SICILIAN GRILLED SWORDFISH



Sicilian Grilled Swordfish image

Number Of Ingredients 8

2 tablespoons freshly squeezed lemon juice
1/4 cup good olive oil
2 teaspoons minced fresh oregano leaves or 1 teaspoon dried oregano
Pinch of crushed red pepper flakes
Kosher salt and freshly ground black pepper
6 (1/2-inch-thick) swordfish steaks (5 to 6 ounces each)
4 ounces baby arugula
Grated zest of 1 lemon

Steps:

  • Light a charcoal grill or preheat a gas or stovetop grill until very hot.
  • For the sauce, whisk together the lemon juice, olive oil, oregano, red pepper flakes, 1 tablespoon salt, and 1 teaspoon black pepper. Set aside.
  • When the grill is ready, sprinkle the fish with salt and pepper and cook over medium-high heat for 2 minutes on one side, then turn and cook for 1 to 2 minutes on the other side until almost cooked through. Remove to a flat dish, prick holes in the fish with the tines of a fork, and pour the lemon sauce over the fish while it¿s still hot. Sprinkle liberally with salt and pepper, cover with aluminum foil, and allow to rest for 5 minutes.
  • When ready to serve, place the swordfish on dinner plates or a serving platter, pile the arugula on top, drizzle with the sauce from the fish, and sprinkle with the grated lemon zest. Serve warm.

SWORDFISH WITH ACHIOTE AND ORANGE



Swordfish with Achiote and Orange image

An achiote rub is the classic Yucatan way of marinating fish. I tasted this rub for the first time in Isla Mujeres in the early 1970s, when you could still live on the beach in a palapa and hammock, eat great seafood, and drink cold beers for a few dollars per day. The fishermen would rub fish with an achiote-citrus paste and grill them on the beach over fires made from coconut husks. When I worked at Chez Panisse in the late 1970s, I duplicated this rub from my taste memory for some of their famous garlic festivals. The light citrus flavors of the achiote paste are a beautiful contrast to the oily texture of the swordfish. If you don't have swordfish, use another meaty ocean fish such as wahoo or mahi mahi.

1/2 cup fresh orange juice
2 teaspoons dried Mexican oregano, toasted and ground (page 161)
1 1/2 tablespoons chopped garlic
1 habanero chile, seeded and chopped
3 teaspoons achiote paste (page 149)
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1/4 teaspoon ground allspice, ground
1 tablespoon lemon-infused olive oil (page 162)
2 tablespoons chopped fresh cilantro leaves
1 Fresno chile, seeded and chopped
1 tablespoon fresh lime juice
1 tablespoon sugar
2 pounds boneless, skinless swordfish fillets, cut into 1-inch cubes
3 tablespoons vegetable oil
8 (5 1/2-inch) soft white corn tortillas (page 13), for serving
Garnish: Shredded lettuce and lime wedges

Steps:

  • Mix all the ingredients except for the fish, oil, tortillas, and garnish in a large bowl. Toss the fish cubes in the mixture and marinate for at least 3 hours.
  • Remove the fish from the marinade, shaking off any excess liquid; discard the marinade. In a large, heavy skillet, heat the oil over medium-high heat and sauté the fish on all sides until cooked through, about 7 minutes.
  • To serve, lay the tortillas side by side, open face and overlapping on a platter. Divide the shredded lettuce and filling equally between the tortillas and top with salsa and a squeeze of fresh lime. Grab, fold, and eat right away. Or build your own taco: lay a tortilla, open face, in one hand. Add some shredded lettuce, spoon on some filling, and top with salsa and a squeeze of fresh lime. Fold, and eat right away.

LEMON SWORDFISH BROCHETTES

1 1/2 pounds swordfish steaks, at least 1-inch thick
3 tablespoons frozen lemonade concentrate
2 teaspoons crushed garlic
1/3 cup white wine vinegar
1 (8-ounce) bottle clam juice
2 teaspoons salt-free lemon pepper
1/3 cup flat-leaf parsley, finely chopped
24 cherry tomatoes
2 lemons, cut into 1/8ths

Steps:

  • Remove skin from swordfish and cut into 1-inch cubes; set aside.
  • Soak wooden skewers in water for 30 minutes
  • In small bowl, stir together lemonade concentrate, garlic, vinegar, clam juice, lemon pepper, and parsley; set aside. Alternate fish and tomatoes on soaked skewers. Secure both ends with a wedge of lemon.
  • Place skewers in a large resealable bag. Pour in marinade. Marinate in refrigerator for 1 to 2 hours.
  • Remove skewers from refrigerator 30 minutes before cooking, to bring to room temperature.
  • Light grill and preheat to medium-high. Brush and oil grate when ready to start cooking.
  • Remove skewers from marinade and place on preheated, oiled grill. Discard marinade.
  • Grill 3 to 4 minutes per side (about 12 to 16 minutes total). Serve hot.

GRILLED SWORDFISH STEAKS WITH ORANGE THYME SAUCE

2 swordfish steaks (about 2 to 2 1/2 pounds in all)
3 tablespoons olive oil
2 tablespoons unsalted butter
1 shallot, minced
1 clove garlic, minced
2 medium-ripe tomatoes, peeled, seeded and chopped
1/4 cup fresh thyme leaves
2/3 cup fresh orange juice
1/4 to1/2 cup dry white wine
Coarse salt and freshly ground pepper to taste

Steps:

  • Wipe the swordfish steaks dry with paper towels. Coat on both sides with two tablespoons olive oil. Set aside.
  • Heat the remaining olive oil in a skillet with one tablespoon butter. Add the shallots and garlic and cook until soft. Add the tomatoes and thyme and cook for three minutes.
  • Add the orange juice and white wine and reduce slightly, cooking for five more minutes. Season with salt and pepper and set aside until the fish is about to be grilled.
  • Preheat coals for grilling. Cook the fish about five minutes on each side, depending on the thickness of the steaks. Meanwhile, bring the sauce to a boil. Off heat, stir in the remaining butter. Pour the sauce over the steaks and serve.

48 bay leaves
2 pounds fresh swordfish, cut in 36 1 1/2-inch cubes
1/2 cup fresh orange juice
2 large cloves garlic, finely minced
2 tablespoons extra-virgin olive oil
Hot red pepper flakes to taste
Salt to taste
2 juice oranges, each cut in 12 wedges
2 cups steamed white rice seasoned with salt and black pepper
1 tablespoon finely minced parsley

Steps:

  • Put the bay leaves and 24 12-inch wooden skewers in warm water to soak.
  • Put the swordfish cubes in a shallow dish. Mix the orange juice, garlic, oil, pepper flakes and salt together and pour over the swordfish, turning the fish to coat it. Refrigerate to marinate 30 minutes.
  • Light a grill.
  • Holding two skewers close together, thread each with alternating swordfish, bay leaf, orange wedge and another bay leaf, repeating the ingredients and ending with a piece of swordfish.
  • Grill the brochettes about 10 minutes, until the swordfish is cooked through. Serve on a bed of rice seasoned with salt and pepper. Sprinkle with parsley.
