THANKSGIVING MEATBALLS WITH CRANBERRY GLAZE

Thanksgiving Meatballs with Cranberry Glaze image

Perfect for Friendsgiving, these turkey meatballs include all the fun flavors of Thanksgiving in a one-bite appetizer portion.

Provided by Eddie Jackson

Categories     appetizer

Time 30m

Yield 26 meatballs

Number Of Ingredients 19

1 small green bell pepper, cut into chunks
1/2 small white onion, cut into chunks
1 small celery stalk, cut into chunks
1 clove garlic, smashed
1 tablespoon fresh rosemary leaves
1 tablespoon fresh thyme leaves
1 1/2 pounds ground turkey
3/4 cup panko
2 tablespoons mayonnaise
1 large egg
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
3 tablespoons unsalted butter
2 jalapenos, stemmed and seeded, finely chopped
6 ounces fresh or frozen cranberries
1/4 cup light brown sugar
1 teaspoon orange zest plus the juice of 1 orange
Kosher salt and freshly ground black pepper

Steps:

  • Position an oven rack in the top third of the oven and preheat to broil.
  • Make the meatballs: Pulse the bell pepper, onion, celery, garlic, rosemary and thyme in a food processor or blender until finely chopped; transfer to a large bowl. Add the turkey, panko, mayonnaise, egg, paprika, cayenne, 2 teaspoons salt and a generous amount of black pepper and mix together using a rubber spatula until just combined.
  • Dampen your hands with water and shape the mixture into 26 meatballs, each about 1 1/2 inches in diameter (a 1-ounce ice cream scoop is helpful for portioning); arrange them on a rimmed baking sheet. Broil, rotating the sheet halfway through, until the meatballs are golden brown and firm, 9 to 10 minutes.
  • Meanwhile, make the cranberry glaze: Melt the butter in a large skillet over medium-high heat and add the jalapenos. Cook, stirring occasionally, until they start to soften, 3 to 4 minutes. Add the cranberries, sugar, orange zest and juice, 1/4 teaspoon salt and a few grinds black pepper and cook, stirring constantly, until the cranberries begin to soften, and the skin starts to crack, about 2 minutes. Mash the cranberries with a potato masher and stir until the liquid from the cranberries begins to simmer and thicken, 2 to 3 minutes.
  • Transfer the meatballs to the skillet and toss to coat with the cranberry glaze. Transfer to a platter and serve with toothpicks.

SIMPLE THANKSGIVING TURKEY MEATBALLS

Simple Thanksgiving Turkey Meatballs image

I came up with this recipe when planning a small Thanksgiving dinner for me and my sister. This incorporates familiar Thanksgiving favorites without requiring you roast a whole bird or fix a lot of stuffing. We had to come up with something that could accommodate our limited kitchen resources while providing something special for Thanksgiving. Feel free to change up the spices, adding more or less to suit your taste. Prep and cook time is approximate.

EASIEST PARTY MEATBALLS

Easiest Party Meatballs image

Your guests will flip over these meatballs that are so easy, you'll feel positively GUILTY for all the compliments you'll get! Shhh...I won't tell if you won't tell!

Provided by Elle Woods Can Cook

Categories     Meat

Time 42m

Yield 20 serving(s)

Number Of Ingredients 3

3 dozen frozen meatballs (I use Trader Joe's party meatballs)
1 cup teriyaki sauce (try Soy Vay brand Very Very Teriyaki! It's deelish!)
red pepper flakes, to taste

Steps:

  • Drop meatballs and about 1/2 to 1 cup teriyaki sauce in a crock pot.
  • Add red pepper flakes to taste (I like them hot so I add quite a bit!).
  • Simmer for about 20 to 40 minutes (depending on the size of the meatballs, how hot your crockpot is). You can test one meatball by cutting into it; once it is cooked through, they are done!
  • If you don't have a crockpot, you can do this over the stove, too! Just make sure you keep it on low and keep checking to make sure the meatballs don't burn on the bottom!
  • Enjoy!

THANKSGIVING TURKEY MEATBALLS RECIPE | WILLIAMS SONOMA …
thanksgiving-turkey-meatballs-recipe-williams-sonoma image

From blog.williams-sonoma.com
Estimated Reading Time 5 mins
  • Turkey meatballs are easy to scale. Hosting Thanksgiving for six? That’s no problem. Having sixteen people over for dinner (like McFadden did at his Thanksgiving)?
  • You can (and should) make delicious turkey gravy. Arguably more than turkey, gravy is the star of Thanksgiving: It’s what brings all the flavors, from the bird to mashed potatoes to stuffing and rolls, together.
  • Pretty much all of the work can be done ahead. The chef likes to make his meatball mixture ahead of time, and explains it actually works better when you brown the meatballs while they’re still cold, which helps them to hold their shape.
  • They cook really quickly. Depending on its size, the roasting time for a whole turkey can go up to four and a half hours or longer. Not this recipe: while the smallest of whole birds start at two and a half hours, that’s less than the entire prep and cook time for these meatballs.
  • They make unforgettable leftovers. After you make these meatballs, McFadden insists, you’ll never look at Thanksgiving leftovers the same way again.
  • They’re Thanksgiving in a bite. When we say these meatballs have everything Thanksgiving, we mean everything—think meat (turkey and pork), fresh herbs (sage, rosemary, thyme), everyone’s favorite aromatics (celery, carrots, onion) and even elements of stuffing (like butter, turkey stock and croutons).
