1 (3 ounce) box Jell-O instant pistachio pudding mix (4-serving)
2 cups milk
2 kiwi fruits, peeled and thinly sliced
Cool Whip
3 drops green food coloring
green coarse sugar, for garnish (the kind used on xmas cookies)

Steps:

Prepare pudding according to package directions using the milk; chill until set.
When pudding is chilled, layer pudding, kiwifruit and green-tinted Cool Whip in clear dessert glasses (wine glasses will work well)-- do pudding-fruit-coolwhip then repeat, ending with a layer of Cool Whip.
Sprinkle a tiny amount of green coarse sugar on parfaits and refrigerate until serving.

1 (19.8 ounce) package brownie mix (such as Duncan Hines®)
2 egg, or more to taste
¾ cup vegetable oil
¼ cup water
3 cups cold milk
2 (5.1 ounce) packages instant vanilla pudding mix
6 drops green food coloring, or more as desired, divided
6 ounces creme de menthe candies (such as Andes®), broken into pieces
1 (8 ounce) container whipped topping
½ cup white sugar

Steps:

Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch square baking dish
Combine brownie mix, eggs, oil, and water in a large bowl; stir until well blended. Pour batter into the prepared baking dish.
Bake in the preheated oven until top is dry and edges have started to pull away from the sides of the pan, 28 to 31 minutes. Remove from oven. Let cool completely, about 1 hour.
Meanwhile, pour milk into a large bowl and whisk pudding mix into the milk. Stir creme de menthe candies and about 3 drops of green food coloring into the bowl until evenly colored to your desired shade. Allow mixture to set for 5 minutes.
Set out a trifle bowl. Crumble 1/2 the cooled brownies into the bowl and top with 1/2 the green vanilla pudding mixture. Spread 1/2 the whipped topping on top. Repeat layers.
Pour sugar in a small bowl and add about 3 drops of green food coloring; stir until evenly colored to your desired shade Place a large shamrock template on top of the trifle in the bowl. Sprinkle the shamrock shape with green sugar. Carefully remove template.
Cover trifle and chill in the refrigerator for about 3 hours before serving.

Cream together sugar and butter. Add egg, sour cream and pudding mix. In a small bowl, combine flour, salt & baking soda. Incorporate flour mixture into the pudding mixture and mix until well combined. Add mint extract and food coloring until desired color is achieved.
Add in chocolate chips. *I used 3/4 cup chocolate chunks, 3/4 cup regular chocolate chips and 1/2 cup Andes baking bits. Any combination is wonderful, but note that while the Andes mint baking pieces add an incredible flavor, they kind of disappear in the cookies. So add them in addition to the 1 1/2 cups chocolate chips, if you opt to put them in!

With a hand mixer, mix on low speed until combined and smooth. There will be really small pistachio bits from the pudding mix, that is ok.
Optional but makes it a true green again - Add a few drops, one at a time, of food coloring if you want the green color to be more pronounced. In mine pictured above, I added 2 drops of food coloring. Mix with hand-mixer to combine.
Fold in the cool whip until evenly combined. If still a bit lumpy, use the hand-mixer for only a few seconds.
