- Preheat a waffle iron to medium-high heat. Lightly oil the top and bottom of the waffle iron or coat with nonstick spray. Working in batches, spread tater tots in an even layer into the waffle iron; season with cajun seasoning, salt and pepper, to taste. Close, pressing down firmly to flatten, and cook until golden brown and crisp, about 5-6 minutes, or until desired crispness is reached. Repeat with remaining tater tots, adding more nonstick spray as needed. Serve immediately, garnished with parsley, if desired.
CHICKEN AND TATER TOT WAFFLES

- Combine the chicken, buttermilk and 1 tablespoon hot sauce in a large bowl; stir to submerge the chicken. Let marinate at room temperature 30 minutes.
- Preheat the oven to 250 degrees F. Preheat a waffle iron (not Belgian) and lightly brush with vegetable oil. Line a baking sheet with parchment paper.
- Working in batches, fill the waffle iron with a single layer of Tater Tots (they should be touching). Close the waffle iron and cook until browned and crisp, 6 to 8 minutes, depending on your waffle iron. (The waffles are done when they release easily without sticking.) Transfer to the prepared baking sheet and place in the oven to keep warm. Repeat with the remaining Tater Tots.
- Heat 2 inches of vegetable oil in a large wide pot until a deep-fry thermometer registers 360 degrees F. Toss the flour, paprika, 2 teaspoons salt and the granulated garlic in a large bowl. Remove the chicken from the buttermilk mixture using tongs; reserve the buttermilk mixture. Working in 2 batches, dredge the chicken in the flour mixture, then dip in the buttermilk mixture and dredge again in the flour. Fry until the chicken is crisp and golden, 4 to 5 minutes. Remove to a paper towel-lined plate to drain; season with salt.
- Combine the honey, the remaining 1 tablespoon hot sauce and a pinch of salt in a microwave-safe bowl; microwave until just warm. Serve the chicken and waffles with the spicy honey.
TATER TOT WAFFLES WITH SAUCY SAUSAGE AND FETA
I got the inspiration for this savory waffle from my friend Jen Pelka of The Riddler in San Francisco and New York City. At her Champagne bar, Jen finishes her waffles with luxe toppings, like caviar and shaved truffles. My version, topped with a harissa-laced sausage gravy, comes together in just minutes and is perfect for any meal.

- Preheat the oven to 200 degrees F. Heat a waffle iron on high heat; grease with nonstick spray. Spread about half of the potato tots on it. Close and cook on medium-high; fill in any holes in the waffle with more potato tots a few minutes into cooking. Close the iron and continue to cook until browned and crisp, about 8 minutes total. Transfer the waffle to a baking sheet; keep warm in the oven. Repeat with the remaining tots.
- Meanwhile, heat the oil in a large skillet. Add the sausage and cook, breaking the meat up with a wooden spoon, until cooked through, about 5 minutes. Add the harissa and cook, stirring, until the sausage is coated, about 1 minute. Sprinkle with the flour and cook, stirring, until evenly coated, about 2 minutes. Gradually whisk in the broth and cook until thickened, 3 to 5 minutes; add more broth or water if too thick. Season with salt and pepper.
- Cut the waffles in half, if desired, and transfer to plates. Spoon the saucy sausage on top. Sprinkle with crumbled feta and chopped parsley. Serve right away.

- Preheat a double waffle iron to a medium-high setting.
- Toss the tater tots with the cheese and Tex-Mex seasoning in a bowl.
- Lightly spray the waffle iron with cooking spray, then arrange the tater tots and cheese mixture in a single layer on the waffle iron. Firmly press and close the waffle iron, then cook until crisp, about 7 minutes.
- Meanwhile, melt the butter in a small nonstick skillet over medium heat. Add the eggs and fry to your preference, 4 to 6 minutes.
- Divide the waffles between 2 plates. Arrange the bacon halves over the top of the waffles. Top each with a fried egg, salsa, sour cream, avocado and cilantro, then serve.

- Preheat the waffle iron on med-high heat. Place the frozen tater tots in a microwave-safe bowl and defrost for 1 minute. Stir the tots and place them back in the microwave and cook for 2 minutes. They should be unfrozen by now (or mostly). If they are a little mushy, don't worry, they crisp right up in the waffle iron.
- Open the hot waffle iron and carefully place the tater tots in the middle, spreading them out in a circle (or square if that is the shape of your waffle maker). Press down the lid as much as you can. As the tater tots cook, you can press down more.
- Cook the tater tot waffle for 4-5 minutes. Continue to check on the waffle as it's cooking to make sure it doesn't burn. The tater tots will turn a nice dark brown and should be crispy. Carefully remove the waffle using a fork. Enjoy immediately!
