6 Tablespoons unsalted butter, softened
2 1/3 cups confectioners' sugar
3/4 cup unsweetened cocoa powder
1/3 cup whole milk
2 teaspoons vanilla extract
1/4 teaspoon salt

Steps:

  • In the bowl of a stand mixer fitted with the paddle attachment, beat the butter on medium speed until it is smooth, about 1 minute.
  • Add the confectioners' sugar and cocoa powder to the bowl and beat until combined. With the stand mixer running on low speed, slowly stream in the milk and vanilla extract then add the salt and continue beating until well combined, scraping down the sides as needed, about 2 minutes.
  • Increase the speed to high and beat the frosting for an additional 2 minutes. Use the frosting immediately or store in an airtight container in the fridge. (If you refrigerate the frosting, you may want to re-blend it for a few seconds in the stand mixer before using it.)

6 ounces pasteurized egg whites
24 ounces powdered sugar
3 ounces cocoa powder
1 Tablespoon vanilla extract
1 teaspoon salt
24 ounces unsalted butter (Room Temperature)

Steps:

  • Sift together the powdered sugar and cocoa powder to remove any clumps.
  • Place egg whites, powdered sugar and cocoa powder in a stand mixer bowl.
  • Attach the whisk and combine ingredients on low and then whip on high for 5 minutes.
  • Add in your room temperature butter in chunks. Whisk on high for 8-10 minutes until light and fluffy. Don't be afraid to let it whip, when it's done it will no longer taste like butter.
  • Optional: If your buttercream looks curdled, remove one cup of the buttercream and melt it in the microwave for 10-15 seconds until its JUST barely melted. Add the melted buttercream back into the whipping buttercream and it will make it all come together.
  • Add in your salt and vanilla extract. Mix until combined.
  • Optional: Remove the whisk and place the paddle attachment onto the mixer. Let your buttercream mix on low until the mixture is smooth and creamy and there are no bubbles left. This can take 15-20 minutes and works best with a double batch of buttercream and the entire paddle is covered.

1 ounce mayonnaise
3 ounces semisweet chocolate, melted and cooled slightly
8 ounces powdered sugar
Pinch kosher salt

Steps:

  • Beat the butter and mayonnaise in the bowl of a stand mixer fitted with the paddle attachment, on high, until light and fluffy, 3 to 4 minutes. With the mixer on low, slowly add the melted chocolate. Continue mixing on low speed until all of the chocolate is incorporated, stopping to scrape down the sides of the bowl as needed.
  • Turn off the mixer and add one-third of the sugar. Mix on low to combine, stopping to scrape down the sides of the bowl. Repeat until all of the sugar has been incorporated. Add the salt and continue to beat until the frosting is smooth and lightens slightly in color, 2 to 3 minutes.
  • Use immediately or store in an airtight container at room temperature for up to 4 hours or refrigerate for up to a week. Bring to room temperature before using chilled frosting.

1 1/2 cups granulated sugar
1/4 teaspoon cream of tartar
3/4 teaspoon kosher salt
1 1/2 pounds unsalted butter, at room temperature
3 teaspoons pure vanilla extract
3 teaspoons instant espresso powder, dissolved in 1 1/2 teaspoons water
3 tablespoons dark rum, optional

Steps:

  • Chop the chocolates and place them in a heat-proof bowl set over a pan simmering water. Stir until melted and set aside until cooled to room temperature.
  • Mix the egg whites, sugar, cream of tartar, and salt in the bowl of an electric mixer fitted with a whisk attachment. Place the bowl of egg whites over the pan of simmering water and heat the egg whites until they are warm to the touch, about 5 minutes. Return the bowl to the electric mixer and whisk on high speed for 5 minutes, or until the meringue is cool and holds a stiff peak.
  • Add the butter, 1 tablespoon at a time, while beating on medium speed. Scrape down the bowl, add the melted chocolate, vanilla, espresso, and rum, if using, and mix for 1 minute or until the chocolate is completely blended in. If the buttercream seems very soft, allow it to cool, and beat it again.

I was making homemade frosting the other day and was surprised that it tasted just like vanilla ice cream. It's based on an Italian buttercream. It's good enough to eat without a cake.

3 egg whites
1 1/2 cups white sugar
3/4 cup water
12 ounces salted butter, room temperature
1 tablespoon vanilla extract
5 drops food coloring (optional)

Steps:

  • Begin whipping the egg whites with an electric stand mixer on high.
  • While egg whites are whipping, mix sugar and water in a thick-bottomed pot and heat to 220F (104.4C) or the "Soft Ball" state.
  • The boiling mixture should have large glassy bubbles.
  • When egg whites are fluffy and close to stiff, slowly drizzle the sugar mixture into the mixer while the mixer is still on high.
  • Reduce the speed of the mixer to medium or low and allow it to cool off.
  • The sugar/egg white mixture must be cool before the next step! If need be, refrigerate until room temp or lower.
  • Break the butter into approximately one half to one inch cubes.
  • Turn mixer on high and add the vanilla and optional color. Then add the butter pieces one by one.
  • If the mixture collapses, it means the mixture was too warm and you have to start over.
  • Once all of the butter has been incorporated, you are done. Taste it, and it will remind you of vanilla ice cream.
