TATER TOT RANCH SAUSAGE CUPS
With a base of crispy tater tots and a stuffing of cheesy sausage, these cups are great for breakfast and parties.

Steps:
- Preheat oven to 400 degrees F. Spray a 12-well muffin tin with nonstick cooking spray. Place 5 tater tots in each well and bake for 20 minutes until tater tots are soft.
- Remove from oven and use the bottom of a shot glass or your fingers to press the tater tots flat on the bottom and up the sides of each well. Bake until golden and crisp, about 15 minutes.
- In a large bowl, stir to combine the sausage, Colby cheese, cheddar cheese, parmesan cheese, roasted red bell peppers, mayonnaise, sour cream, ranch seasoning and chopped scallion whites. Spoon the mixture into the tater tot cups, then return to the oven and bake until cheese is melted, about 6-8 minutes.
- Remove the cups from the muffin tin and top each with a sprinkle of scallion greens and pinch chili flakes.

EASY SAUSAGE CUPS (LIKE SAUSAGE STARS)
This is a variation of Sausage Stars/Sausage Cup recipes that use wanton wrappers and ranch dressing. My version uses Tostitos Scoops (bowl shaped corn chips) and cream cheese for some of the ranch dressing. I made these for Christmas Eve and Super Bowl Sunday, and they were a huge hit on both occasions! You can make the filling in advance and refrigerate until you are ready to assemble and bake. If I am taking these to a party, I fill the shells before I leave home and bake when I arrive at the party. They are also great with regular ranch dressing, but we prefer parmesan peppercorn flavor.

- Preheat Oven to 375.
- Brown sausage and drain well on paper towels.
- Return sausage to skillet and stir in cream cheese until melted.
- Remove from heat and cool slightly.
- Stir in ranch dressing and sharp cheddar cheese.
- Fill scoops with sausage-cheese mixture. Arrange the filled scoops on a cookie sheet or baking pan. For less greasy cups, bake on a wire rack set on top of the cookie sheet.
- Bake 8 to 12 minutes, or until cheese is melted and bubbly.

- Preheat oven to 350. Crumble sausage in medium sized skillet. Cook over medium heat until lightly browned, stirring occasionally. Drain. Spray mini muffin tins and insert wonton wrappers to form a small cup. Bake 5 minutes in preheated oven. Allow wrappers to cool. Mix sauasage, cheeses, and ranch together. Fill wonton wrappers. Bake 10 minutes until bubbly.

TATER TOT CUPS WITH CHEESE AND EGGS
Tater tots in muffin pan with eggs--baked in the oven. A great breakfast for kids. Quick, easy and not messy. There is no salt since the potatoes are seasoned. Some like to put A-1 sauce on their potatoes.

Steps:
- Preheat oven 375°F.
- Let the tater tots you are using to set out for a few minutes to soften so you can squish them.
- Grease 12-cup muffin pan with vegetable oil.
- Take 4 or 5 tots place in each cup.
- Mash with pestle or back of spoon to line the bottom and sides of each cup.
- Add 1 tablespoon of cheddar cheese.
- Press down in bottom of the cup with spoon.
- Place in oven and cook 5 minutes.
- Take out of the oven and break an egg in each cup.
- Bake 15 minutes until white and yolk are set. It could be 20 minutes.
- Check frequently.
- If you want the yolk to be basted, spoon a little water on top of each yolk.
- Remove from oven.
- Use a heat resistant rubber spatula to loosen edges and bottom of each tater tot cup.
- Serve on serving platter.
