TFAYA (ONION-RAISIN CONFIT)
A traditional Moroccan condiment, a sort of onion-raisin jam. From "Gourmet's Adventures with Ruth," episode "Morocco."

Steps:
- Soak the raisins in the hot water.
- In a medium saucepan, heat the oil over medium heat until shimmering. Add onions and salt and cook, stirring often, until soft, 8-10 minutes.
- Add ginger, cinnamon, turmeric, saffron and pepper. Cook, stirring often, 2 minutes.
- Drain raisins and add to onions. Add sugar and simmer until thickened, about 10 minutes. Cool to room temperature, then refrigerate until needed. Keeps about 1 week.

- Heat oil in a 3- to 4-quart heavy saucepan over moderate heat until hot but not smoking, then cook onions, stirring occasionally, until they begin to soften, about 7 minutes. Add raisins, honey, ginger, and cinnamon and cook, uncovered, stirring occasionally, until onions are very tender and slightly caramelized, 20 to 25 minutes.
