Veggie Teriyaki Stir-Fry with Noodles image

Provided by Cookie and Kate

Categories     Entree

Time 40m

Number Of Ingredients 9

4 ounces soba noodles, brown rice noodles, spaghetti or long noodle of choice
2 tablespoons extra-virgin olive oil or avocado oil
1 medium red or white onion, halved and thinly sliced
1/2 teaspoon fine sea salt
6 cups thinly sliced mixed vegetables*
1/2 cup teriyaki sauce, or more as needed
1 to 2 teaspoons toasted sesame oil, to taste
1 teaspoon sesame seeds, plus more for garnish
1/4 cup thinly sliced green onion, for garnish

Steps:

  • Bring a pot of water to boil and cook the noodles until al dente, according to package directions. Drain and rinse well to remove any excess starch. Set aside.
  • Meanwhile, warm a large skillet over medium heat. Add the oil, onion and salt. Cooking, stirring occasionally, until the onion is tender, about 4 to 6 minutes.
  • Add the remaining vegetables and cook until they are tender and caramelizing on the edges, stirring every minute or two. Given the volume of vegetables, this will take about 10 to 15 minutes.
  • Once the vegetables are done, add the noodles and 1/2 cup teriyaki sauce to the pan. Stir to combine, and cook just until the ingredients are all warmed through, about 1 minute. Feel free to add more teriyaki sauce if you like your noodles extra-saucy.
  • Remove the skillet from the heat. Add toasted sesame oil, to taste (a little goes a long way/toss with tongs if you need help mixing the noodles into the veggies). Add the sesame seeds.
  • Serve the noodles in bowls with sliced green onion and a little sprinkle of sesame seeds on top. Leftovers keep well, covered and refrigerated, for up to 4 days.

ULTIMATE VEGETABLE TERIYAKI STIR-FRY

Ultimate Vegetable Teriyaki Stir-Fry image

Readers tell me often that this recipe, originally from Eat, Drink & Be Vegan, is better than any take-out! I decided it must be in this book too, with a few changes to simplify and save time.

Provided by Dreena Burton

Categories     Main Dish

Number Of Ingredients 16

1½ Tbsp arrowroot powder
1 Tbsp roughly chopped fresh ginger
3-4 medium cloves garlic, minced
½ cup water
⅓ cup tamari or coconut aminos
3½ Tbsp pure maple syrup
½-1 Tbsp freshly squeezed lemon juice
1 tsp blackstrap molasses
4-6 tsp water, divided
1 cup sliced carrot (in discs or half-moons)
1-2 pinches sea salt
1 cup sliced zucchini or green beans cut into bite-size pieces
4-5 cups broccoli florets
1½ cups red, yellow, or orange bell pepper, cored, seeded, and sliced (1 medium-large)
¾-1 cup cubed baked tofu or marinated tempeh (optional; see note)
½-¾ cup roughly chopped or crushed raw cashews (optional)

Steps:

  • Using a blender or immersion blender, puree all the ingredients for the sauce.
  • In a sauté pan over high heat, add 2-3 teaspoons of the water, carrot, and sea salt. Reduce heat to medium-high, cover, and let the carrot steam for a few minutes.
  • Remove the cover, return heat to high, and add the zucchini. Toss through to let sear slightly.
  • Then add remaining 2-3 teaspoons water, broccoli, and bell pepper. Toss through, cover, reduce heat slightly, and cook for 2-3 minutes, just until broccoli turns bright green (the veggies will continue to cook in sauce, so do not overcook).
  • Add the teriyaki sauce to the vegetable mixture, and tofu or tempeh, if using. Toss to coat, and let the sauce come to a slow boil over medium-high heat.
  • Once the sauce has reached a slow boil and thickened, add the cashews and toss to combine.
  • Remove the pan from the heat and serve immediately over brown rice, quinoa, or soba noodles.

TERIYAKI SHRIMP AND VEGETABLE STIR-FRY

Teriyaki Shrimp and Vegetable Stir-Fry image

Shrimp, bok choy, broccoli, and zucchini are happy together in a stir-fry that makes its own teriyaki sauce. Serve over rice or noodles for a tasty meal.

Provided by Marcia

Categories     World Cuisine Recipes     Asian

Time 25m

Yield 4

Number Of Ingredients 11

2 heads baby bok choy
2 tablespoons vegetable oil
1 tablespoon grated fresh ginger root
½ pound uncooked medium shrimp, peeled and deveined

1 cup sliced zucchini
2 tablespoons soy sauce
2 tablespoons sweet vermouth
2 tablespoons brown sugar
2 teaspoons rice vinegar

  • Slice the stem ends of the bok choy off to separate the leaves. Wash and drain the leaves; discard the ends. Cut the leafy green part of the leaves from the white part, keeping both parts separated.
  • Heat a large skillet or wok over high heat; add oil. Cook and stir ginger in the hot oil for 1 minute. Add shrimp and continue cooking until they are bright pink and opaque, reducing heat as necessary to prevent burning, 2 to 3 minutes.
  • Stir white pieces of bok choy, broccoli, zucchini, soy sauce, vermouth, brown sugar, and rice vinegar into the skillet. Cover and continue cooking until bok choy begins to soften, 4 to 5 minutes.
  • Stir to coat the vegetables with the liquid. Sprinkle with cornstarch and stir until it mixes in and disappears. Top with the green pieces of bok choy, cover, and continue cooking until leaves start to wilt and the sauce thickens, 1 to 2 minutes. Stir to coat everything with sauce. Serve hot.
