Steps:
- 1. Using flan pot or 2 quart pot with tight fitting lid, place 1/2 cup sugar in pot and caramelize sugar.(do this by melting sugar over medium heat (stirring constanly} until melted and amber in color. Remove from the stove with hot pad and move caramel around on sides of pot (only half way up pot)
- 2. Mix eggs with other 1/2 cup sugar, milk and vanilla and mix well.(I do this with blender don't have to though). Place egg mixture in flan/pot or 2 quart pot cover with flan pot lid or if using 2quart pot place Aluminum foil tightly over pot and place lid on top.
- 3. place pot into another pot big enough to hold the flan pot or 2 quart pot and fill with water until about 1 1/2 inch of water covers sides of smaller pot.
- 4. Bake at 350 degrees for at least 1 hour. but to ensure that flan is done remove lid and stick kitchen knife in center of flan if it comes out clean it's done. Remove pot from water pot and cool ompletely.
- 5. When Flan has cooled remove lid/foil and place a dish or plate that is bigger than the top of the flan pot on top, make sure the plate has a small lip as caramel will run. Place one hand on bottom of pot and one hand on top of plate and turn upside down on platter. serve or place in refridgetor covered until serving.
BEST FLAN EVER
This is the best flan you will ever taste. The cream cheese takes away the "egginess" that most flan's have. The water bath ensures that the custard does not burn and that the caramel turns into a wonderful sauce.

Steps:
- Preheat oven to 350°F.
- Select 2 oven safe containers, one that can easily fit inside the other.
- The large one will be used for a water bath and the smaller one will actually house the flan.
- Fill the larger container a little less than half way with water and place in the cold oven to heat up while you prepare the caramel and the custard.
- In a large pan, using a wooden spoon caramelize the sugar until it turns a light golden brown.
- While still hot, transfer the melted sugar to the smaller container, swirling it around until the entire bottom is covered then set aside.
- In a blender add the remaining ingredients and blend until smooth.
- Open up the oven where you have placed the water bath and then place the small pan with the caramel inside the large water bath pan.
- Pour the custard into the pan being careful not to splash it.
- Bake for 30- 45 minutes until the top is golden brown and the center passes a toothpick test.
- Remove from oven and allow to cool on rack.
- You may invert this onto a large serving dish with lip or just server out of container you cooked it inches.

Steps:
- Pre-heat the oven at 400F.
- I use a pot that has a removable handle to go in the oven for this dessert.
- Start by making a caramel with the sugar and the water on a medium heat. Do not stir it (only to help dissolve the sugar and then stop. Once it is done (golden), off heat, spread it on the side of your pot by making circular movements.
- In a bowl, beat the eggs. Add the condensed and evaporated milk. Stir well.
- Add the vanilla, in whatever aspect you have it... powder, liquid, for me a bean that I opened the pod and removed the seeds from it by scrapping with a knife. Stir again.
- Pour in your pan (or whatever dish you use and have the caramel is at the bottom.
- Put in the oven for 50 minutes at 400°. To check if it is ready, insert a knife in, if it comes out clean. You've done it!

Steps:
- Preheat the oven to 300°F (150°C).
- Start by preparing the ramekins (you could also use one larger mold if you prefer): put six of them (3/4 cup volume) on a 13-inch baking dish. Fill the dish with hot water (use a kettle or the hottest water from the tap). The warmth is important here, since it will keep the ramekin warm when the sugar syrup goes in and stop it from hardening.
- Cook 1 cup of the sugar over medium-low heat for about 10 minutes until it liquefies and turns a light golden brown color. You'll need to keep a watchful eye on the sugar here, to stop it from burning.
- Take it off the heat and quickly pour it into the ramekins. If it starts to harden midway through, put it back on the heat and stir until it's smooth again. Set aside while you make the rest of the flan.
- In a large mixing bowl, gently mix together the eggs with the remaining 1/2 cup of sugar until creamy.
- Add the milk and vanilla and stir until well-combined.
- Divide the flan mixture evenly among the six ramekins, pouring right on top of the caramel. Cover each ramekin with aluminum foil and tightly seal. Bake in the oven for 40 minutes to one hour, or until it wobbles and jiggles when you lightly shake the ramekin. If making small ramekins you will likely only need 40 minutes. If making a large mold you may need the full hour. Quickly check and jiggle when unsure.
- Take the ramekins out of the water-filled baking dish and set aside to cool to room temperature. Then place in the fridge covered with foil and chill for at least 6 hours (preferably overnight).
- To serve, take a butter knife and run it around the inside of the ramekin. Quickly (and gently!) flip the ramekin over the plate. The caramel should run out to coat it as a sauce. If any of the caramel has hardened and stuck to the ramekin, just leave it!

- Adjust oven rack to middle position and heat the oven to 300 degrees. Line the bottom of a large roasting pan with a clean dishtowel and set aside.
- Evenly pour the sugar into the bottom of a 9-inch cake pan and sprinkle the water on top. Place the cake pan directly on the stove over medium heat. Avoid stirring the mixture and let the sugar melt and bubble. If it is cooking unevenly, use tongs to grip the side of the pan and gently shake it to distribute. Once the sugar melts, continue to use the tongs to gently swirl the pan over medium heat until the sugar turns a roasted amber similar to the color of peanut butter. Remove the pan from the heat and swirl to coat the entire bottom and sides of the pan with the caramel. Set aside to let cool and harden.
- Using a blender or immersion blender, blend together the eggs, vanilla extract, sweetened condensed milk, and evaporated milk until smooth.
