Recipe VIDEO above. A chicken salad with a fantastic Thai chilli lime dressing with a great tangy-sweet-salty-spicy balance that South East Asian food is known for. Using Chilli Garlic Sauce is a great way to thicken dressing as well as adding more layers of flavour. Serves 2 as a main, 4 as a side.

180 - 220 g / 6 -7oz chicken breast
150 g / 5 oz mixed lettuce leaves ((or other of choice))
1 cup cherry or grape tomatoes (, halved)
1 small cucumber (, sliced)
1/4 red onion (, finely sliced)
1/2 large red chilli (, deseeded and very finely sliced (Note 1))
1/2 cup roasted cashews (, unsalted preferred)
1/4 cup coriander / cilantro leaves
1 tbsp finely chopped coriander/cilantro stems ((see video))
1 1/2 tsp Chilli Garlic Sauce ((Note 2))
1 small garlic (, minced)
1 1/2 tbsp fresh lime juice (or rice vinegar)
2 tsp fish sauce ((Note 3))
1 tbsp canola oil ((or vegetable, grapeseed or other neutral oil))
1 1/2 tsp sugar ((any, I use white))

Steps:

  • Take the chicken out of the fridge 30 minutes before cooking.
  • Boil water in a saucepan. Add chicken, put the lid on, let the water come back up to a simmer, then remove from stove. Set aside for 20 minutes (even up to 45 min is fine). (Note 4)
  • Remove chicken from water and shred, then cool.
  • Place ingredients in a jar. Shake well. Taste and adjust as required. It should be a balance of tangy / sweet / salty / hint of spice. (Note 5)
  • Place Salad ingredients in a large bowl. Drizzle over most of the Dressing, toss. Serve immediately, drizzled with remaining Dressing.

2 medium celery ribs, cut into small dice
2 medium green onions, sliced thin
chopped honey-roasted peanuts

1 teaspoon ground ginger
2 teaspoons white sugar
½ teaspoon hot red pepper flakes
2 tablespoons minced fresh cilantro leaves

Steps:

  • In a medium bowl, mix chicken, celery, green onions and peanuts. In a small bowl, whisk lime juice, fish sauce, ginger, sugar, red pepper, cilantro and mint, plus 2 Tbs. water.
  • Toss dressing with chicken mixture and serve on a bed of Boston lettuce with the suggested accompaniments.

handful mint leaves, (roughly chopped)
4 handfuls baby salad greens ((spinach, mangold and arugula) (about 100 g))
250 g tiger prawns, (peeled and cooked)
50 g unsalted cashews, (toasted)
2 tablespoons freshly squeezed lemon juice
2 tablespoons fish sauce
2 tablespoons palm sugar
1 teaspoon sambal oelok ((chili-garlic sauce, found at Asian food markets))
1 red and green fresh chili pepper, (seeded and finely chopped)
1 small garlic clove, (minced)
small handful cilantro leaves, (chopped)
1 pinch of chili powder

Steps:

  • Whisk together the lemon juice, fish sauce, and sugar in a small bowl until sugar is dissolved. Add the sambal oelok, fresh chilis, garlic, cilantro and chili powder, mix together until combined.
  • In a serving bowl, combine the pineapple, cucumber, cherry tomatoes, mint, and salad greens. Toss with the dressing and serve the salad topped with the prawns and cashews. Serve and enjoy!

1 to 1 1/2 cups pineapple (fresh or canned chunks)
1 English cucumber (or 1 medium field cucumber)
3 spring onions (sliced)
1 red bell pepper (sliced thinly or diced)
1/2 cup dry whole roasted unsalted peanuts (or cashews)
1 cup fresh coriander
1/2 cup fresh basil leaves (chopped if leaves are large)
For the Salad Dressing:
2 cloves garlic (minced)
1 red chili (de-seeded and minced, or 1 tsp. chili sauce )
1 tablespoon soy sauce
1 tablespoon fish sauce
Juice of 1/2 lime
2 teaspoon brown sugar
1/4 teaspoon shrimp paste or 1/2 tablespoon fish sauce

Steps:

  • Gather the ingredients.
  • Combine all salad dressing ingredients in a cup and set aside. Place pineapple chunks in a mixing bowl.
  • To prepare cucumber: Remove skin with a vegetable peeler , then cut the cucumber in half lengthwise. Slice these sections again lengthwise (several times if the cucumber is thick), then slice the other way to create cubes or chunks. Add these to the mixing bowl.
  • Slice red pepper thinly to create matchstick-like pieces. Add these to the mixing bowl.
  • Add sliced spring/green onion, plus the whole roasted peanuts.
  • Add most of the basil and coriander, putting aside a little of each for the garnish.
  • Pour over the salad dressing over and toss well.
  • Scoop salad onto a serving plate and top with the extra basil and coriander, plus a good sprinkling of nuts.
  • If desired, serve with lime wedges on the side.
  • Enjoy!

2 scallions, cut on bias
1 zucchini, julienned
1 cup shredded red cabbage

1 cup Thai Citrus Dressing, recipe follows
1 cup fresh squeezed tangerine juice, or orange juice
1 tablespoon fresh squeezed lime juice
3 tablespoons rice wine vinegar

1/2 teaspoon toasted sesame seed oil

Wash the lettuce leaves, pat dry and place in the center of 6 salad plates. Toss the remaining ingredients with the dressing in a bowl. Add the chicken and sauteed veggies and mix well. Evenly divide the salad and center on the lettuce leaf. Garnish with a cilantro leaf. Serve chilled.
  • Mix all of the ingredients together and pour over desired salad, pasta or fruit. It's also great over freshly sliced cucumbers, zucchini, peaches, pears, or apples. Toss and chew!
  • Place everything in a mill or coffee grinder and blend 15 to 20 seconds. Remove to a sealable container.

  • DRESSING:.

  • SALAD:.
  • Combine the Chinese Cabbage, bean sprouts, sliced red onion and orange segments. (I like to drop everything in a large zip-lock bag).
  • Toss with half of the dressing. (Again, if you use a zip-lock bag you can easily pour in half of the dressing, seal and fumble to mix dressing in with salad; place in the refrigerator until ready to use.).
  • Add the sliced chicken to a frying pan and brown lightly with a small amount of olive oil.
  • Add the remainder of the citrus dressing; bring to a boil; reduce for 30 seconds to allow mixture to thicken slightly.
  • Place Chinese cabbage mixture on two dinner plates.
  • Arrange sliced chicken on top and pour over the remaining sauce.
  • Top with freshly chopped cilantro.
