Grandma's Taffy image

A quick and easy recipe for any flavor of taffy you can think of!

Provided by Chocolate Moose

Categories     Desserts     Candy Recipes

Time 20m

Yield 40

Number Of Ingredients 9

2 cups sugar
2 tablespoons cornstarch
4 tablespoons butter
1 teaspoon salt
½ cup corn syrup
1 ½ cups water
2 teaspoons vanilla extract
1 tablespoon orange, or other flavored extract
8 drops any color food coloring

Steps:

  • In a large saucepan, stir together the sugar and cornstarch. Add the butter, salt, corn syrup and water; mix well. Bring to a boil over medium heat, stirring to mix in butter. Heat to 275 degrees F (134 degrees C), or until a small amount of syrup dropped from a spoon forms hard but pliable threads.
  • Remove from heat, and stir in the vanilla, flavored extract and food coloring. Pour into a greased 8x8 inch baking dish. When cooled enough to handle, remove candy from the pan, and pull until it loses its shine and becomes stiff. Pull into ropes, and use scissors to cut into 1 inch pieces. Wrap each piece in waxed paper.

Categories     dessert

Time 55m

Yield 30 servings

Number Of Ingredients 6

1 1/4 cups corn syrup
1 cup sugar
1 tablespoon water
1 teaspoon butter
1 tablespoon white vinegar
1/2 teaspoon vanilla and/or mint extract

Steps:

  • In a large saucepan, place all the ingredients except extracts, and gently stir them to combine. Place a candy thermometer on the side of the pan and bring to a boil, stirring only to prevent burning. Cook to hardball stage (265 to 270 degrees), remove from the heat, stir in the extracts, and pour onto a silpat-lined sheet pan or buttered sheet pan. Let it cool enough to handle then start rolling it into a log and stretching or pulling the taffy to work air in and make it white and opaque. Keep pulling and twisting until it hardens. Form long ropes of taffy, then cut them into pieces.
  • Some tips when making taffy: Oil the top 1-inch of the saucepan's wall to keep the sugar from boiling over. Always use a pan bigger than you think you need to prevent boiling over. Always use a burner as big or bigger than your pan's bottom. Never scrape the bottom of the pan at the end, just pour out the syrup. Wash down the sides of the pan with a clean wet pastry brush to avoid crystallization.

CANDY APPLES

Candy Apples image

Candy apples are a classic fall dessert that family and friends are sure to love. Use your apple-picking haul to make the ultimate Halloween treat, complete with a sticky-sweet caramel coating.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes

Yield Makes 6 medium or 12 mini candy apples

Number Of Ingredients 6

Unsalted butter, for parchment paper
2 cups sugar
3/4 cup water
1/2 cup light corn syrup
1/2 teaspoon red food coloring, (optional)
6 medium apples, or 12 lady apples

Steps:

  • Line a baking sheet with parchment paper; butter parchment, and set aside. In a medium heavy-bottomed saucepan, combine sugar, 3/4 cup water, corn syrup, and food coloring, if using. Insert candy thermometer and continue to boil until temperature reaches between 300 degrees and 310 degrees (hard crack stage), about 20 minutes.
  • Meanwhile, insert a wooden stick into the top of each apple, pushing about halfway through; set aside. When mixture reaches temperature, immediately remove from heat. Working quickly, dip apples in sugar mixture until completely coated. Transfer to prepared baking sheet; allow to cool.

OLD-FASHIONED RED CANDIED APPLES

Old-Fashioned Red Candied Apples image

These are the kind you found at the circus or carnival! Not the newer version covered with cramel. ;) Candy thermometer is needed for this, as well as popsicle sticks. The number of apples needed depends on the size of the apples, probably 4 medium ones. The recipe states that each batch candies approximately 1 dozen medium apples. I'm not sure I trust that. Cook time depends on your altitude where you live, heat of your burner, and pot used. NOTE: See review by Canada Goose for helpful hints! Thanks, CG!

WARM TAFFY APPLES WITH CINNAMON TWISTS

Warm Taffy Apples with Cinnamon Twists image

Provided by Food Network

Categories     dessert

Time 1h5m

Yield 6 warm taffy apples

Number Of Ingredients 15

6 Granny Smith apples
12 tablespoons (1 1/2 sticks) unsalted butter
1 1/2 cups sugar
3 tablespoons brandy
1 tablespoon freshly squeezed lemon juice
Cinnamon Twists, recipe follows
Caramel Sauce, recipe follows
1/4 cup coarsely chopped peanuts
1/2 sheet frozen puff pastry, thawed
2 tablespoons unsalted butter, melted
1/4 cup sugar
1 teaspoon cinnamon
2 1/2 cups sugar
1/2 cup water
1 cup heavy cream

Steps:

  • Peel and core the apples, leaving them whole. Cut the tops and bottoms off the apples to give them flat surfaces to rest on. In a skillet, melt the butter over medium heat. Stir in the sugar and cook over medium-high heat, stirring, until the mixture begins to turn golden brown and caramelized. Add the brandy and lemon juice and stir to blend. Adjust the heat so the mixture remains at a simmer. Place the apples in the liquid and simmer until the submerged portion is tender, about 15 minutes. Turn the apples over and cook until tender all the way through, about 15 minutes more. Remove from the liquid and set aside to cool.
  • Preheat the oven to 400 degrees F. Line a sheet pan with parchment or buttered waxed paper. Unroll the puff pastry on a work surface and brush the pastry with melted butter. In a small bowl, toss together the sugar and cinnamon and sprinkle evenly over the pastry. Working lengthwise, cut the pastry into 6 even strips, each 3/4-inch wide. Twist the strips, keeping the cinnamon sugar on the inside, to make long twisted "straws." Transfer to the prepared pan, run your fingers along the twists to straighten, and bake about 20 minutes, until puffed and golden brown.
  • Pour the sugar into the center of a saucepan. Carefully pour the water around the sugar, trying not to splash any sugar onto the sides of the pan. Do not stir; gently draw your finger through the center of the sugar to moisten it. Over medium heat, bring to a boil without stirring. Cook until light caramel in color and immediately remove from the heat. Carefully (it will bubble up and may splatter) stir in the cream with a wooden spoon until smooth.
  • To serve, place an apple on each serving plate. Drizzle with caramel sauce, sprinkle with peanuts, and place a pastry straw in the hole of each apple so that it sticks up like a wooden stick.

TAFFY APPLE PIE

Taffy Apple Pie image

First you make a traditional apple pie filling and then things get more interesting. Half the apple mixture is spooned into a deep-dish pie shell and layered with caramels and a taffy mixture. And then more apples, caramels and taffy go in. And then it's baked and served warm.

Provided by litldarlin

Categories     Pie

Time 40m

Yield 1 PIE, 8-10 serving(s)

Number Of Ingredients 11

1 (9 inch) double crust pie crusts
1/2 cup packed brown sugar
1/4 cup butter, melted
1/3 cup all-purpose flour
5 cups apples, sliced thin
2/3 cup white sugar
3 tablespoons all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon lemon juice
20 caramels, halved
2 tablespoons milk

Steps:

  • Preheat oven to 375 degrees F.
  • To Make Taffy:
  • In a small bowl combine brown sugar, melted butter or margarine, and 1/3 cup flour.
  • Mix well and set aside.
  • To Make Apple Filling:
  • Place apples in a large bowl.
  • Add white sugar, 3 tablespoons flour, cinnamon, and lemon juice.
  • Toss until all ingredients are mixed well and apples are thoroughly coated.
  • Spoon half of apple filling into pastry-lined deep-dish pan.
  • Top with half of caramels and half of taffy mixture.
  • Repeat process with remaining apple filling, caramels and taffy mixture.
  • Place top pastry over filling and seal well.
  • This is very important, if edges are not sealed, caramel will leak out all over.
  • Cut steam vents and brush top crust with milk or light cream.
  • Cover pie with foil and place on a baking sheet.
  • Bake in preheated oven for 25 minutes.
  • Remove foil from pie and bake for another 20 to 25 minutes, until crust is golden.
  • Serve warm.

  • In a medium saucepan, add condensed milk, sugar, and corn syrup. Bring this mixture to a boil, stirring constantly.
  • Continue stirring, until taffy has thickened. The caramel will also have changed to that rich caramel color when ready. To test, fill a small bowl with cold water. Drop a bit of taffy in. If you can form it into a ball that will hold and leaves little residue, you've hit the sweet spot.
  • When it reaches the soft ball stage, remove from heat. Add margarine and vanilla and mix with a hand mixer or whisk vigorously until well blended.
  • When caramel is ready, dip apples in and twist to cover the whole apple. Place on foil or wax paper to allow to cool and stiffen.
