2 garlic cloves, minced
PINE NUT-PESTO CHEESE BALL:
2 tablespoons prepared pesto
2 tablespoons minced fresh basil
10 tablespoons toasted pine nuts, divided
HORSERADISH-BACON CHEESE BALL:
2 tablespoons prepared horseradish
1/2 cup crumbled cooked bacon
1 green onion, finely chopped
SALSA CHEESE BALL:
2 tablespoons tomato paste
1/8 teaspoon salt
2 tablespoons minced fresh cilantro
1 tablespoon finely chopped onion
1 tablespoon minced seeded jalapeno pepper
Assorted crackers

Steps:

  • In a large bowl, beat cream cheese, Parmesan cheese and garlic until blended. Divide into three portions. , For Pine Nut-Pesto Cheese Ball: Beat one portion of cream cheese mixture and pesto until blended. Stir in basil. Chop 2 tablespoons pine nuts; stir into cheese mixture. Shape into a ball; roll in remaining pine nuts. Wrap in plastic; chill until firm. , For Horseradish-Bacon Cheese Ball: Beat one portion of cream cheese mixture and horseradish until blended. Stir in bacon and onion. Shape into a ball. Wrap in plastic; chill until firm., For Salsa Cheese Ball: Beat one portion of cream cheese mixture, tomato paste and salt until blended. Stir in cilantro, onion and jalapeno. Shape into a ball. Wrap in plastic; chill until firm. , Can refrigerate up to two weeks. Serve with crackers.

3/4 cup whipped cream cheese
1/2 cup butter, softened

1 cup dried cranberries, divided

Steps:

  • Beat cheddar cheese, cream cheese, butter and mustard until blended. Fold in 1/3 cup pecans and 1/2 cup dried cranberries. Spread remaining pecans and dried cranberries in an even layer on a 12x12-in. piece of plastic; place cheese mixture on top of cranberry mixture. 9 ounces cream cheese, softened
2 tablespoons 2% milk
Brown, orange and yellow paste food coloring
6 large oval crackers
1 large sweet red pepper
1 small yellow summer squash
1 cup pecan halves
Assorted crackers

Steps:

  • In a small bowl, beat the first six ingredients until combined. Shape into a ball; wrap in plastic. Refrigerate for 1 hour or until firm. , In another small bowl, beat cream cheese and milk until smooth. Divide among four small bowls. With food coloring, tint one bowl brown, one dark orange and one light orange (using yellow and orange); leave one bowl plain. , Transfer each mixture to a heavy-duty resealable plastic bag; cut a small hole in a corner of each bag. , For turkey tail feathers, decorate the top halves of large oval crackers with tinted cream cheese. , Using the red pepper, form the turkey head, neck and wattle. The ingredients are few and inexpensive, and might be made year-round, but I reserve this one special appetizer for the holidays only to maintain its specialness. I love to serve Ritz crackers with the cheese ball to bring out its savory flavor.

1 (2.5 ounce) package thinly sliced smoked beef, chopped
1 (2.25 ounce) can pimento-stuffed green olives, chopped
1 small Vidalia or other sweet onion, minced
2 dashes Worcestershire sauce, or to taste
1 cup chopped walnuts

Steps:

  • Mix the cream cheese, beef, olives, onion, and Worcestershire sauce together in a bowl until evenly blended. Keeping the mixture in the bowl, scrape it into a semi-ball shape. Cover, and refrigerate until firm, at least 2 hours.
