SPICY GRILLED THAI PIZZA
After one bite of this peanut- and chicken-topped pizza, you may never go back to pepperoni! Plus, it's done on the grill, not in the oven, so it's perfect for a hot day.

- Heat gas or charcoal grill to medium heat. Cut 14 x 14-inch piece of heavy duty foil; spray foil with cooking spray. Place dough on foil; starting at center press dough to 12-inch round. Place dough on grill, foil side down. Cook, covered, 3 minutes or until bottom of crust is light golden brown. Remove from grill.
- Using wide spatula, flip crust over so uncooked side is down. Spread pizza crust with peanut sauce. Top with chicken, carrot, onions and peanuts. Sprinkle with cheese.
- Place pizza onto grill, foil side down. Cook, covered, an additional 3 to 4 minutes or until crust is golden brown and cheese begins to melt. Sprinkle with cilantro.

- Preheat oven to 425 degrees F.
- Form pizza crust on pizza pan or cookie sheet. Top with duck or plum sauce - spread it around like you would pizza sauce. Sprinkle the pizza with some crushed red pepper flakes then top with cheese and peppers. Bake until golden and bubbly, 15 to 17 minutes.
- Preheat a grill pan over medium-high heat. Combine vegetable oil, soy sauce and peanut butter with hot sauce and grill seasoning. Use the microwave to loosen up peanut butter if it is too cold to blend into sauce, 10 seconds ought to do it. Add chicken and coat evenly with mixture. Let stand 10 minutes then grill chicken cutlets 2 to 3 minutes on each side, until firm. Slice chicken into very thin strips.
- While chicken cooks, mix honey and vinegar and add the cucumber. Turn to coat evenly.
- Top the hot, cooked pizza with chicken, scallions, sprouts and cilantro. Drain cucumbers and scatter over the pizza. Garnish pizza with peanuts, cut into 8 wedges and serve.

- 1. Prepare grill for indirect-heat cooking. 2. Combine lime juice, soy sauce, onion, cilantro, peanut butter, oil, brown sugar, ginger, lime zest, red pepper flakes and garlic in a stockpot. Stir in shredded turkey. Heat over low heat, stirring occasionally. 3. Unroll pizza dough and pat into a rectangle, approximately 10 x 13 inches. Cut dough into 4 equal pieces. 4. Reduce grill heat to low. Brush grill rack with olive oil. Using the indirect grilling method, slide pizza crusts on grill and cook until golden, about 3 to 4 minutes until dough is puffy and lightly browned. 5. Turn pizza crusts over. Top browned side of pizza crusts with heated turkey mixture. Sprinkle with green onions, carrot sticks and cilantro. Sprinkle pizzas with cheese. 6. Cover with grill lid or tent with foil. - Combine the water and yeast in a mixing bowl and stir until the yeast dissolves. Stir in 1 tablespoon of olive oil and 1 cup of the flour. Stir in a second cup of flour and the salt. Sprinkle some of the remaining flour over a work surface and on your hands. Scrape the dough out of the bowl and onto the work surface. Gradually knead in additional flour until the dough no longer feels sticky.
- Lightly oil a large bowl. Shape the dough into a ball and rotate it in the bowl to coat it with the oil. Cover the bowl tightly with plastic wrap and set in a warm, draft-free place until doubled in bulk, about 1 hour. Punch the dough down and knead it for about 1 minute. Return the dough to the bowl and let rise until doubled again, about 45 minutes.
- Meanwhile, about 30 minutes into the second rise, start a charcoal fire. When the dough has doubled, punch it down and divide into 4 equal pieces. (At this point, the dough can be rolled into 4 balls and frozen. Defrost overnight in the refrigerator prior to use.) Lightly oil the backs of 2 large baking sheets. Roll out each piece of dough into a 9-inch circle (pizzas don't have to be perfectly round) and place them on the baking sheets. Cover with plastic wrap.
- When the coals turn white, place 1 or 2 of the pieces of pizza dough on the grill (depending on its size) and cook for 1 minute; they will start to puff. Turn the crusts over with a spatula and grill until browned and crisp, about 2 to 3 minutes longer. Watch constantly to keep crusts from burning. Repeat with the remaining dough. Immediately top the pizzas and serve.
