2 medium onions
1 clove garlic
Olive oil
2 level teaspoons chili powder
1 heaped teaspoon ground cumin (or crushed cumin seeds)
Sea salt and freshly ground black pepper
1 pound (455 grams) chuck, minced or ground
7 ounces (200 grams) sun-dried tomatoes in olive oil
1 fresh red chile, deseeded and finely chopped
2 (14 ounce) cans chopped tomatoes (400 grams)
1/2 stick cinnamon
5 ounces water
2 cans red kidney beans, drained (400 grams)

Steps:

  • If you are going to use the oven method, preheat the oven to 300 degrees F (150 degrees C).
  • Chop up the onions and garlic in the food processor and fry in some olive oil until softened. Add the chili powder and cumin and a little seasoning.
  • Chop up the meat in the processor and add to the pan, cooking it until slightly browned.
  • Place the sun-dried tomatoes and chile in the processor with the oil and blend to form a paste. Add these to the beef with the tomatoes, cinnamon stick, and a wineglass of water. Season a little more, if need be.
  • Bring to the boil, cover with greaseproof paper and a lid, then either turn the heat down to simmer and cook for 1 1/2 hours or transfer the pan to the oven for about 1 1/2 hours.
  • Add the red kidney beans 30 minutes before the end of cooking time.

In the Texas spirit, it does, however, call for three pounds of meat - boneless chuck, buffalo or venison. There is also some bacon for good measure. This is a hearty meal, great for a cold day when the best thing to do is to stay in and watch that other Texas religion, football.

3 medium dried ancho chiles, stems and seeds removed, spread flat
1/2 teaspoon cumin seeds
1/2 teaspoon dried Mexican oregano
1/4 teaspoon garlic powder
2 tablespoons cumin seeds
8 ounces bacon
3 pounds boneless beef chuck, buffalo or venison, cut into 1/4-inch cubes
1 pound (2 medium) white onions, chopped
2 teaspoons paprika
1 teaspoon dried Mexican oregano
1 teaspoon ground black pepper
1/2 teaspoon dried thyme leaves
1/2 teaspoon salt
4 large garlic cloves, minced
1 3/4 cups beef broth
1 28-ounce can puréed tomatoes
2 ancho chiles, stems and seeds removed

Steps:

  • For the chile powder: Place the chiles flat in a cast-iron skillet over medium heat and cook, turning as needed, until lightly toasted. Transfer to a plate to cool. Put the cumin seeds in the hot pan and stir until fragrant. Transfer to a bowl to cool.
  • Using scissors, cut the chiles into small strips. Using a spice grinder or a clean coffee grinder, grind in batches into a powder. Pour into a bowl. Grind the cumin seeds into a powder and add to the bowl. Add the oregano and garlic powder. If the mixture is still coarse, grind again until fine. Reserve 3 1/2 tablespoons for the chili; save the rest in a jar.
  • For the chili: In a Dutch oven over medium heat, stir the cumin seeds until fragrant, about 1 minute. Pour onto a work surface and using a small, heavy skillet, crush them coarsely. Set aside.
  • Return the pot to medium-high heat, add the bacon and fry until crisp, 5 to 8 minutes. Transfer to paper towels to drain.
  • Increase the heat to high. Working in small batches, add the beef cubes to the pot and cook, stirring, until well browned on all sides. Using a slotted spoon, transfer the beef to a bowl.
  • Reduce the heat to medium, add the onions to the remaining bacon drippings and sauté until lightly browned, about 8 minutes.
  • Add the crushed cumin, reserved chili powder, paprika, oregano, black pepper, thyme, salt and garlic and cook, stirring often, for 1 minute. Crumble in the bacon and add the broth, tomatoes, 1 cup water, anchos and the browned beef. Increase the heat to high and bring to a boil, then decrease the heat to low, cover partly and simmer for 2 hours, until the meat is very tender. Add water as needed to maintain a good chili consistency.
  • Remove the anchos, purée them in a food processor or blender and return the purée to the pot. Stir well, simmer for a few minutes to blend the flavors and serve.

4 tablespoons vegetable oil
1 green bell pepper, chopped
1 yellow onion, chopped
2 ½ pounds lean ground beef
2 beef bouillon cubes
⅔ cup red wine
2 (16 ounce) cans whole peeled tomatoes, chopped, juice reserved
garlic cloves, crushed
1 (12 ounce) can tomato paste
1 ½ teaspoons paprika
2 ½ teaspoons chili powder
1 teaspoon cayenne pepper
2 ½ teaspoons dried basil
½ teaspoon dried oregano
2 tablespoons dried parsley
½ teaspoon black pepper
1 teaspoon salt

Steps:

  • Heat oil in a large saucepan over medium heat. Cook green pepper, and onion, until softened. Add the ground beef and cook until browned. Crumble over bouillon cubes, and stir in wine; continue to cook for a few minutes. Stir in chopped tomatoes, garlic, and tomato paste. Season with paprika, chili powder, cayenne pepper, basil, oregano, and parsley. Stir in salt and pepper.
  • Bring to a boil over high heat. Reduce heat to medium low. Cover, and simmer for 90 minutes, stirring occasionally.
  • Stir in kidney beans, and hot pepper sauce. You can add the reserved tomato juice if more liquid is needed. Continue to simmer for an additional 30 minutes.
  • In a small bowl, whisk together the flour, corn meal, and water until smooth. Stir into chili, and cook for a further 10 minutes, or until chili has thickened up.

  • Saute onions in olive oil until translucent. add minced garlic and continue to saute until fragrant, about 30 seconds.

  • Add spices and tomatoes with juice -- DO NOT DRAIN. Heat to boiling and simmer for one hour.
  • Add beans (also DO NOT DRAIN) and heat through, approximately 20 minutes.
  • Top with cheese and serve with hot biscuits or corn bread.
  • If in a hurry, you can cook onions and garlic with the beef, and also add the kidney beans at the beginning and simmer the whole thing for as little as half an hour. It turns out fine, it's just that the flavor is not as developed.

This makes a large recipe, it can be cooked in a large crock pot after you brown the meat, onions and garlic.

4 teaspoons vegetable oil
2 lbs extra lean ground beef

3 (15 1/2 ounce) cans kidney beans, drained and rinsed
2 cups green peppers, diced
2 cups carrots, sliced
2 cups celery, diced
2 cups frozen corn, thawed
3 tablespoons brown sugar
1 tablespoon cocoa powder (unsweetened)
3 tablespoons mild chili powder
2 tablespoons ground cumin
2 tablespoons oregano
1 teaspoon coriander
1 teaspoon salt

Steps:

  • In a large, deep, Dutch oven, saute the onion and garlic in the oil until softened.
  • Add the meat, and brown, stirring to break up pieces. Drain any excess fat.
  • Add the tomatoes and their liquid and all of the seasonings. Heat until bubbly, reduce the heat, cover and simmer about 30 minutes.
  • Add the beans and vegetables, simmer covered about 20 minutes longer.
  • *if it's not soupy enough, add 1 or more small cans of tomato juice.
  • *Can put it in a large crock pot after the meat is browned. Cook as long as you need it to, I've cooked it on low for 8 hours, the carrots were a little soft, but fine. You could probably cook it on High for 2 hours or so and it would be fine as well.
  • *I have used venison in this recipe with good results.

1 tablespoon vegetable oil
2 red onions, chopped

1 tablespoon smoked paprika

2 (15 ounce) cans red kidney beans, drained

Steps:

  • Heat the oil over medium-high heat in a large dutch oven.
  • Add meat and season with salt and pepper. Brown the meat, breaking up large clumps.
  • After about 5 minutes, add onions and bell peppers.
  • Reduce heat to medium and continue cooking, stirring occassionally, until onion begin to turn golden brown, 15-20 minutes.
  • Add the garlic, cumin, chili powder, paprika, bay leaves, tomato paste and Sriracha. Cook about a minute while stirring.
  • Add beer, stirring and scraping sides for stubborn bits.

i came home from the supermarket, thinking i had bought everything i needed for my usual chili recipe, but after 10 seconds i discovered that i had completely forgotten to buy the compulsory 400g can of tomatoes and also found out that i had run out of tomato paste! i still thought i'd give it a go. i still had 4 (...) little cherry tomatoes left in my fridge, and decided i'd try to fix something with my bottle of ketchup. to save the taste of the chili, i chose to add extra spices. and all of these plan b remedies actually led to a great chili con carne! i'll never make it again like i always have before.
