HAYSTACK (THE BEST 7-LAYER DIP EVER)
This is my Grandma Valma's recipe that I bring to any holiday/party/shower or gathering, and it is always gone well before anything else. I have friends and relatives call and request that I bring this because they have been craving it since the last party. This is incredibly easy, but the mix of ingredients make this such an awesome appetizer. It may not actually be 7 layers, but that's what Grandma called it so I never argued! I have found that ridged or wavy potato chips are the best to go with this dip. Enjoy!!!

Steps:
- Place refried beans into a bowl and mash until smooth. Scoop avocado out of the peels and mash with refried beans until thoroughly combined. Spread the bean mixture over a large platter in an even layer.
- Mix sour cream, mayonnaise, and taco seasoning in a bowl; spread in a layer over the bean mixture. Sprinkle tomatoes and green onions as a single layer, then top with a layer of bean sprouts. Sprinkle Cheddar cheese over the top.

- 1 c sour cream.
- 1 c guacamole.
- 1 c salsa.
- 1 c lettuce.
- 1 c Mexican cheese.
- 4oz sliced olives.
- 1 c tomatoes.

Steps:
- In a medium bowl, blend the taco seasoning mix and refried beans. Spread the mixture onto a large serving platter.
- Mix the sour cream and cream cheese in a medium bowl. Spread over the refried beans.
- Top the layers with salsa. Place a layer of tomato, green bell pepper, green onions and lettuce over the salsa, and top with Cheddar cheese. Garnish with black olives.

- For the bean layer, mix the refried beans and salsa together until creamy and smooth. Evenly spread in a 9X13-inch (or slightly smaller) dish.
- For the guacamole, mash the avocados, lime juice, cilantro and salt and pepper together until desired consistency (for this recipe, I like the guacamole mostly smooth with just a few small chunks). Spread the guacamole evenly over the refried beans.
- For the sour cream layer, stir together the sour cream and all the seasonings until smooth and evenly combined. Spread evenly over the guacamole, covering completely all the way to the edges so the guacamole doesn't turn brown.
- Sprinkle the cheese evenly over the sour cream followed by the tomatoes, olives, and green onions (or chives).
