TRADITIONAL KIMCHI
If you love authentic Korean cuisine, you'll want to try your hand at creating your own kimchi; it's not as complicated or time-consuming as you might think. Kimchi is a fermented dish, the more it ages the better it tastes, likewise with the sugar. Use a persimmon in place of the apple, if you prefer. If you want to serve it the very next day, don't refrigerate.

Steps:
- Place cabbage and radish in a large colander. Sprinkle liberally with salt and mix to combine. Set aside for 1 hour. Add additional salt, mix, and set aside 1 hour more. Rinse cabbage and let drain.
- Meanwhile, combine garlic, onion, ginger, and rice vinegar in a blender. Add water and blend aromatic mixture on high power.
- Transfer drained cabbage to a large bowl and add aromatic mixture. Add persimmon, cucumber, green onions, and red pepper flakes and mix well.
- Transfer kimchi to airtight containers and refrigerate for 3 days.

KIMCHI STEW (KIMCHI JJIGAE) RECIPE BY TASTY

Kimchi has been known to have many nutritional benefits and the spicy, tangy, savory flavors (the longer the kimchi is aged, the better!) will warm your soul on any day. If you're short on time, you can substitute chicken broth for the anchovy and kelp broth.

- Make the anchovy and kelp broth: In a medium pot, combine the water, dried anchovies, and kelp. Bring to a low boil, then reduce the heat to medium low, cover, and simmer for 25 minutes. Strain the broth and discard the solids. Set the broth aside until ready to use.
- Make the kimchi jjigae: Heat the vegetable oil in a medium pot over high heat. Add the onion, garlic, and pork belly and cook until the onions soften and the pork is lightly browned, about 5 minutes.
- Add the drained, chopped kimchi and cook for 2-3 minutes, until slightly darkened.
- Add the Korean chile flakes, sugar, salt, reserved kimchi juice, and anchovy and kelp broth and stir well to combine.
- Lay the tofu and mushrooms on top of the soup and gently stir to submerge in the broth (do not break up the tofu). Cover the pot, reduce the heat to low, and simmer for 30 minutes. Remove the pot from the heat and season the soup with more salt to taste.
- Ladle the soup into bowls and top with the green onion and sesame oil. Serve with white rice, if desired.

- In large bowl, combine the red onion, carrots, cabbage, and salt. Add just enough water to cover the vegetables.
- Let them sit at room temperature overnight. The next day, drain the vegetables.
- Add the remaining ingredients, and toss well.
- Chill the salad for at least 1 hour before serving.
- It will keep in a sealed container in the refrigerator for up to 7 days.
- Variation: This kimchi doesn't undergo a fermenting process, as real kimchi does.
- If you'd like to ferment this kimchi, omit the oil, and put the mixture into a large sterilized jar.
- Let the kimchi stand at room temperature for 2-4 days, opening the jar once a day to let out the gases that build up.
- Store the kimchi in the refrigerator after this period.
- It will keep for several weeks.

- Combine the cheddar with the emmental or mozzarella and the spring onions in a small bowl.
- Spread the mayonaise over one side of each slice of sourdough. Pile the cheese mixture over the plain sides of the bread, then spoon over the kimchi. Sandwich the slices together so the mayo-coated sides are on the outside, then sprinkle with sesame seeds, if using. Heat a large frying pan or skillet over a medium heat. Arrange the toasties in the hot pan and weigh them down with another heavy pan. Cook for 4-6 mins, then turn over and cook for 5 mins more.
