Baked Fruit-Cinnamon Oatmeal Recipe image

A hearty and delicious recipe for baked oatmeal with lots of fruit and cinnamon.

3 cups old-fashioned oats
1 cup blueberries ((or whatever fresh/frozen fruit you prefer))
1/4 cup dried cranberries ((or whatever dried fruit you prefer))
1/3 cup packed brown sugar
2 teaspoons baking powder
3/4 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup plain fat-free yogurt
1 cup reduced fat milk
1/2 cup applesauce
1 egg
2 tablespoons canola oil
1-1/2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350F degrees. Lightly spray 8-inch square baking dish with nonstick spray.
  • In a large bowl, mix together the oats, blueberries, cranberries, all except 2 tablespoons of the brown sugar, baking powder, cinnamon, and salt.
  • In another bowl, whisk together the yogurt, 1/2 cup milk, the applesauce, egg, oil and vanilla until smooth.
  • Add the yogurt mixture to the oat mixture and stir until well combined.
  • Spoon into the prepared baking dish and spread it out evenly. Sprinkle with the remaining 2 tablespoons brown sugar.
  • Bake the oatmeal until a toothpick inserted into the center comes out clean, about 35 minutes.
  • Remove from the oven and let cool in the baking dish on a wire rack for 10 minutes.
  • Cut the oatmeal into 8 equal portions and serve with remaining 1/2 cup milk.

Another recipe from my days at WW. I'm always looking for a good baked oatmeal recipe that won't pile on the calories, so I'm anxious to try this one.

2 cups oats, not instant
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup skim milk
1/2 cup egg substitute
1/2 cup unsweetened applesauce
1/2 cup sugar
1 teaspoon vanilla
2 teaspoons cinnamon
1 apple, any variety, chopped

Steps:

  • Combine dry ingredients. Add wet ingredients. Add chopped apple. Mix. Pour into 8 x 8 dish sprayed with Pam. Bake at 325 for 45 minutes.
  • Note: I've heard that if you like your oats softer, you can prepare this and refrigerate it the night before, then bake it in the morning.

1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup skim milk
1/2 cup Egg Beaters egg substitute or 2 eggs
1/2 cup unsweetened applesauce or 1 apple, peeled, cored, and coarsely chopped in the food processor
1/4 teaspoon Splenda sugar substitute
1 teaspoon vanilla extract
1 tablespoon ground cinnamon or 1 tablespoon apple pie spice

Steps:

  • Preheat oven to 350 degrees. Spray an 8" square baking pan, or 6 muffin cups, with non-stick spray.
  • Combine wet ingredients and add dry ingredients. Spread in prepared baking pan, or spoon into prepared muffin cups.
  • Bake square pan for 35-45 minutes, or muffin cups for 25-30 minutes. Keeps well in refrigerator or freezer. Good cold or warm.

¾ cup brown sugar
2 teaspoons baking soda

4 eggs
½ cup oil
2 teaspoons vanilla extract
1 cup dried cranberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a 9x13-inch baking dish with parchment paper.
  • Mix oats, milk powder, brown sugar, baking soda, cinnamon, salt, and baking powder together in a bowl. Whisk milk, eggs, oil, and vanilla extract together in a separate bowl; stir into oats mixture just until mixed. Fold cranberries into oats mixture; spoon into prepared baking dish.
  • Bake in the preheated oven until oatmeal is set, about 40 minutes.
