Steps:
- Heat 1 teaspoon of olive oil or other neutral flavored oil in a sauce pan
- Add the minced garlic and minced ginger and cook for 2 - 3 minutes, until fragrant. Stir often to avoid burning
- Add 1/3 cup water, orange juice, brown sugar, maple syrup, rice vinegar, and soy sauce and heat for 3 minutes, stirring often
- In a small bowl, whisk the 2 tablespoons of cornstarch and 1/4 cup of water to form the slurry
- Add the cornstarch slurry to the sauce and whisk to thicken, around 3 - 5 minutes
- Add orange sauce to your orange chicken, orange tofu, orange cauliflower, or use as sauce for stir fry veggies!

- Preheat oven to at 350°. Tie legs of each hen together; turn wing tips under backs. Place on a greased rack in a roasting pan. Brush with butter; sprinkle with salt and pepper. Bake, uncovered, for 1 hour., Meanwhile, in a saucepan, combine the remaining ingredients; bring to a boil. Reduce heat; simmer, uncovered, until thickened, 15 minutes. Spoon over hens. Bake until a thermometer reads 170°, about 15 minutes longer.

Not finding an orange sweet-and-sour sauce, I made my own. This is sweet and sour with a bit of spice and a beautiful, yet light, orange taste. - Combine water, brown sugar, vinegar, orange zest, soy sauce, ginger, cayenne pepper, sriracha sauce, white pepper, and cayenne pepper in a saucepan over medium heat. Cook and stir sauce until sugar is dissolved, 3 to 5 minutes.
- Remove 1/2 cup of sauce and combine with cornstarch in a small bowl. Whisk until well blended and orange zest starts to dissolve.

EASY ORANGE BASTING SAUCE
Cooking meat with fruits is a special treat. This sauce has NO FAT, NO SODIUM, and NO sugar added, and you can make it a few days ahead and store it in your fridge until you're ready to cook.

- Peel all oranges. Chop enough of the rind (peelings)to equal 1/2 cup. Discard remaining peelings.
- Insert your 1/2 cup of orange rind into your food processor.
- Slice the orange into quarters and place in food processor with the rind.
- Peel and wash your garlic cloves, then place in food processor. You can save time by purchasing peeled and washed garlic cloves pre-packaged in your produce section.
- DO NOT use garlic soaked in oil which is sold in a jar in the spices section of your grocery store. The oil is just another fat product.
- Add all other ingredients to food processor, then puree for about 1 minute until you get a marmalade-like texture.
- This recipe makes about 24 oz of sauce, which is enough to baste about 12 to 15 pieces of chicken.
- I usually baste meats at the start time, and again halfway through cooking. Spritzing the meat with a bit of water during cooking keeps it moist and will not affect the flavor of this particular sauce.

- Preheat the broiler on low.
- Place the oranges in a medium ovenproof dish, or divide among 4 ovenproof custard dishes. Spoon the Tangy Sabayon Sauce over the top (a couple tablespoons over each if using the individual dishes). Sprinkle with brown sugar. Place on a baking sheet, place under the broiler, and cook until golden to dark brown. Watch very closely for burning! Serve immediately.
- Place the egg yolks, sugar, and wine in a metal bowl. Place the bowl over a saucepan of barely simmering water, making a double boiler. Whisk the mixture constantly until it foams and then becomes creamy and doubles in size, about 5 minutes. Mixture should be uncomfortably warm to the touch, but not burning.
