Tangerine & Cranberry Chutney image

This is a tangy-sweet cranberry chutney with lots of tangerine flavor. It's wonderful with all of those rich holiday entrees, turkey, ham, duck, goose... mmmmmm! Even my husband, a confirmed canned cranberry sauce aficionado, tried this and liked it. It also makes the best leftover turkey sandwich spread, with mayo and a slice of sharp cheddar.

1 (12 ounce) package fresh cranberries
1 cup apple cider vinegar
1 cup brown sugar
1/2 cup honey
1 1/2 tablespoons tangerine zest
2 tangerines, juice of
1 pinch cinnamon
1 pinch nutmeg

Steps:

  • Combine all ingredients in a large saucepan.
  • Bring to a boil, then reduce heat to a simmer.
  • Cover (this is important, these things pop all over the place at first--) and cook down until thickened to your liking (check after a half hour or so, and if you cook longer, check periodically to be sure the sugary content doesn't begin to burn).
  • Adjust the sweetness if you like; I like it more tangy, the hubby likes sweeter.

Cranberry Tangerine and Candied Ginger Tart with Cardamom Crumbles image

The flavors of this tart remind me of an exotic Moroccan dessert. I like serving this with pistachio ice cream and steaming hot cups of mint tea. Delicious! I typically bake this tart one day ahead and leave it overnight at room temperature. Feel free to use your favorite tart dough, or my recipe below.

Number Of Ingredients 20

1 1/2 cups unbleached all-purpose flour
2 teaspoons granulated sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
4 ounces unsalted butter, very cold and cut into 1-inch cubes
6 tablespoons heavy cream
Butter, for greasing
1 3/4 cups granulated sugar
2 tablespoons tangerine zest
1 1/4 cups unbleached all-purpose flour
1 teaspoon ground cardamom
1 teaspoon ground cinnamon
3/4 teaspoon ground ginger
3/4 teaspoon kosher salt
6 ounces unsalted butter, chilled and cut into 1/2-inch pieces
3/4 cup granulated sugar
Zest of 2 tangerines
6 cups fresh cranberries, washed and dried
1/2 cup candied ginger, cut into small pieces
1/3 cup dark brown sugar, packed

Steps:

  • Preheat the oven to 375 degrees F.
  • For the tart dough: Combine the flour, sugar, cinnamon and salt in a medium bowl. Add the cold butter and toss to coat. Pinch the butter and flour together until the butter is flaky. Start to rub in between your fingers until it looks like coarse cornmeal.
  • In the center of the bowl pour the cream. Using a rubber spatula, turn the flour over in the bowl repeating until the cream is absorbed. With your fingers press the dough to form a compact disc. Remove the dough. Cover the bowl with plastic wrap and chill, about 1 hour.
  • Working quickly, roll the dough into a 13-inch circle and carefully place it into a greased 10-inch tart pan. Gently fold the excess dough against the sides creating a reinforced crust. Press down the dough, trimming if there is extra that extends beyond the pan. Chill for an additional 30 minutes.
  • Place kitchen parchment paper over the chilled dough, fill with weights, beans or raw rice are prefect. Bake, 15 to 18 minutes. Reduce the oven temperate to 350 degrees F. Carefully remove the parchment and continue baking until the tart shell is golden brown and fully baked, 10 to 12 minutes. Set aside and allow to completely cool.
  • For the cardamom crumbles: Begin the cardamom crumbles in a bowl of a stand mixer with a paddle attachment, with the sugar and tangerine zest. In the palms of your hands, rub together the sugar and zest to release the tangerine oils. Add the flour, cardamom, cinnamon, ginger and salt and mix at medium speed until small clumps of dough form. Dump onto a sheet pan. Chill until needed. This can be made up to 2 days ahead.
  • For the cranberry tart: In the palms of your hands, rub together the sugar and zest in a large bowl. Add the cranberries, candied ginger and brown sugar and toss well. Fill the baked tart shell with the cranberries, top with the cardamom crumbles and bake until golden brown and the cranberries begin to bubble up through the crumble, 45 to 50 minutes.
  • Remove the tart from the oven and allow to cool to room temperature. I prefer waiting an hour or longer before cutting the tart. This gives the very juicy cranberries time to cool, allowing the tart to set up. I've even let it sit all night on the counter.

1 large Spanish onion, finely diced
2 cloves garlic, finely chopped
3 tablespoons grated fresh ginger
2 cups tangerine juice
1/4 cup light brown sugar
1 pound cranberries
2 tangerines, segmented
1 tablespoon grated tangerine zest

Steps:

  • Melt butter in a medium saucepan over medium-high heat. Add onion, garlic, and ginger and cook until soft. Add tangerine juice and brown sugar and bring to a boil. Add half of the cranberries and cook until they pop. Add remaining cranberries and cook for 5 minutes. Remove from the heat and add tangerines and zest. Transfer to a serving bowl and serve at room temperature.

¾ cup confectioners' sugar, or more to taste
1 tangerine, juiced
1 tangerine, zested and juiced
½ teaspoon ground cinnamon

Steps:

  • Stir cranberries, confectioners' sugar, tangerine juice, tangerine zest, and cinnamon together in a non-stick saucepan over medium heat; bring to a simmer, reduce heat to medium-low, and simmer until the cranberries pop and the mixture thickens, 15 to 20 minutes. Crush any remaining whole cranberries against the sides of the saucepan with a spatula to burst.

Number Of Ingredients 6

9 small seedless tangerines, unpeeled
3 tablespoons red wine vinegar
1 tablespoon dry mustard
1/4 teaspoon salt
1 1/2 cups red jalapeño pepper jelly
3/4 cup tangerine, orange, or lemon marmalade

Steps:

  • Finely grate enough peel off tangerines to measure 3 tablespoons. Using small sharp knife, cut all peel and white pith off tangerines. Working over large sieve set in bowl, cut between membranes, releasing segments into sieve. Place in refrigerator and let segments drain at least 2 hours and up to 6 hours.
  • Stir vinegar, mustard, and salt in medium bowl until mustard dissolves. Mix in jelly, marmalade, and 3 tablespoons grated tangerine peel. Cover and chill chutney base up to 6 hours.
  • Gently fold tangerine segments into chutney base and serve.

2-1/2 cups sugar, divided
TUILES:
3 large egg whites
3/4 cup confectioners' sugar
1/2 cup all-purpose flour
6 tablespoons butter, melted
1/2 teaspoon almond extract
1/4 teaspoon salt
TANGERINE CREAM:
1 carton (8 ounces) Mascarpone cheese
1/4 cup honey
1 tablespoon grated tangerine zest
2 cups whipped cream
2 tangerines, peeled, sectioned and chopped

Steps:

  • Line a 15x10x1-in. baking pan with parchment paper. Place cranberries in pan; sprinkle with 2 cups sugar. Cover and bake at 350° for 1 hour. Cool. Drain, reserving syrup for garnish., Transfer berries to another parchment paper-lined 15x10x1-in. baking pan. Bake at 200° for 1-1/4 to 1-3/4 hours or until almost dry to the touch. Toss with remaining sugar., Using a pencil, draw four 3-in. circles on a sheet of parchment paper. Place paper, pencil mark down, on a baking sheet; set aside., In a large bowl, combine the egg whites, confectioners' sugar and flour until blended. Beat in the butter, almond extract and salt., Spread 1 tablespoon batter over each circle. Bake at 350° for 5-7 minutes or until golden around the edges., With a spatula, carefully remove cookies and immediately drape over inverted shot glasses or small juice glasses. When cookies are cool, transfer to a wire rack. Repeat with remaining batter, forming 16 tuiles., In a small bowl, beat the mascarpone, honey and tangerine zest. Fold in whipped cream and tangerines., To serve, spoon about 3 tablespoons tangerine cream into each cookie. Garnish with candied cranberries and reserved syrup.
