BACON HASSELBACK SWEET POTATOES
Steps:
- Preheat the oven to 425 degrees F.
- To a large cast-iron pan, add the bacon in an even layer. Turn the heat to medium and cook until crispy, around 4 minutes per side. Drain on paper towels and set aside. When cool enough to handle, break into pieces.
- To the bacon fat in the pan, add the maple syrup, paprika and 2 teaspoons salt. Set aside.
- One at a time, place a potato between the handles of 2 wooden spoons or 2 chopsticks. Slice each potato into 1/8-inch-thick slices; the spoon handles will prevent the knife from cutting all the way through. Place the potatoes in the pan and baste with the bacon fat/maple syrup mixture all over, including the bottoms and in between the slices. Roast until the potatoes are soft, basting halfway through, about 1 hour. Remove from the oven and add bacon between the slices. Place on a serving platter and garnish with the chives and salt to taste.

I made this for Thanksgiving dinner and my family went crazy over it. It is simple, looks great on the table and has already been requested for Christmas dinner! This recipe can be adjusted as you like by adding more or less bacon and onions.

SWEET POTATOES WITH BACON AND SPINACH
Steps:
- Preheat the oven to 400°F.
- Peel the sweet potatoes, and cut them into 1 1/2-inch cubes. Place them in a large bowl and toss with the sugar and reduced sherry.
- In a medium sauté pan, cook the butter over medium heat 6 to 8 minutes, until it's brown and smells nutty. Remove from the heat and let cool a few minutes. Add the sage and thyme to the butter, and pour it over the sweet potatoes, scraping the pan with a rubber spatula to get all the brown bits. Toss with a large spoon, being careful of the hot butter. Season with 1 tablespoon salt and 1/4 teaspoon pepper. Transfer the sweet potatoes to a large roasting pan and bake in the oven 50 minutes to 1 hour, until the potatoes are caramelized and tender. Stir with a metal spatula every so often, to coat the potatoes evenly with the butter and sugar.
- While the potatoes are cooking, slice the bacon lengthwise into 3/8-inch-thick slices. Stack them in two piles, then cut the strips crosswise into 3/8-inch even-sided rectangles, or lardons. Heat a large sauté pan over medium heat for 1 minute. Add the bacon, and cook about 5 minutes, until it's tender and lightly crisped. Using a slotted spoon, transfer it to a plate.
- When the sweet potatoes are done, remove the pan from the oven and toss in the bacon and spinach. Taste for seasoning.

- Heat a large (10 to 12-inch) cast iron skillet over medium-high heat and add the bacon. Cook, stirring frequently, until the bacon has crisped up and much of the fat has rendered, about 5 to 8 minutes. Use a metal spatula to transfer the bacon to a bowl or plate and set aside.
- Add the onions to the skillet and cook in the bacon fat until they begin to turn translucent, stirring occasionally, about 3 to 5 minutes. Transfer the onions to the same plate/bowl as the bacon, leaving the bacon drippings behind.
- Transfer the sweet potatoes to the skillet and stir very well until the potatoes are coated in bacon fat. Note: if at any point you run out of fat, add 1 to 2 tablespoons of avocado oil to the skillet. Cover the skillet and allow potatoes to cook undisturbed for 5 minutes. Use the metal spatula to stir the potatoes well, then cover the skillet again and cook another 2 to 3 minutes.
- Add the bacon and onions back to the skillet and incorporate them into the potatoes with the spatula.
