Steps:
- Preheat oven to 350 degrees.
- In large mixing bowl, combine turkey, egg, cranberry sauce, pepper and stuffing mix. Form into 1-inch balls. Place on foil-lined cookie sheet. Bake 20-25 minutes.
- While meatballs are baking, put gravy in a large skillet and heat. When meatballs are done, add to gravy.
- Cover; simmer on low heat while you prepare noodles.
- Cook noodles according to package directions.
- Serve meatballs over cooked noodles.

- Position an oven rack in the top third of the oven and preheat to broil.
- Make the meatballs: Pulse the bell pepper, onion, celery, garlic, rosemary and thyme in a food processor or blender until finely chopped; transfer to a large bowl. Add the turkey, panko, mayonnaise, egg, paprika, cayenne, 2 teaspoons salt and a generous amount of black pepper and mix together using a rubber spatula until just combined.
- Dampen your hands with water and shape the mixture into 26 meatballs, each about 1 1/2 inches in diameter (a 1-ounce ice cream scoop is helpful for portioning); arrange them on a rimmed baking sheet. Broil, rotating the sheet halfway through, until the meatballs are golden brown and firm, 9 to 10 minutes.
- Meanwhile, make the cranberry glaze: Melt the butter in a large skillet over medium-high heat and add the jalapenos. Cook, stirring occasionally, until they start to soften, 3 to 4 minutes. Add the cranberries, sugar, orange zest and juice, 1/4 teaspoon salt and a few grinds black pepper and cook, stirring constantly, until the cranberries begin to soften, and the skin starts to crack, about 2 minutes. Mash the cranberries with a potato masher and stir until the liquid from the cranberries begins to simmer and thicken, 2 to 3 minutes.
- Transfer the meatballs to the skillet and toss to coat with the cranberry glaze. Transfer to a platter and serve with toothpicks.

- Place potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender., Meanwhile, in a large skillet, saute celery and onion in butter until tender. - Preheat oven to 375°. In a large bowl, combine stuffing cubes and milk. Let stand 10 minutes; break up stuffing cubes with a fork. Stir in egg, celery, onion, carrot, cranberries, salt and pepper. Combine sage and rosemary; add half to the mixture. Crumble turkey over mixture and mix well. Pat into an ungreased 9x5-in. loaf pan., Bake, uncovered, 25 minutes; drain if necessary. Combine cranberry sauce, ketchup, pepper sauce and remaining herbs; spread over meat loaf. Bake 20-25 minutes or until no pink remains and a thermometer reads 165°. , Freeze option: Shape meat loaf in plastic wrap-lined loaf pan; cover and freeze until firm. I came up with this recipe when planning a small Thanksgiving dinner for me and my sister. This incorporates familiar Thanksgiving favorites without requiring you roast a whole bird or fix a lot of stuffing. We had to come up with something that could accommodate our limited kitchen resources while providing something special for Thanksgiving. Feel free to change up the spices, adding more or less to suit your taste. Prep and cook time is approximate.

- Drop meatballs and about 1/2 to 1 cup teriyaki sauce in a crock pot.
- Add red pepper flakes to taste (I like them hot so I add quite a bit!).
- Simmer for about 20 to 40 minutes (depending on the size of the meatballs, how hot your crockpot is). You can test one meatball by cutting into it; once it is cooked through, they are done!
- If you don't have a crockpot, you can do this over the stove, too! Just make sure you keep it on low and keep checking to make sure the meatballs don't burn on the bottom!
- Enjoy!
