Tex-Mex Sloppy Joes made with ground beef, bell peppers, onions, corn, black beans and salsa topped with cheddar cheese will replace your next Taco Tuesday!

1 1/2 pounds ground beef
2 tablespoons canola oil
1 yellow onion (diced)
1/2 red bell pepper (diced)
1/2 green bell pepper (diced)
1 cup corn
1 cup black beans
2 teaspoons cumin
2 cups beef broth
1 cup tomato sauce
1 cup salsa
3 tablespoons taco seasoning
1/4 cup ketchup
1 cup cheddar cheese (shredded)
6 brioche buns (toasted)

Steps:

  • In a large skillet add the beef and onions, cooking well, breaking it apart but leaving some chunks for 5-6 minutes, then remove from the pan.
  • Add in the canola oil, red bell pepper, green bell pepper, corn and black beans and cook for 5-6 minutes, stirring often until the bell peppers are softened.
  • Add in the cumin, beef broth, tomato sauce, salsa, taco seasoning and ketchup, cooking until the sauce starts to evaporate and the mixture becomes "sloppy" (about 5-6 minutes).
  • Spoon over the mixture and top with shredded cheddar cheese.

2 cans (8 crescents each) Pillsburyᵀᴹ Crescents
½ lb (250 g) lean ground beef
2 tbsp (25 mL) Old El Pasoᵀᴹ Seasoning Mix (from 35 g package)
1 cup (250 mL) Old El Pasoᵀᴹ Thick N' Chunky Salsa
1 cup (250 mL) shredded Cheddar or Monterey Jack cheese (or a nacho cheese blend)
1 egg, beaten
1 tbsp (15 mL) cornmeal

Steps:

  • Heat oven to 375°F. Spray cookie sheet with cooking spray. Unroll both cans of dough on work surface; press into two 12x8-inch rectangles. Cut into total of 8 rectangles.
  • In 10-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring frequently, until thoroughly cooked. Stir in taco seasoning mix and salsa; simmer 5 minutes. Spoon about 1/4 cup/50 mL meat mixture in center of 1 dough rectangle. Sprinkle with 2 tablespoons/25 mL cheese. Fold rectangle over to form triangle; press edges with fork to seal. Place on cookie sheet. Brush with egg; sprinkle with cornmeal. Repeat with remaining dough and filling.
  • Bake 10 to 15 minutes or until deep golden brown.

1/2 tsp kosher salt
1/2 tsp black pepper
1/4 tsp dried coriander
1/4 tsp oregano
1 cup mild salsa (or tomato sauce, if preferred)

Steps:

  • In a mixing bowl, combine Worcestershire sauce, ketchup, brown sugar, mustard, paprika, chili powder, cumin, salt, pepper, coriander, oregano, and salsa. Whisk or stir to mix well, then set aside.

1 small onion, chopped
2 garlic cloves, minced
1 cup ketchup
1 can (4 ounces) chopped green chiles
1/2 cup beef broth
1/4 cup chili sauce
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon salt
1/4 teaspoon coarsely ground pepper
6 hamburger buns, split
2 tablespoons butter, softened

Steps:

  • In a large skillet, cook beef and onion over medium heat for 6-8 minutes or until beef is no longer pink, breaking up beef into crumbles; drain. Add garlic; cook 1-2 minutes longer. Stir in the ketchup, chiles, broth, chili sauce and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes, stirring occasionally., Meanwhile, spread cut sides of buns with butter. Place on baking sheets, buttered side up. Broil 4 in. from the heat for 1-2 minutes or until toasted. Serve beef mixture in buns.

1 can (16 oz) spicy chili beans in sauce, undrained
1 lb extra-lean (at least 95%) ground beef
1 cup chopped green pepper
1 cup chopped red bell pepper
1 cup chopped onion
1 jalapeño chile, seeded, diced
1/4 cup ketchup
1 teaspoon chili powder
1/4 teaspoon pepper
2 teaspoons fresh lime juice
8 whole wheat burger buns

Steps:

  • Spray 3 1/2- to 4-quart slow cooker with cooking spray; set aside. Pour chili beans into medium bowl. With potato masher or fork, mash about half of the beans; set aside.
  • In 12-inch skillet, cook beef, green and red bell peppers, onion and jalapeño chile over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain.
  • Pour beef mixture into slow cooker. Add beans, ketchup, chili powder and pepper. Stir to thoroughly combine. Cover; cook on Low heat setting 2 1/2 to 3 hours or until heated through (165°F). Stir in lime juice.
  • Divide beef mixture among buns (about 1/2 cup each). Serve immediately.

1/2 cup canned corn, drained
salt and pepper

Steps:

  • Heat oil in a large nonstick skillet. Add bell pepper, onion, and jalapeno and cook for 2 minutes.
  • Add ground beef. Cook until ground beef is browned, crumbling it as it cooks.
  • Add remaining ingredients and simmer for 3 to 5 minutes to thicken.
  • Check for seasoning and add salt and pepper to taste.

1 medium onion, diced
1 1/2 lbs ground beef
1/2 teaspoon chili powder
1 (8 ounce) can tomato sauce
1/3 cup ketchup
1 (4 ounce) can chopped green chilies
1 tablespoon sugar
1/4 teaspoon salt
1/8 teaspoon black pepper
8 hamburger buns

Steps:

  • In large skillet, heat oil over medium heat. Add diced onion and cook 5 minutes. Increase heat to medium-high and add ground beef and chili powder.
  • Cook 5 minutes, until meat is no longer pink.
  • Dran fat.
  • Stir in tomato sauce, ketchup, green chiles, sugar, salt and pepper. Increase heat to high ; simmer 5 minutes, until thickened.
