Chicken wings basted with an orange-soy-ginger sauce are served with a mango-orange dipping sauce.

½ cup reduced sodium soy sauce
½ cup reduced sodium chicken broth
¼ cup mirin
⅓ cup Stevia In The Raw® Bakers Bag
2 tablespoons frozen (thawed) orange juice concentrate
2 garlic cloves, sliced lengthwise
¾ inch piece fresh ginger, in 3 slices
16 chicken wings
1 cup diced fresh mango
2 tablespoons brown mustard
2 tablespoons orange marmalade fruit spread
2 (1 gram) packets Stevia In The Raw®
1 tablespoon fresh lime juice
⅛ teaspoon cayenne pepper
½ teaspoon salt
⅛ teaspoon freshly ground pepper
2 tablespoons chopped scallions

Steps:

  • In small saucepan, combine all the sauce ingredients. Boil sauce over medium-high heat for 10 minutes. Cool sauce to room temperature. If desired, remove garlic and ginger, transfer sauce to tightly covered container, and refrigerate for up to 24 hours.
  • Preheat oven to 425 degrees F. Line baking pan, 15" x 11" or larger, with foil. Coat 2(10" x 10") wire racks with cooking spray and set in the pan, overlapping them.
  • Cut off first joint of chicken wings and discard. Arrange wings in prepared baking pan in one layer, smooth side up. Bake wings for 10 minutes.
  • Brush wings on both sides with sauce and bake, smooth side up, for 5 minutes. Brush with sauce again and bake, underside up, for 5 minutes. Brush wings a third time and bake, smooth side up, for 5 minutes. Brush wings again, and bake, underside up, for 10 minutes. Reduce oven to 400 degrees F. Brush tops of wings with sauce and bake, topside up, for 10 minutes.
  • Arrange wings on serving plate. Discard any remaining sauce.
  • In mini-food processor, whirl all sauce ingredients except scallions together until smooth. Transfer sauce to bowl and garnish with scallions.

2 dozen chicken wings, about 3 1/4 pounds, rinsed and patted dry
Salt and freshly ground black pepper
Olive oil
1 tablespoon sesame seeds, toasted in a skillet over medium heat until lightly browned
Leaves from 1/2 bunch fresh cilantro, chopped
1 cup low-sodium soy sauce
1 cup grapefruit juice
1/4 cup hoisin sauce
1/4 cup ketchup
3 tablespoons rice wine vinegar
1/4 cup brown sugar
1 fresh, hot red chile, halved
5 garlic cloves, halved
2-inch piece fresh ginger, smashed with the side of a large knife

Steps:

  • Preheat the oven to 400 degrees F.
  • Season the chicken wings with salt and pepper and drizzle a little olive oil on them to prevent sticking. Lay the wings in a single layer on a baking sheet. Bake for 30 minutes or until the skin gets crispy and the wings are cooked through.
  • Meanwhile, combine the teriyaki sauce ingredients in a large saucepan. Simmer over low heat and reduce until slightly thickened. Pour the sauce into a large bowl. Dump the wings into the bowl and toss to coat them with the sauce. Transfer to a serving platter and sprinkle with the sesame seeds and cilantro. Serve hot.

3 pound whole chicken wings
1 cup all-purpose flour
1-1/2 teaspoons garlic powder
1 teaspoon salt
1/2 teaspoon pepper
Oil for deep-fat frying
3/4 cup soy sauce
3/4 cup sugar

Steps:

  • Cut chicken wings into three sections; discard wing tip section. In a large bowl or plastic bag, combine flour, garlic powder, salt and pepper. Add wings; toss to coat. , In an electric skillet or deep-fat fryer, heat oil to 350°. Fry chicken wings, a few at a time, for about 9 minutes or until juices run clear. Drain on paper towels. , In a saucepan combine soy sauce and sugar; cook and stir until sugar is dissolved, about 5 minutes. Dip fried wings briefly in sauce; serve immediately.

1 cup water
1 cup soy sauce
1 cup white sugar
¼ cup pineapple juice
¼ cup vegetable oil
1 tablespoon minced fresh garlic
1 tablespoon minced fresh ginger
3 pounds chicken wings or drumettes

Steps:

  • Whisk together the water, soy sauce, sugar, pineapple juice, vegetable oil, garlic, and ginger in a large glass or ceramic bowl until the sugar has dissolved. Add the chicken wings, coat with the marinade, cover the bowl with plastic wrap, and marinate in the refrigerator for at least 1 hour.
  • Preheat an oven to 350 degrees F (175 degrees C). Grease baking dishes, and set aside.
  • Remove the chicken from the marinade, and shake off excess and place the chicken wings into the prepared baking dishes. Discard the remaining marinade. Bake the wings in the preheated oven until the chicken is cooked through and the glaze is evenly browned, about 1 hour.

5 lbs chicken wings
10 ounces soy sauce
1 lb dark brown sugar

Steps:

  • Mix sauce and sugar together, brush on both sides of the wings, then pour over wings in pan.
  • Cook in a roasting pan/cookie sheet with a"lip" so the sauce doesn't spill and make a mess of the oven 350 degrees Cook for 1 hour.
  • I usually cook face down (so that the"pretty" side of the wing gets good and brown) for about 40 minutes and then flip over.
  • Then when done throw all the gooey sauce into the crock pot with the wings and simmer on low heat for as long as you want.
  • (At least 10 minutes) this is what makes them fall apart in your mouth, but you don't have to do it to cook them.
  • they should be done after an hour in the oven.

I think this recipe came from a Kikkoman Teriyaki Sauce ad. "Spice up your next barbecue with these hot and spicy wings!" (Prep time does not include refrigerating overnight).

4 lbs chicken wings
3/4 cup teriyaki sauce
2 teaspoons crushed red pepper flakes
3/4 teaspoon Tabasco sauce
3/4 cup sour cream
1/3 cup mayonnaise
1 tablespoon green onion, minced
1 tablespoon parsley, minced
1 tablespoon teriyaki sauce

Steps:

  • Discard chicken wing tips.
  • Combine teriyaki sauce, crushed red pepper and pepper sauce; pour over chicken in large plastic food storage bag.
  • Press air out of bag; close top securely.
  • Turn bag over several times to coat all pieces well.
  • Refrigerate 8 hours or overnight.
  • Cook wings on grill 4 to 5 inches from hot coals 20 to 25 minutes, or until tender, turning over frequently.
  • For sauce: Combine all ingredients; refrigerate until ready to serve.
  • Almonds: you can mix them in the sauce, or you can sprinkle them on top with the crackers.
