EASY CALZONE RECIPE
Easy calzones make for a fun lunch or dinner. These stuffed pizza pockets are filled with all the classic toppings - meat, cheese and your choice of sauce.

Steps:
- Preheat the oven to 475 °F. Line the baking sheet with parchment paper or spray it with oil.
- Divide the dough into 8 equally sized pieces. Roll each piece into a 1/4" thick circle.
- Place the filling on half of each circle (pizza sauce, ricotta, pepperoni, salami and shredded mozzarella). Make sure to leave the edges clean to allow for sealing the calzone. Fold the side over the filling and crimp the edges.
- Place calzones on a baking sheet, leaving space apart. Cut a small vent on the top of each calzone. Brush the tops with oil and sprinkle with parmesan cheese. Bake for 15 minutes or until golden brown.

- Preheat broiler. Heat beef tips with gravy according to package directions. Meanwhile, in a small skillet, heat oil over medium-high heat. Add onion and pepper; cook and stir 4-6 minutes or until tender. Stir in salt and pepper., Place buns on a baking sheet, cut side up. - Heat oven to 375°F.
- Unroll dough into 4 rectangles.
- Spread each one with mustard; top with slice roast beef,.
- Top with 1 slice cheese and one quarter of chilies.
- Beginning at short ends roll up.
- Pinch seams closed; place seam side down onto baking sheet.
- Bake for 15-20 minutes or until golden and crisp.

Steps:
- Put pizza dough on wax paper or parchment.
- Roll out to oblong and cut in half. Two pizzas become 4 calzones.
- Grill or broil steak to medium rare. Let rest.
- In a mixing bowl, mix tomato sauce, tomato paste, garlic powder, chili powder, basil, and Italian seasoning.
- Spray poblano with cooking spray and bake at 325F, turning once, until outside of pepper is charred. Drop into a paper bag. Let rest 10 minutes.
- Remove skin from poblano, seed, and dice. Dice onion.
- Spread sauce on one half of each calzone.
- Cut up steak into bite-size pieces and add to each calzone. Add onions and poblano.
- Add ¼ C mozzarella to each calzone. Sprinkle with Parmesan.
- Wet edges with water and using your fingers, close up each calzone into a package.
- Spray calzones with oven spray or drizzle with olive oil for golden brown.
- Bake at the temperature suggested on the pizza directions, usually 325-350 for about 12-15 minutes until golden.
- Serve with additional sauce if desired.
- Sprinkle with Parmesan on hot calzones.

- Preheat oven to 375F with the oven racks positioned in the middle sections of the oven. Grease two baking sheets or, line them with parchment paper.
- On a lightly floured surface, divide each pizza dough in half. Roll out each pizza dough into rounds (4). Transfer 2 dough rounds onto each baking sheet.
