A traditional Moroccan condiment, a sort of onion-raisin jam. From "Gourmet's Adventures with Ruth," episode "Morocco."

Ingredients

1 cup golden raisin
1 cup hot water
3 tablespoons olive oil
3 medium onions, sliced thinly pole-to-pole
1 teaspoon kosher salt
1 1/2 tablespoons ground ginger
3 cinnamon sticks, each 3 inches long
1 pinch turmeric
1 pinch saffron, crushed to powder
3/4 teaspoon ground black pepper
2 cups white sugar

Steps:

Soak the raisins in the hot water.
In a medium saucepan, heat the oil over medium heat until shimmering. Add onions and salt and cook, stirring often, until soft, 8-10 minutes.
Add ginger, cinnamon, turmeric, saffron and pepper. Cook, stirring often, 2 minutes.
Drain raisins and add to onions. Add sugar and simmer until thickened, about 10 minutes. Cool to room temperature, then refrigerate until needed. Keeps about 1 week.

Ingredients

3 tablespoons vegetable oil
2 1/4 pound red onions, halved lengthwise, then thinly sliced
1 cup golden raisins
1/2 cup mild honey
1 1/2 teaspoons ground ginger
1 1/4 teaspoons cinnamon

Steps:

Heat oil in a 3- to 4-quart heavy saucepan over moderate heat until hot but not smoking, then cook onions, stirring occasionally, until they begin to soften, about 7 minutes. Add raisins, honey, ginger, and cinnamon and cook, uncovered, stirring occasionally, until onions are very tender and slightly caramelized, 20 to 25 minutes.
