LIME ICEBOX COOKIES

2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 stick unsalted butter, at room temperature
4 tablespoons cream cheese, at room temperature
1/2 cup plus 1/3 cup granulated sugar
1 tablespoon plus 1 1/2 teaspoons finely grated lime zest (from about 5 limes)
1 tablespoon fresh lime juice
1 large egg
1 1/2 teaspoons green sanding sugar

Steps:

  • Whisk the flour, baking powder and salt in a medium bowl. Beat the butter, cream cheese, 1/2 cup granulated sugar and 1 tablespoon lime zest in a large bowl with a mixer on medium speed until light and fluffy, about 3 minutes. Add the lime juice and egg; mix until combined. Reduce the mixer speed to medium low, add the flour mixture and beat until combined.
  • Place two 12-by-16-inch pieces of parchment paper on a work surface. Divide the dough in half and place each half on a piece of parchment; form each into a rough log. Fold the parchment over the dough; use a ruler to help you roll and press each piece of dough into a 1-by-12-inch straight-sided log. Wrap each log in the parchment and refrigerate until firm, at least 3 hours.
  • Position racks in the upper and lower thirds of the oven; preheat to 375 degrees F. Line 2 baking sheets with parchment. Combine the remaining 1/3 cup granulated sugar and 1 1/2 teaspoons lime zest and the green sanding sugar on a piece of parchment. Unwrap the logs; roll in the lime sugar to coat. Slice into 1/4-inch-thick squares; arrange 1 inch apart on the prepared baking sheets. Bake, switching the pans halfway through, until the cookies are golden around the edges, about 12 minutes. Let cool 5 minutes on the baking sheets, then transfer to racks to cool completely.

1 pound margarine
1 cup white sugar
1 cup light brown sugar
3 eggs
1 cup chopped nuts

Steps:

  • In a bowl, whisk the flour, baking soda, and cinnamon together until evenly blended; set aside. Beat the margarine, white sugar, and brown sugar with an electric mixer in a large bowl until smooth. Add the eggs one at a time, allowing each egg to blend into the margarine mixture before adding the next. Mix in the flour mixture until just incorporated. Fold in the chopped nuts; mixing just enough to evenly combine.
  • Scrape the dough onto a sheet of waxed paper, and form into a log. Roll tightly in the waxed paper, and refrigerate until firm, about 4 hours.
  • Preheat an oven to 350 degrees F (175 degrees C). Spray baking sheets with cooking spray.
  • Unwrap the dough, and cut into 1/4-inch slices. Place the cookies onto baking sheets, spaced 1-inch apart. Bake in the preheated oven until the edges are golden, 8 to 10 minutes. Allow the cookies to cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.

1 cup packed brown sugar
1 large egg, beaten
1/2 teaspoon vanilla extract
2 cups all-purpose flour
1/2 teaspoon baking soda

1 cup chopped walnuts, optional

Steps:

  • In a bowl, cream the butter and brown sugar. Add egg and vanilla; beat well. Combine dry ingredients; add to creamed mixture. Stir in nuts if desire. , On a lightly floured surface, shape the dough into three 10-in. x 1-in. rolls. Tightly wrap each roll in waxed paper. Freeze for at least 12 hours. , Cut into 3/8-in. slices and place on greased baking sheets. Bake at 350° for 6-8 minutes. Remove to a wire rack to cool.

1 1/2 teaspoons vanilla
2 eggs
3 cups Gold Medal™ all-purpose flour
1 teaspoon salt

Food color (any color)

Steps:

  • In large bowl, beat sugar, butter, vanilla and eggs with electric mixer on medium speed, or mix with spoon. Stir in flour, salt and baking soda. Divide dough in half. Stir 1/2 teaspoon food color into 1 half, or stir 1/2 teaspoon of different food colors into each half. Cover both halves and refrigerate 1 hour.
  • On very lightly floured surface, shape each halfof dough into 2 strips, each about 9x2 1/2 inches. Layer strips, alternating colors; press together. Wrap and refrigerate about 2 hours or until firm.
  • Heat oven to 400°F. Cut dough into 1/8-inch slices. On ungreased cookie sheet, place slices about 1 inch apart. Bake 8 to 10 minutes or just until edges are golden brown. Immediately remove from cookie sheet to coolingrack; cool.

This is my grandma's oatmeal cookie recipe. Once she got a deep freeze there was always a coffee tin full of them in the freezer. Every afternoon around 3:00 or 4:00 my grandpa would come in from the fields and she'd pull a couple of them out to put on a plate for them to enjoy with their afternoon coffee. I've now passed this recipe on to my daughter who was named after her too. A definite heirloom recipe. These are a crunch cookie so full of nuts and coconut that they are like eating a bowl of granola or oatmeal in a cookie.

1 cup Crisco shortening
2 large eggs
1/2 teaspoon lemon extract

Steps:

Basic Butter Cookie Dough

Steps:

  • Divide dough in half; form into two 2-inch square logs, each approximately 5 1/2 inches long. Wrap logs in waxed paper; refrigerate until firm, at least 2 hours.
  • Preheat oven to 350 degrees. Slice dough crosswise, 3/16 inch thick; carefully transfer slices to baking sheets.
  • If decorating, brush with egg wash, then sprinkle with sugar or sprinkles. Bake until edges are firm (not brown), 10 to 15 minutes. Cool 1 to 2 minutes on baking sheets; cool completely on a rack.

I am not sure why these are called Tennessee Cookies. This is a recipe from Nick Malgieri's book, "Cookies Unlimited." The dough for these brown sugar based cookies can be made ahead and used just like purchased cookie dough logs. Prep time does not include chilling the dough.

1 teaspoon baking soda
1/4 teaspoon salt
1 cup sweet unsalted butter, at room temperature
2 1/2 cups light brown sugar, packed
1 tablespoon vanilla extract
2 large eggs
1 cup slivered almonds, coarsely chopped

Steps:

  • PLAN AHEAD: Dough requires chilling.
  • Combine flour, baking soda, and salt.
  • Beat butter and brown sugar together using an electric mixer until well mixed, just a minute or so.
  • Add vanilla to the butter mixture and beat well.
  • Add eggs to the butter mixture, one at a time, beating to combine well with each addition.
  • You will porbably need to keep scraping down the sides of your bowl with a spatula.
  • Add the flour mixture and beat until combined.
  • Next,beat in the chopped nuts.
  • Place batter onto a floured work surface and divide dough into two equal portions.
  • Shape each portion into a long dough log, about 10 inches long.
  • Roll up each log in parchment paper/waxed paper- you want them to look like rolls of purchased slice'n bake cookie dough.
  • Set logs into a plastic zip-top type bag and chill until firm.
  • (You can freeze this dough up to three weeks, if desired.).
  • TO BAKE: Preheat oven to 350 degrees F.
  • Line baking sheets with parchment paper or foil.
  • Slice cookie logs into 1/4 inch thick rounds using a sharp knife.
  • Set onto baking sheets about 1 inch apart and bake for 12-15 minutes, or until puffed slightly and firm to the touch.
  • These will remain very light in color- do not try to make these turn brown or you'll have burnt cookies.
  • As each batch comes out of the oven, simply slide the paper or foil off of the cookie sheet and let the cookies cool.
