TATER TOT JALAPENO POPPERS
Jalapeno poppers are one of my favorite easy appetizers to make and these tater tot versions are one of my favorites! The crispy tot goes perfectly with the cream cheese base and spicy pepper.

Steps:
- Preheat oven to 350 degrees F. Cut jalapeños in half and remove seeds. Try to leave the stems intact so the filling stays in the peppers.
- Spread about a tablespoon of cream cheese on each pepper half and top with two tots per half pepper.
- Wrap a half bacon strip around the popper right in the center. Wrap the bacon so the ends are under the popper securing the strip.
- Place poppers on a wire rack over a baking sheet or a foil-lined baking sheet and bake until the bacon is cooked and crispy and the jalapenos are tender, 25-30 minutes.
JALAPENO POPPER TATER TOT CASSEROLE

- Preheat oven to 425 degrees.
- Line a casserole dish with tater tots. Bake at 425 degrees for 15 minutes.
- While the tater tots are baking, cook bacon, blot fat away, and crumble into small pieces. Dice the peppers and slice the onions.
- In a medium bowl, combine cream cheese, sour cream, 1½ cups of Cheddar jack cheese, bacon (save a little bit for the topping), diced Jalapeno peppers, and most of the sliced onions (save a few for the top). Stir to thoroughly combine ingredients.
- Spread the jalapeno mixture over the top of the tater tots.
- Top with remaining ½ cup of cheese. Sprinkle the extra bacon pieces and onion slices over the top.
- Bake at 425 degrees for 20 minutes.
TATER TOT STUFFED JALAPEñO POPPERS

- Add the bacon, cream cheese, and 1 cup of cheddar cheese into a bowl.
- Mix 'em up.
- Seed and halve the jalapeños
- Fill peppers with cream cheese and bacon filling.
- Bake the tater tots for 20 mins at 375°F.
- Mash the tots.
- Top the stuffed peppers with mashed tater tots.
- Load peppers with remaining shredded cheddar cheese.
- Bake for 7 mins at 400°F. And most importantly, enjoy.

- Preheat air fryer to 375°. In a small bowl, mix cream cheese, cheddar cheese and jalapeno. Cut a pocket horizontally in the thickest part of each chicken breast. Fill with cheese mixture. Sprinkle chicken with salt and pepper. Wrap 2 bacon strips around each chicken breast; secure with toothpicks., In batches, place chicken in greased air fryer, seam side down. Cook until a thermometer inserted into chicken reads 165°, 14-16 minutes, turning once. Let stand 5 minutes. Discard toothpicks before serving.

Steps:
- cut a slit in each jalapeno pepper so that you can open it up. Remove the entire contents of the inside of the pepper. Leaving some of the placenta and seeds will result in a hotter pepper, so how much you clean on the inside is totally up to your taste. I recommend using disposable latex gloves while doing this, because failure to do so may result in unintended pains later -- particularly if you are a male :).
- Preheat oven to 375 degrees.
- Soften the cream cheese in the microwave for about 20 seconds.
- Place the cream cheese in a bowl.
- Add the ranch dressing powder and the grated cheese to the bowl with the cream cheese. MIx well.
- Fill the jalapenos with the creame/ranch/cheese mixture.
- Trim any excess fat from the bacon, preferably with kitchen scissors.
- Wrap all of the peppers with the bacon.
- Cook at 375 degrees for about 40 minutes. Keep an eye on them, because depending on the fat in the bacon, thickness of the bacon and so on, your time will vary. This can also be put on a grill -- it will take far less time but will demand your constant attention.
- Enjoy the best stuffed jalapeños you have ever had.
