NONA'S JAPANESE UME DRESSING
This is one of my many Japanese-style salad dressings I created to satisfy my taste. Ume(boshi) is a favored taste addition in many Japanese cooking. It shows up in cakes, cookies, snacks, mochi, salads, beverages, soups, with pork, chicken and fish, and of course dressing. You can find umeboshi in Japanese markets in refrigerated section. Ume is often called plum or pickled plums, however it is much closer to apricots. You can find ume trees in US now. Ume is not tasty fresh and must be either pickled or preserved.

- Place the vegetable oil, onion, rice vinegar, sesame seeds, ginger, umeboshi, lemon juice, sugar, salt, and pepper into a blender. Cover, and puree until smooth, about 30 seconds.

TAHINI DRESSING
The potent combination of tahini, garlic and lemon that is so beloved throughout the Mediterranean and Middle East also makes a fantastic salad dressing when sweetened with a touch of honey. But no need to stop there - the creamy dressing is also delicious on grilled fish, roast chicken, steamed vegetables, grain bowls and more. There may be a point when you're whisking in the tahini that the sauce seems to seize or thicken. Don't worry - it will smooth out again once you begin to whisk in the water.

- Whisk together the lemon juice, honey and garlic paste in a medium bowl. Gradually whisk in the tahini. Whisk in the water a little at a time until the sauce is smooth, creamy and has the consistency of cold heavy cream. Whisk in the cumin, cayenne and 1/4 teaspoon salt. Taste add more salt if desired.

- 1. Place all the ingredients in a blender and blend until smooth and creamy. (If it is too thick, add a little water.) 2. Use immediately or refrigerate in a covered container up to three or four days. For a Change . . . * For a milder taste, add another tablespoon or so of tahini and water. * For added zip, add a clove of garlic or a little more umeboshi.

- Prepare Tahini Dip: Blend all ingredients on low to medium low in a blender until smooth. 2. Preheat the oven to 425°F, and spray a large rimmed baking sheet with olive oil cooking spray. 3. Whisk together the umeboshi paste, toasted sesame oil, shoyu, honey, and garlic powder in a small bowl until well combined.
- Toss the sliced sweet potato, green beans, and carrot together in a large bowl. Pour the umeboshi mixture over, and stir to cover all of the vegetables with the liquid.
- Spread the vegetables out on the baking pan, making sure they don't get too close together or the edges won't crisp. Bake for 15 minutes, then stir; bake for another 15 minutes, and stir again. Bake for 10 more minutes, then remove the pan from the oven.
- Top tahini dip with crushed red pepper if you like, then season veggies with additional salt and freshly ground pepper to taste. Serve the dip alongside the roasted vegetables.
