2 min. or until golden brown. Sprinkle with coconut. Serve warm.

- Preheat the oven to 400 degrees F. Spray an 8-inch square baking dish with cooking spray.
- On a foil-covered baking sheet, bake the sweet potatoes until soft, about 1 hour. Remove and let cool. Reduce the oven temperature to 325 degrees F. When cool enough to handle, peel the potatoes, place the flesh in a large mixing bowl, add the butter and mash until smooth. Add the eggs 1 at a time, beating well after each addition. Add the sugar, milk, cornmeal, salt and 1/2 teaspoon of the vanilla and beat until smooth. Pour the batter into the prepared baking dish. Arrange the pecan halves on top of the pudding and top with the brown sugar. Sprinkle the remaining 1/2 teaspoon vanilla by small droplets over the brown sugar. Bake until the top is browned, about 45 minutes.

- Scrub and pierce sweet potatoes. Bake at 350° for 1 to 1-1/4 hours or until very tender. , Cut sweet potatoes in half; scoop out pulp and place in a large bowl. Mash with milk and egg substitute. Stir in the brown sugar, flour, raisins, orange zest, pumpkin pie spice, vanilla and salt until blended. , Transfer to a 1-1/2-qt. baking dish coated with cooking spray. Cover and bake at 350° for 1-1/4 to 1-1/2 hours or just until top is set. Cool on a wire rack for 1 hour. Refrigerate for at least 2 hours. Serve with whipped topping.

- Preheat an oven to 375 degrees F (190 degrees C).
- Puncture acorn squash and pumpkin in several places using a knife. Wrap the sweet potatoes in aluminum foil. Place squash, pumpkin, and sweet potatoes on a baking sheet.
- Bake in the preheated oven until the pumpkin begins to cave in and the skin browns, about 2 hours.
- Remove the skin, then chop the sweet potatoes. Skin, seed, and chop the pumpkin and acorn squash. Place the sweet potatoes, pumpkin, and acorn squash in a large pot and mash until smooth. - Lay the sweet potatoes on the baking sheet and prick each one a few times with a fork. Bake the potatoes for 45-50 minutes, or until a fork poked in goes right through. Alternatively, working with 1 potato at a time, cut the potato in half, place both halves in a microwave-safe bowl and fill with water to reach halfway up the potato. Microwave on high for 3 minutes, then flip the potato halves over and cook for another 3 minutes. Repeat with remaining potatoes.
- Once the potatoes are done cooking, let them cool for 10-15 minutes, then scoop out the flesh into a blender or food processor. Pulse a few times to begin breaking up the sweet potato.
- Add the pumpkin, maple syrup, vanilla extract, salt, and remaining spices to the blender and blend until smooth.
