EASY TACO CASSEROLE



Easy Taco Casserole image

This Easy Taco Casserole is made with 3 layers of corn tortillas, ground beef, corn, black beans, the best taco seasoning and lots of melted cheese!

cooking spray
1 1/2 tablespoons olive oil
1/2 yellow onion, (chopped)
2 teaspoons minced garlic ((about 4 cloves))
1 poblano pepper (diced)
1 pound lean ground beef
3 tablespoons homemade taco seasoning ((or store-bought))
1 15-ounce can black beans, (drained and rinsed)
1 15-ounce can whole kernel yellow corn, (drained and rinsed)
1 15-ounce can diced tomatoes
2 tablespoons lime juice ((about the juice of 1 lime))
12 corn tortillas
4 cups shredded Monterey Jack cheese
chopped cilantro, cilantro and sour cream, (for topping)

Steps:

  • Preheat oven to 375°F. Grease a 3-quart 13x9-inch baking dish with cooking spray and cut 9 of the corn tortillas in half. Set aside.
  • In a large nonstick skillet over medium-high heat, add oil, onions and poblanos. Cook until soft, about 5 minutes. Add in garlic and cook until fragrant, about 30 seconds.
  • Add the ground beef and break up the meat into smaller chunks using a wooden spoon. Cook, stirring occasionally, until the beef is completely browned, about 8 to 10 minutes.
  • Add taco seasoning, black beans, corn, diced tomatoes and lime juice. Stir until fully combined, taste and season with salt and pepper. Remove from heat.
  • Assemble the casserole by placing 6 tortilla halves and 1 whole tortilla in the baking dish so that the bottom is completely covered. Top with 1/3 of the meat mixture and 1/3 of the shredded cheese. Repeat and make 2 more layers.
  • Bake for 20 to 25 minutes, until cheese is completely melted. Garnish tomatoes, cilantro and serve with sour cream.

1 pound ground beef
1 cup salsa
½ cup chopped onion
½ cup mayonnaise
2 tablespoons chili powder
1 teaspoon ground cumin
2 cups crushed tortilla chips, divided
4 ounces shredded Cheddar cheese, divided
4 ounces shredded Monterey Jack cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cook and stir ground beef in a large skillet over medium-high heat until crumbly, evenly browned, and no longer pink, 5 to 7 minutes. Drain and discard any excess grease. Stir salsa, onion, mayonnaise, chili powder, and cumin into the beef. Remove from heat.
  • Spread about half the ground beef mixture into the bottom of a 2-quart casserole dish. Spread about half the tortilla chips in a layer atop the beef mixture. Layer about half of each of the Cheddar and Monterey Jack cheeses over the tortilla chip layer. Repeat layers with remaining ingredients, ending with Monterey Jack cheese. Cover dish with aluminum foil.
  • Bake in preheated oven until the cheese is melted in the middle, about 30 minutes.

1 ½ pounds ground beef
1 cup chopped onion
½ cup water
1 (1 ounce) package taco seasoning mix
1 (10 ounce) can refried beans
½ cup salsa
1 (6 ounce) can sliced black olives
1 (4 ounce) can diced green chiles
15 taco shells, broken up, or more to taste
2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a 9x13-inch baking pan with cooking spray.
  • Cook ground beef and onions in a skillet over medium heat until beef is browned, 7 to 10 minutes; drain grease. Stir in water and taco seasoning; cook, stirring often, until thickened, about 2 minutes. Add refried beans, salsa, olives, and green chiles. Cook and stir over low heat until ingredients are warmed through, 3 to 4 minutes.
  • Place half of the taco shells in the bottom of the baking dish. Pour in half of the ground beef mixture; sprinkle with half of the Cheddar cheese. Repeat with remaining taco shells, ground beef mixture, and Cheddar cheese.
  • Bake in the preheated oven until cheese is melted and bubbly, 20 to 25 minutes.

This can be made using ground turkey, low fat sour cream and low fat cheeses to cut down on calories, or you can use ground beef, regular sour cream and regular cheese-I've made it both ways and couldn't taste the difference-I like it both ways! Great for pot luck!

1/2 cup chopped onion
1/8 teaspoon garlic powder
1 lb ground turkey or 1 lb ground beef
1 (1 ounce) can stewed tomatoes
1 package taco seasoning mix
1 (1 ounce) can green chili, with juice,chopped
1 (1 ounce) can black olives, chopped
16 ounces nacho cheese plain Doritos
1/2 lb shredded mozzarella cheese (low fat optional)
1 pint sour cream (low fat optional)
1/2 cup shredded cheddar cheese (low fat optional)

Steps:

  • Preheat oven to 350 degrees.
  • Heat oil in skillet.
  • Cook onion in oil until softened.
  • Add garlic and turkey; cook until browned.
  • Add tomatoes, taco seasoning, chilis (with juice) and olives.
  • Simmer for 10 minutes.
  • Spray 9x13 baking dish with nonstick cooking spray (or grease with crisco, your choice) Layer 1/2 of the doritos on bottom of dish.
  • Add meat mixture, then sour cream, and top with Mozzarella.
  • Cover with another layer of Doritos.
  • Bake for 25 minutes.
  • Sprinkle with cheddar cheese; return to oven for 5 minutes, or until cheese has melted.
