TEDDY BEAR CUPCAKES
These adorable teddy bear cupcakes are so much fun to make and eat! Made with a vanilla cupcake and rich, chocolate frosting, these cuties are a tasty treat.

Steps:
- First, make the teddy bear cupcake decorations. Place 44 chocolate wafers on a cutting board and set aside. Measure out 1 cup of wafers from the remaining.
- Melt 1 cup of wafers in 30-second increments until smooth. Transfer to a piping bag.
- Start with an unwrapped Reese's peanut butter cup and add a small bit of melted chocolate onto the lower center of the peanut butter cup. Place a pink wafer onto the chocolate, forming the muzzle of the bear.
- Place two drops of melted chocolate above the pink wafer for the eyes. Add the candy eyes.
- Pipe a small bit of chocolate onto the "M" side of an M&M and place it onto the center of the pink wafer.
- Use the small cookie cutter to cut out a half-shaped moon from the bottom of all of the chocolate wafers. Pipe a line of melted chocolate onto the bottom curve of each wafer and place them onto the peanut butter cup for ears (just left and right of center).
- Repeat for all teddy bear cupcakes needed. Allow each to dry for 10-minutes before placing onto the cupcakes or make the day before.
- Next, make the vanilla cupcakes. You can use a store-bought mix, your own recipe, or our Lazy's Girl's Easy Vanilla Cupcake Recipe linked above (double the recipe). Let cool completely.
- Now it's time to make the chocolate frosting. Using a stand mixer if you have it, beat together the butter, powdered sugar, cocoa, vanilla extract, and heavy whipping cream until stiff peaks form. Cupcake frosting should be stiff, so only add 3 tablespoons of cream to start. Transfer to the piping bag with star tip.
- Finally, let's assemble our teddy bear cupcakes. Once the cupcakes are cool, frost them by building a large swirl with the star tip. Place a small mound of frosting in the center of the cupcake. Start piping at the edge of the cake, following the shape and lifting slightly as you go. Place one teddy bear decoration into the frosting and push down lightly. Add a heart to the frosting below the teddy bear.

- Cupcake Directions
- Preheat oven to 350 and line cupcake pan with the liners
- Using a standing mixer, combine the cake mix, butter, eggs, and milk and mix until combined
- Using a medium ice cream scoop, scoop the batter into the cupcake liners and fill about 3/4 of the way full
- Bake in the oven for about 21 minutes
- Pull out and place on the side to cool
- Cupcake frosting and decorating directions
- Using a standing mixer, combine the butter, powder sugar, cocoa powder, vanilla extract, and heavy whipping cream and mix until combined and until stiff and creamy.
- If the frosting, is still tough and powdery, add in 1-2 TBSP heavy whipped cream to make it more smooth
- Scoop frosting into the piping bag
- Cool cupcakes and then pipe frosting all around the cupcake
- Take two chocolate melting wafer and place them on the top corner for the ears
- Use your fingers to kind of play with the caramel square to get it soft
- Place it onto a cutting board or plate and flatted it out using either the bottom of a glass cup, or a rolling pin
- Take the mini circle cookie cutter and cut out the mouth part of the bear
- Add the caramel circle onto the center of the frosting
- Pop the two eyes in above the caramel circle
- Using left over frosting, add a tiny amount onto the back of the whopper candy
- Place whopper onto the top center of the caramel circle.
- Ready to serve!
SHARK BEACH PULL-APART CUPCAKES
This beach scene dessert requires no slicing - your guests can just grab a cupcake and dig in.

- For the cupcakes: Line two 12-cup muffin pans with cupcake liners; fill 9 with yellow liners and 15 with blue liners. Prepare the cupcakes according to the package directions. Transfer to cooling racks and cool completely.
- For the frosting: Color 3 cups of the frosting with blue gel food coloring until sea blue (12 to 14 drops). Color 2 cups of the frosting with yellow food coloring until pale yellow (2 to 3 drops). Keep the remaining 1 cup frosting white and transfer to a pastry bag fitted with a medium petal tip.
- Arrange the cupcakes in a 4-by-6 grid on a cutting board or a flat square serving platter, keeping the yellow liners together to make the sandy beach and the blue liners together to make the water. There will be 1 yellow liner in the row where the blue and yellow meet; keep it to the far left.
- With an ice cream scoop, scoop balls of blue frosting on the blue-lined cupcakes and yellow frosting on the yellow-lined cupcakes. Smooth the frosting across the cupcakes with an offset spatula so the blue and yellow almost meet; the line where they touch should be a gradual diagonal that looks like the shoreline when a wave comes in.
- Set aside 6 teddy bears. Put the rest in a food processor and process to crumbs. Reserve about 1/4 cup or so of the crumbs to anchor the palm trees later. Sprinkle the remainder over the yellow frosting to make sand.
- Pipe waves of white frosting along the shoreline where the sand meets the surf.
- Break off one end of the pretzel rods to make two 5-inch rods; discard (or eat) the smaller pieces from each rod. Cut the spearmint leaves in half crosswise and roll them out to flatten slightly. Press 3 leaf pieces into the broken end of each pretzel rod to resemble palm tree leaves. (If you have having trouble getting the leaves to stick, you can brush with a tiny bit of water at the spot where they adhere). Press 2 chocolate-covered peanuts on top of the leaves to make coconuts.
- Stick the trees into the sand in the spaces where the cupcakes meet. Spoon the remaining graham cracker crumbs around the bottoms of the trees to anchor them. Add a chocolate-covered peanut under each as a dropped coconut.
- Cut the sour candy strip into 4 equal pieces. Arrange on the sand for beach towels and lay a bear on top of each one.
- For the surfboards, unwrap and flatten the fruit roll up rounds. Fold each into quarters and press to adhere. Cut a 2 1/2-inch oval surfboard shape from each. Cut the black licorice into strips for lines on the surfboards (2 lines per board), but don't stick them on yet.
- Place the surfboards on a piece of parchment and microwave just until warm, about 10 seconds. Press on the licorice lines and microwave just until they stick, about 5 seconds more. Press a standing bear on each for a surfer and let cool. (You can put in the freezer to hasten the process.)
- Place the surfing bears on the water. Place the sharks on the water. With the remaining white frosting, pipe waves in front of the boards and in random spots around the rest of the ocean.
TEDDY BEAR CUPCAKES

- Make sure you cupcakes are completely cool before starting the decorating process! Lay some wax paper on your working surface to keep everything organized.
- Cover your hands with a bit of cornstarch to avoid fondant sticking to your fingers. Roll your fondant in 24 round pieces - about ½ an inch in size. This will make two ears for each bear.
- Flatten each circle and shape them to resemble teddy bear ears. Lay the teddy bear ears on your wax paper as you make them.
- Using an electric mixer, beat together butter, confectioner sugar, milk and cocoa starting on a low speed. Gradually increase to high speed until the ingredients mix and become smooth.
- Using a frosting bag and Wilton tip #233, frost each cupcake. Cover the cupcake top entirely.
- Place googly eyes, one pink candy and two ears on each cupcake. You can also add a smile with black or pink frosting, but they look cute without too!

VALENTINE TEDDY BEAR CUPCAKES

- Preheat oven to 350 degrees F.
- Prepare muffin tins with cupcake liners.
- Whisk the sugar, flour, cocoa, baking powder, baking soda and salt in a large mixing bowl.
- In a separate bowl, combine the eggs, milk, oil and vanilla extract.
- Using an electric mixer, add bowl of wet ingredients to the bowl of dry ingredients, beating on medium until the batter is smooth.
- Gradually add the boiling water, milk and oil and blend together until the batter is smooth.
- Using a medium scoop fill the paper lined cupcake tins with the prepared batter.
- Bake for 20-25 minutes, or until an inserted toothpick comes out clean.
- Allow to cool slightly before transferring to wire racks.
- Beat together powdered sugar, butter and cocoa powder in a mixing bowl.
- Add the vanilla and chocolate until well incorporated.
- Add in the heavy whipping cream, and continue to mix until stiff peaks form.
- Scoop the frosting into a decorating bag with a star tip.
- Generously cover each cupcake with chocolate frosting. You'll want enough to place your Reese's cup bears into so that they are secure.
- Pour each color of candy melts into their own plastic decorating bag and cut the tip so there is a small opening.
- Take one peanut butter or chocolate wafer for each bear, then cut them in half. Use the black candy melt as glue, to affix the chocolate wafer halves to the top of your Reese's cups as "ears." Hold wafers in place until the chocolate sets.
- Draw a large dot of the melted chocolate candy onto the back of a whole peanut butter or chocolate wafer and the place in the middle of the Reese's cup. This will be the nose.
- Use your melted white chocolate to draw eyes on the bear's face. Allow to dry.
- Use the melted dark chocolate to draw a pupil on each eye.
- Carefully turn your Reese's cup bears sideways, and press the bottom into the chocolate frosting on top of your cupcake. Make sure the bear is securely in place before letting go.
- Add two Whoppers on either side of the Reese's cups to be your bear's arms.
- Finally, place a candy heart into the frosting between your Whoppers.
TEDDY BEAR BEACH CUPCAKES

- Preheat your oven and prepare the cupcakes according to recipe directions. We used Betty Crocker's white cupcake mix. Add muffin liners to your 12 cupcake/muffin tins. Divide the batter evenly among 12 muffin tins. Bake until the tops spring back or a toothpick inserted comes out clean. Be sure to check baking times on the box.While the cupcakes are cooling on a wire rack, set aside your decorations (teddy grahams, gummy floaties, fish shaped gummies, beach towel candy, paper umbrellas, and "sand". Crush extra teddy grahams into a ziplog bag to resemble sand. We usually use a rolling pin and apply pressure back and forth to make crushed grahams. Once the cupcakes are cooled, mix your frosting in a bowl or directly in the container several drops of blue food coloring to resemble beach water. Frost all of the cupcakes with either a frosting spatula, butter knife or piping bag. Lightly sprinkle blue sugar onto 6 of the frosted cupcakes.On the other 6 cupcakes, dip just half of the cupcake at an angle into the "sand". Sprinkle extra crushed grahams on top for extra thickness.Place 6 teddy bear grahams into 6 round gummy floaties and 6 teddy bear grahams onto the rainbow candy beach towel (using a toothpick, add a small amount of frosting to the back of the teddy bear so the bear stays on the beach towel). Place each of these teddy bear grahams on each cupcake for a total of 12, 6 "floating in the water" and 6 "sun bathing on their towel."Place paper umbrellas in the teddy graham sand and mini fish gummies in the water. We added extra friends onto each cupcake because why not enjoy the beach with a friend or 2!
EASY POLAR BEAR CUPCAKES

- Place butter in a large bowl and cream until smooth with an electric mixer. Add cream cheese and beat until thoroughly combined. Mix in powdered sugar, 1 cup at a time, beating well after each addition. Mix in vanilla and salt until thoroughly combined. Pour in heavy cream and beat until frosting is smooth, about 2 minutes.
- Take 1 baked and cooled cupcake and frost with cream cheese frosting, making as even a layer as possible. Sprinkle coconut over the top of the frosting, and shake off any excess.
- Take 1 mini marshmallow and cut it in half horizontally using scissors or kitchen shears. Place one half of the marshmallow cut-side down in the center of the top of the cupcake, and press gently into the frosting to adhere. Take 2 black sugar pearl sprinkles and place above the nose on each side for the eyes. Press gently into frosting to adhere. Take 2 whole mini marshmallows and place at the top of the cupcake on each side to create ears. Repeat with remaining cupcakes.

- Heat oven to 350 for shiny pans or 325 for dark or nonstick. Place baking cups in 24 regular sized muffin cups.
- In large bowl make cake mix as directed on box. Divide evenly among muffin cups.
- Bake as directed on box or until toothpick inserted in center comes out clean. Cool 10 minutes, remove from pan to cooling rack. Cool completely, about 30 minute.
- Stir blue food color into frosting until blended. Frost cupcakes.
