½ cup dry bread crumbs
¼ cup finely chopped green onion
¼ cup grated carrot
1 tablespoon minced fresh ginger root
1 tablespoon chopped fresh cilantro
1 teaspoon sesame oil
1 tablespoon ketchup
1 tablespoon lite soy sauce
½ teaspoon ground cumin
¼ teaspoon salt
¼ teaspoon black pepper
1 egg, beaten
6 hamburger buns
6 lettuce leaves - rinsed and dried
2 medium tomatoes, sliced

Steps:

  • In a bowl, thoroughly mix minced tuna, bread crumbs, green onion, carrot, ginger, cilantro, sesame oil, ketchup, soy sauce, cumin, salt, pepper, and egg. Cover, and refrigerate for 30 minutes.
  • Preheat oven broiler.
  • Form tuna mixture into 6 patties, and place in a broiler pan on top oven rack. Cook, uncovered, 4 minutes per side, or until easily flaked with a fork. Serve on hamburger buns with lettuce and tomato.

1 tablespoon olive oil, plus more for cooking
¾ cup panko bread crumbs
1 tablespoon dried parsley
2 teaspoons fresh chives, minced
1 tablespoon garlic, minced
½ teaspoon salt
½ teaspoon pepper
1 teaspoon paprika
1 large egg, beaten
whole wheat burger bun, for serving

Steps:

  • Combine the tuna, olive oil, panko, parsley, chives, garlic, salt, pepper, paprika, and egg in a large bowl until evenly mixed.
  • Divide the mixture into 4 portions and form patties with your hands.

2 teaspoons grated fresh ginger
2 eggs, beaten
1 cup panko (Japanese-style bread crumbs)
1 tablespoon fish sauce
1 teaspoon Asian chili sauce (Sriracha sauce)
2 (5 ounce cans) wild albacore tuna or solid white albacore tuna in water*
1/4 cup very thinly sliced celery
1/4 cup chopped green onions
2 small ciabatta buns, halved and toasted
1/3 cup pea shoots or micro greens
2 miniature sweet peppers, thinly sliced

Steps:

  • Preheat oven to 450 degrees F. In a small bowl combine mayonnaise and ginger; transfer 2 Tbsp. to a large bowl. Cover remaining mayonnaise mixture and chill. To the same large bowl add eggs, panko, fish sauce, and Asian chili sauce. Flake tuna and add to bowl. Add celery and green onion and stir. Let stand 10 minutes. With wet hands, shape tuna mixture into four 3/4-inch-thick patties. Place tuna patties on a greased baking sheet. Bake 10 minutes or until done (160 degrees F). To serve, spread ciabatta halves with remaining mayonnaise mixture. Add a tuna patty to bottom half of each bun, bottom side up. Top with pea shoots or micro-greens, thinly sliced peppers, and top buns. Makes 4 servings. *Wild Planet tuna does not need to be drained. If using a brand packed in oil or water, drain tuna.

1 (5 ounce) can tuna, drained
1 egg
½ cup Italian seasoned bread crumbs
⅓ cup minced onion
¼ cup minced celery
¼ cup minced red bell pepper
¼ cup mayonnaise
2 tablespoons chili sauce
½ teaspoon dried dill weed
¼ teaspoon salt
⅛ teaspoon ground black pepper
1 dash hot pepper sauce
1 dash Worcestershire sauce
4 hamburger buns
1 tomato, sliced
4 leaves of lettuce

Steps:

  • Combine tuna, egg, bread crumbs, onion, celery, red bell pepper, mayonnaise, hot chili sauce, chili sauce, dill, salt, pepper, hot pepper sauce and Worcestershire sauce. Mix well. 200g fresh tuna steak
1 garlic clove , finely chopped
small knob fresh ginger , peeled and finely chopped
1 tbsp soy sauce
handful coriander leaves, chopped
1 tbsp sunflower oil
burger buns , lettuce leaves, sliced tomato and avocado, to serve

Steps:

  • Chop the tuna into small chunks, then carry on chopping until the tuna is roughly minced. Tip the tuna into a bowl and mix with the garlic, ginger, soy sauce and coriander. Shape into two burgers, place on a plate, then freeze for 10 mins to firm up.
  • Heat the oil in a non-stick frying pan, then cook the burgers for 1-2 mins on each side or until done to your liking. Serve the burgers in toasted buns with lettuce, tomato and avocado.

1/3 cup mayonnaise
1 teaspoon Thai sweet chili sauce
2 teaspoons fresh ginger, grated
1/2 limes, juice of or 1 teaspoon lime juice
1 teaspoon honey
2 eggs, lightly beaten
1 cup panko breadcrumbs (Japanese breadcrumbs-I used whole wheat )
1 teaspoon soy sauce
2 teaspoons Thai sweet chili sauce
2 (5 ounce) cans tuna in water, drained
1/3 cup celery, finely chopped (I used the food processor)
1/3 cup green onion, finely chopped
1/3 cup red bell pepper, finely chopped
4 sandwich buns, thin, cut in half and toasted (or leave untoasted if you prefer)
1/3 cup baby greens
1 tablespoon olive oil (if frying)
salt and pepper

Steps:

  • If baking(you can also fry-instructions below), preheat oven to 450 degrees F.
  • In a small bowl, mix sauce ingredients. Place 2 tbls. of the sauce in a large bowl. Cover and chill the remaining sauce in the fridge.
  • To the same large bowl, add the eggs, panko, soy sauce, and Thai chili sauce. Break up the tuna and add to the bowl. Add celery, green onions and red bell pepper. Salt and pepper to taste. Stir and let stand about 10 minutes.
  • Using wet hands, shape the tuna mixture into 4 patties, about 3/4" thick.
  • If you want to fry them, put the oil in a skillet and heat on medium high heat. Turn down the heat to medium and add burgers and saute about 4-5 minutes each side, turning gently.
  • If you bake them, place on baking sheet. Bake at 450*F. for 10-12 minutes.
  • To serve, spread sandwich buns with remaining mayo/ginger sauce. Add patties to the bottom half of bun. Top with baby greens, and top buns.
  • Enjoy!

1 1/2 pounds fresh tuna fillet (do not use dark oily flesh)
4 cloves garlic, minced
5 tablespoons extra virgin olive oil
2 anchovies, minced
1/2 cup minced basil
2 1/2 teaspoons soy sauce
Salt and freshly ground black pepper
4 tablespoons good-quality mayonnaise
1 teaspoon grated fresh ginger
2 cups mesclun
1 tablespoon red wine vinegar
4 hamburger buns, split
1 tablespoon canola or grapeseed oil
1 large ripe tomato, trimmed and cut into 4 slices

Steps:

  • Chop tuna until it is the texture of hamburger and presses into a compact ball, and place it in a large mixing bowl.
  • Add garlic, 4 tablespoons olive oil, anchovies, basil, 2 teaspoons soy sauce and salt and pepper to taste. Mix well, shape into four patties 1 inch thick, and set aside. (Patties may be placed on a wax-paper-lined baking sheet and covered and refrigerated for 1 to 8 hours. Remove from refrigerator 30 minutes before sautéing.)
  • In a small bowl, combine mayonnaise with remaining soy sauce and ginger. In a mixing bowl, combine mesclun with remaining tablespoon olive oil and the vinegar. Toast buns on one side.
  • Place a large sauté pan over medium-high heat and add oil. Add burgers and sauté for 1 1/2 minutes a side for rare. Set burgers aside in a warm place for 2 minutes. To serve, spread mayonnaise mixture on bottom bun, add burger, tomato and a portion of mesclun. Top with other bun. Repeat with other burgers and serve immediately.

On a clean cutting board, thinly slice the tuna. Stack the slices and cut into thin matchsticks. Cut the matchsticks into rough cubes, then chop until the pieces are roughly 1/8 inch. Add the tuna to the ginger paste and stir until evenly combined.
  • Using lightly moistened hands, shape the tuna mixture into 4 patties about 1 inch thick. Set them on a large plate lined with plastic wrap. Refrigerate the tuna burgers for 20 minutes.
  • Light a grill. In a small bowl, combine the vegetable oil with the sesame oil. Lightly brush the burgers and the cut sides of the buns with oil. When the fire is medium hot, brush the grate with oil. Grill the burgers for 6 minutes, turning once, for medium rare. Move the burgers away from the heat and grill the cut sides of the buns until toasted, 1 minute.
