Taco Stuffed Avocados image

Taco Stuffed Avocados is cooked flavorful ground beef stuffed in a ripe avocado loaded with chopped tomatoes, sliced olives, shredded lettuce and sprinkled cheese. A healthy twist on tacos!

1 pound ground beef
1 tablespoon Chili Powder
1/2 teaspoon Salt
3/4 teaspoon Cumin
1/2 teaspoon Dried Oregano
1/4 teaspoon Garlic Powder
1/4 teaspoon Onion Powder
4 ounces tomato sauce
3 avocados halved
1 cup shredded cheddar cheese
1/4 cup cherry tomatoes sliced
1/4 cup lettuce shredded
cilantro
sour cream

Steps:

  • Add the ground beef to a medium size sauce pan. Cook over medium heat until browned.
  • Drain the grease and add the seasonings and the tomato sauce. Stir to combine. Cook for about 3-4 minutes.
  • Remove the pit from the halved avocados. Load the crater left from the pit with the taco meat. Top with cheese, tomatoes, lettuce, cilantro and sour cream.
  • If you want to make a larger area in the avocado for the toppings, spoon out some of the avocado and set aside to make guacamole! Then fill with toppings.

1 pkg. (1 oz.) TACO BELL® Taco Seasoning Mix
4 large avocados
1 cup KRAFT Mexican Style Finely Shredded Four Cheese
1/2 cup shredded lettuce
1/2 cup quartered cherry tomatoes
1/4 cup chopped red onions

Steps:

  • Cook meat with taco seasoning mix as directed on package.
  • Cut avocados lengthwise in half. Remove and discard pits. Use spoon to scoop avocado flesh into medium bowl; mash with fork. Spoon into avocado shells.
  • Top with taco meat and remaining ingredients.

  • Halve the avocados, remove the pit, and using a spoon, widen and deepen the hole where the pit is so you can accommodate more taco filling. Alternatively, use a small paring knife to score the area vertically and horizontally, and then use spoon to carefully remove the small chunks. This is the visually neater method but either way works; set the avocado halves and the flesh that you removed aside.
  • To a large skillet, add the beef and cook over medium high heat for about 5 minutes, or until beef is cooked through and no longer pink; stir intermittently and crumble beef as it cooks.
  • Evenly sprinkle the taco seasoning over the beef, add the water, stir to combine, and cook for about 3 minutes.
  • Turn off the heat and add most of the package of shredded cheese, reserving about 1/2 cup to use for garnishing. Stir to combine and encourage the cheese to melt, it will only take about 1 minute.
