SWEET -N-TANGY BARBECUE SAUCE
The only barbecue sauce I use, for everything from shredded pork loin or ribs to thin sliced ham sandwiches or shredded beef. Often served with chilled potato salad & fresh homemade dinner rolls to mop up the sauce (if not using the meat in a sandwich already).

Steps:
- In large saucepan, combine all ingredients and bring to a boil over medium heat.
- Reduce heat and simmer, uncovered, for about one hour. Stir occasionally.
- *For ribs: Boil ribs with some salt & pepper and a quartered onion until tender. Then drain and place on broiler pan. Baste with sauce, broil 5 minutes, turn ribs over and baste other side. Broil 5 minutes longer. Serve.
- *For shredded pork sandwiches: Put sauce and pork loin in crock pot on low for 5-6 hours or until pork begins to shred itself when poked with a fork.
- *For barbecue ham sandwiches: Put sauce and thin, deli sliced ham torn into 2 inch pieces into crock pot and heat on low for 2 hours or until hot.
BRIE'S SPICY SWEET TANGY BARBECUE SAUCE
This sauce goes great with ribs, chicken, or pulled pork. For more heat, add more cayenne pepper. For more thickness, add more cornstarch. For more tang, add more vinegar.

SWEET AND SPICY BBQ SAUCE (TEXAS STYLE)

- In a medium pot, cook the bacon over medium-low heat until crispy, 8 to 10 minutes. Remove to a plate lined with a paper towel to drain, then eat the bacon as a snack.
- Add the onions to the pot with the bacon grease and cook over medium-low heat until the onions start to caramelize, 6 to 8 minutes. Add the garlic and cook another 2 minutes. Add the tomato paste and cook, stirring occasionally, another 3 minutes. Whisk in the stock, sugar, vinegar, cumin, cayenne, salt and pepper and bring to a simmer. Cook until thickened, 15 to 20 minutes.
- Let cool to room temperature before using. This sauce is great on brisket or beef ribs.

- Heat the oil in a large saucepan and sweat the onion until tender and translucent. Add all remaining ingredients and simmer for 10 minutes. Remove the sauce from the heat and use a handheld blender to process it to a smooth paste. (Alternatively, transfer it to an upright blender and back again.) Simmer gently for an additional 5 minutes.
- Separate the sauce into two containers. Use one to marinate and glaze the meat during grilling. Reserve the remainder for use as a sauce at the table.

- Heat oil in large skillet over medium high heat for 1 minute. Add onion; cook and stir 8-10 minutes or until onion begins to brown. Add garlic; cook 2 minutes longer or until onion is golden. Add water, tomato paste, sugar, vinegar, molasses, Worcestershire sauce, jalpeno pepper sauce, chili powder, cumin and ground red pepper. Stir with wire whisk until well blended. Reduce heat to medium low and simmer for 15 minutes, stirring occasionally. Cover and remove from heat. Cool 30 minutes.
- Spoon into 4 labeled 12 oz containers. Store in the refrigerator for up to 3 weeks.
