Steps:
- Preheat oven to 350 and grease 9x5 inch loaf pan.
- Add the egg, mashed sweet potatoes, coconut oil, greek yogurt and maple syrup to a bowl. Whisk until combined.
- In another bowl, add flour, oat flour, sugar, cinnamon, salt, baking powder and baking soda.
- Mix the dry into the wet ingredients, folding the chocolate chips in last. The batter should be thick.
- Bake for 40-45 minutes, or until toothpick comes out clean.
- Let cool for 5-10 minutes before slicing.

Cook for 45 minutes and then turn the oven off, leaving the sweet potatoes in the hot oven for 30 minutes. Set aside and let cool. Remove the potato flesh from the skin and puree in a blender.
- Prepare the flax egg. Whisk together the 3 tablespoons of water with 1 tablespoon of flax seeds. Set aside and let sit for 15 minutes.
- In a medium bowl, mix together the oat milk, flax egg, oil, mashed banana, sweet potato puree, vanilla, and cider vinegar.
