4 Manor Farm chicken breast fillets
2 Cloves garlic, crushed
1 Green chilli, deseeded and sliced
2cm piece of root ginger, grated
4 tbsp Chopped fresh coriander
Grated rind of 1 lime
3 tbsp Lime juice
2 tbsp Soy sauce
1 tbsp Castor sugar
175 ml Coconut milk
Long grain rice for serving

Steps:

  • Using a sharp knife cut 3 deep slashes into the each chicken breast. Place them in a single layer in a baking dish.
  • Put the garlic, chilli, ginger, coriander, lime juice, soy sauce, castor sugar and coconut milk and process to a smooth paste in processor.
  • Spread the puree over both sides of the chicken portions, coating them evenly. Cover dish with cling film and leave to marinade in refrigerator for 1 hour.
  • Lift the chicken from the marinade, drain off the excess and place in a grill. Cook under a preheated grill for 12 - 15 minutes, until thoroughly cooked, (Cook time will depend on the size of fillets).
  • Meanwhile, place the remaining marinade in a wok or pan and bring to boil. Reduce the heat and simmer for 3 - 5 minutes to heat thoroughly. Remove the wok or pan from heat.
  • Place the chicken breast portions on warmed individual serving plates and pour over sauce. Serve immediately with boiled rice.

4 chicken breasts
2 garlic cloves
1 green chili, deseeded
2 cm piece fresh ginger, peeled
4 tablespoons fresh coriander, chopped
1 lime, rind finely grated
3 tablespoons light soy sauce
1 tablespoon caster sugar
3/4 cup coconut cream

Steps:

  • Using a sharp knife, cut 3 deep slashes into the skinned side of each chicken breast. Place the breast in a single layer in a wide, non-metallic dish.
  • Put the garlic, chilli, ginger, coriander, lime rind and juice, soy sauce, caster sugar and coconut cream in a food processor and process until a smooth puree forms.
  • Spread the puree over both sides of the chicken breasts, coating them evenly. Cover the dish and leave to marinate in the refrigerator for about 1 hour.
  • Lift the chicken from the marinade, put into a baking dish. Bake in a preheated oven at 180 degrees for 30 minutes until thoroughly and evenly cooked.
  • Meanwhile, place the remaining marinade in a saucepan and bring to the boil. Lower the heat and simmer for several minutes to heat thoroughly. Pour sauce over the chicken breasts, accompanied with rice and vegetables.

The closest to my favorite satay served at my Thai restaurant. Prep is quick- best if left to marinade for a few hours or more. Skewer up for the grill or saute on the stove! I buy the chicken tenderloin strips which are already boned, skinned and a nice size piece without slicing to save time.

½ cup canned coconut milk
1 ½ teaspoons ground coriander
1 teaspoon yellow curry powder
1 teaspoon fish sauce
½ teaspoon chili oil
1 pound skinless, boneless chicken breast halves - cut into strips
1 tablespoon chopped fresh cilantro
1 tablespoon chopped unsalted peanuts
12 wooden skewers, soaked in water for 15 minutes
1 cup prepared Thai peanut sauce

Steps:

  • In a medium bowl, stir together the coconut milk, ground coriander, curry powder, fish sauce, and chili oil. Add the chicken breast strips, and stir to coat. Cover, and refrigerate for at least 30 minutes, and up to 2 hours.
  • Preheat an indoor or outdoor grill for high heat. Thread the chicken strips onto skewers. Discard marinade.
  • Grill chicken for 2 to 3 minutes per side, until no longer pink. Time will depend on how thick your strips are. Transfer to a serving plate, and garnish with cilantro and peanuts. Serve with peanut sauce for dipping.

4 boneless chicken breasts, with skin
3 tablespoons sesame oil
3 tablespoons fish sauce
1 teaspoon sugar
4 cloves garlic, peeled and finely chopped
2 fresh red chilies, seeded and finely chopped
2 tablespoons chopped cilantro
9 fluid ounces rice vinegar
6 ounces sugar
1 teaspoon salt

Steps:

  • Mix the marinade ingredients together, pour over chicken and leave it in the fridge to marinate for at least 30 minutes.
  • While chicken is in the fridge, prepare the sauce.
  • Heat vinegar, sugar in a saucepan over low heat, and stir until dissolved.
  • Bring to boil and simmer until the sauce thickens, and a syrup forms.
  • (this will only take a minute or two) Pour into a bowl.
  • Preheat grill.
  • Place chicken about 20cm/8 inches from the heat, and cook both sides until coloured.

This simple, fragrant coriander chicken curry with all the trimmings is a great dish for feeding the family. Pair with spiced broccoli and green beans

50g coriander (about 2 small packs)
50g unsalted peanuts
½ lemon , juiced
1 green chilli , deseeded and finely chopped
2 tsp garam masala
½ tsp soft brown sugar
2 tbsp vegetable oil
2 onions , sliced
thumb-sized piece ginger , finely grated
4 garlic cloves , crushed
1 green chilli , finely chopped
6 skinless and boneless chicken thigh fillets, cut into 3cm chunks
350g basmati rice
1 tbsp coconut oil
½ tsp chilli flakes
2cm piece ginger , finely grated
125g pack purple sprouting broccoli or long-stemmed broccoli
200g fine green beans
1 tsp oil
2cm piece ginger , sliced
¼ tsp chilli flakes

Steps:

  • Use a stick blender or mini food processor to whizz up all the chutney ingredients, then chill.
  • Heat the oil in a large, lidded frying pan over a medium-high heat. Add the onions and fry for 9-10 mins, then add the ginger, garlic and chilli. Cook for a few mins more, then add the chicken. Brown well, then add half the coriander chutney and reduce the heat. Cover and cook for 15-20 mins or until the chicken is cooked through.
  • Rinse the rice in a sieve, then tip into a large, lidded saucepan. Stir in all the ingredients for the rice. Pour over enough boiling water to cover the rice by 1cm, cover, bring to the boil and cook for 5 mins. Turn off the heat and leave to steam-cook with the lid on for 20 mins. Fluff up with a fork, then season.
  • Put the broccoli and green beans in a pan and add 100ml boiling water. Cover and cook over a medium-high heat for 4-5 mins. Drain and return to the pan with the oil, ginger, chilli flakes and some seasoning. Cook for another 2 mins, then serve with the chicken, remaining chutney and the rice.
