This Thai quinoa bowl is packed with fresh, crunchy veggies, plenty of spicy tofu (as an optional add-in), and generous drizzles of nutty ginger dressing. It's the perfect plant-powered meal, designed to both satisfy and nourish.

Number Of Ingredients 19

1 cup uncooked red quinoa
1 3/4 cups filtered water
1 small head broccoli, washed and cut into small florets
1 recipe spicy chili-garlic tofu ((optional for added protein))
1 cup frozen shelled edamame, thawed
1 small head romaine or green leaf lettuce, washed, trimmed, and chopped
1 medium carrot, peeled and then shaved into ribbons using a vegetable peeler
1 red bell pepper, cored, seeded, and julienned
1 small beet, peeled and cut into matchsticks
1 small jicama root, peeled and cubed (optional)
1/2 cup shredded red cabbage
Handful fresh cilantro, roughly chopped
Handful roasted cashews or sunflower seeds
1/4 cup creamy peanut butter, almond butter, tahini, or sunflower butter
2 1/2 tablespoons reduced-sodium tamari or soy sauce or to taste
1 tablespoon toasted sesame oil
1 1/2 tablespoons fresh lime juice
1 tablespoons pure maple syrup
1 teaspoon peeled and minced fresh ginger root

Steps:

  • Thoroughly rinse the quinoa in a fine-mesh sieve or colander. Then, bring the water to a boil in a medium saucepan. Add the quinoa, return to a boil, and cook over medium heat for 10 to 12 minutes, uncovered, or until the quinoa has absorbed most of the water, stirring occasionally. Remove from the heat, fluff with a fork, cover, and let stand for 5 minutes.
  • Steam the broccoli in a steamer or steamer basket for 4 to 8 minutes, or until firm-tender. Strain off any excess water. Set aside.
  • Prepare the tofu, if using.
  • Chop and prepare the remaining bowl ingredients.
  • Add the peanut butter, tamari, sesame oil, lime juice, maple syrup, and ginger to a medium bowl. Whisk together for 30-45 seconds. Please keep in mind that the dressing should be on the salty side-since we're not seasoning the quinoa or veggies, we need a little kick of sodium here to make all the flavors pop. Cover and refrigerate until ready to use.
  • Divide the quinoa between bowls. Top with the romaine, broccoli, tofu (if using), carrot, pepper, beet, jicama, cabbage, cilantro, and cashews. Drizzle with the dressing and serve immediately.

1 cup uncooked quinoa (rinsed)
2 chicken breasts (cooked and shredded)
2/3 cup chopped carrots
2/3 cup shelled edamame
2/3 cup chopped green onions
1/2 cup chopped peanuts
1/2 cup freshly chopped cilantro
4 tablespoons sweet chili sauce
2 tablespoon rice vinegar
2 tablespoon canned coconut milk
1 tablespoon brown sugar
2 teaspoon creamy peanut butter (it mixes in easier if it's melted)
2 garlic cloves
1 lime (juiced)
1/4 teaspoon ground ginger (optional)

Steps:

  • Make quinoa (see post for a tutorial for perfect quinoa if needed). Also, we like to use low-sodium chicken or vegetable broth for fuller flavor in this recipe.
  • While quinoa is cooking, combine all of the sauce ingredients together in a bowl and whisk well to combine. Set aside.
  • Once quinoa is finished cooking, stir in the sauce and toss well to coat. Add in chicken, carrots, edamame, and green onions, stirring to combine. Season with salt and pepper to your liking. Toss in half of the peanuts and cilantro, then serve in a large bowl, topped with remaining peanuts and cilantro or 4 smaller bowls.

1 cup uncooked quinoa
1 15-oz. can full-fat coconut milk
1/2 cup water
1 tablespoon maple syrup
2 large sweet potatoes, cut into bite-sized cubes
2 tablespoons olive oil
1 tablespoon minced garlic
1/8 teaspoon salt
1/8 teaspoon ground pepper
1 teaspoon black sesame seeds
1 cup purple cabbage, sliced
1 cup shelled edamame
1 large red pepper, sliced
1 large carrot, cut into thin sticks
1 tablespoon olive oil
1 tablespoon apple cider vinegar
1 tablespoon fresh lime juice
1 teaspoon soy sauce
1 teaspoon freshly grated ginger
1/8 teaspoon salt
2.5 tablespoons all-natural peanut butter
2.5 tablespoons water
1 teaspoon soy sauce
1 teaspoon maple syrup
1/4 cup fresh cilantro, chopped
1/4 cup chopped peanuts
squeeze of lime juice
Black sesame seeds, to toaste

Steps:

  • Prepare the coconut quinoa by following these directions!
  • Preheat oven to 400ºF. Then, place diced sweet potatoes on a large baking sheet and drizzle with olive oil. Toss to fully coat.
  • Then, season with minced garlic, salt, pepper, and black sesame seeds. Toss to combine.
  • Roast sweet potatoes at 400ºF for 25-30 minutes.
  • Place purple cabbage, edamame, carrot, and red pepper in a bowl. Set aside.
  • Make dressing by whisking together olive oil, apple cider vinegar, lime juice, soy sauce, grated ginger, and salt.
  • Then, toss veggies in dressing. Set aside.
  • To make peanut sauce, place all ingredients into a medium bowl or jar and mix together to combine.
  • Evenly distribute the coconut quinoa, sweet potatoes, and coleslaw into four bowls or meal prep containers.
  • Drizzle with peanut sauce if eating immediately and top with cilantro, chopped peanuts, a lime wedge, and more black sesame seeds.

4 cups low-sodium chicken broth
2 cups quinoa, rinsed and drained
1 tablespoon coconut oil, divided
1 large boneless, skinless chicken breast, cut into thin strips
¾ cup shredded cabbage
½ cup edamame
¼ cup diced broccoli stems
2 carrots, cut into matchsticks
2 green onions, chopped
3 eggs
1 teaspoon sesame oil
¼ cup natural peanut butter
¼ cup reduced-sodium soy sauce
3 tablespoons rice vinegar
2 tablespoons chili garlic sauce
2 tablespoons chopped fresh ginger
3 cloves garlic, minced
1 teaspoon sesame oil
½ cup salted peanuts, chopped
3 tablespoons chopped fresh cilantro

Steps:

  • Bring chicken broth and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender, 15 to 20 minutes. Set aside.
  • Heat 1 1/2 teaspoons coconut oil in a wok or large skillet over medium-high heat. Add chicken; stir until cooked through; about 5 minutes. Remove chicken from wok. Heat remaining 1 1/2 teaspoons coconut oil. Add cabbage, edamame, broccoli, carrot, and green onions and saute until vegetables soften slightly, 2 to 3 minutes.
  • Whisk eggs with sesame oil in a small bowl. Push vegetables to the sides of the wok to make a well in the center; pour eggs in and stir to scramble, about 3 minutes.
  • Combine peanut butter, soy sauce, rice vinegar, chili garlic sauce, ginger, garlic, and sesame oil together in a small bowl. Pour Thai peanut sauce over vegetable and egg mixture in the wok.
  • Return chicken to the wok and add quinoa; mix well to combine. Stir in chopped peanuts and cilantro and serve.

1 tablespoon plus 2 teaspoons chili-garlic sauce, plus more for serving
3/4 cup quinoa
Kosher salt and freshly ground pepper
1 tablespoon extra-virgin olive oil
1/3 cup crunchy peanut butter
2 tablespoons low-sodium soy sauce
1 teaspoon grated lime zest, plus 2 tablespoons fresh lime juice
1 cup frozen shelled edamame, thawed
1 large carrot, shaved into ribbons with a vegetable peeler
2 cups bean sprouts
1 cup fresh cilantro

Steps:

  • Preheat the oven to 450 degrees F. Cut the pork tenderloin in half crosswise, then in half lengthwise. Rub with 1 tablespoon chili-garlic sauce, and set aside to marinate at least 10 minutes. Meanwhile, cook the quinoa as the label directs.
  • Season the pork generously with salt and pepper. Heat the olive oil in a large ovenproof skillet over medium-high heat. Add the pork and cook, turning, until browned all over, about 5 minutes. Transfer the skillet to the oven and roast until a thermometer inserted into the pork registers 140 degrees F to 145 degrees F, 4 to 6 minutes. Transfer to a cutting board to rest.
  • Meanwhile, whisk the remaining 2 teaspoons chili-garlic sauce, the peanut butter, soy sauce, lime zest and juice, ¼ teaspoon salt, a few grinds of pepper and 1/4 cup water in a medium bowl.
  • Divide the quinoa among bowls; top with the edamame, carrot ribbons and bean sprouts. Thinly slice the pork and add to the bowls. Drizzle with the peanut sauce and top with the cilantro.
