Steps:
- To prepare crust: Preheat the oven to 350°F Lightly coat a 9" pie pan with cooking spray.
- In a medium bowl, thoroughly mix the graham cracker crumbs and melted butter.
- Press into prepared pan.
- Bake for 15 minutes, until lightly browned.
- (Since ovens vary in temperature, check after 12 minutes. Do not allow it to over-brown.) Cool before filling.
- To prepare filling: In a food processor or blender, combine everything except the pineapple.
- Process until smooth.
- Fold in crushed pineapple.
- Bake for 45 minutes, until set.
- Cool in refrigerator.

- Mix softened cream cheese, sugar and pineapple extract.
- Add and mix 15 ounces of drained crushed pineapple.
- Fold in cool whip. Add food coloring and fold to blend well.
- Pour in the prepared graham cracker pie crust. Sprinkle reserved pineapple on top.
- Cover and refrigerate for at least 3 hours. Serve cold.

Steps:
- For the pineapple layer: mix the dry pudding, pineapple and juice; boil gently until thickened. Set aside.
- For the crust: beat butter until creamy; beat in sugar, then the egg and milk. Sift in the flour mixed with baking powder and beat well. Spread the dough onto bottom and sides of an 11 x 15 inch pan.
- For the cream cheese layer: Mix together the softened cream cheese,sugar, eggs (beat them in 2 at a time), lemon juice, flour, milk and vanilla.
- Spread the cooled pineapple mixture over the crust, then the cheese filling over that. Bake at 350 degrees for 1 hour. Cut into squares.

I have been making this recipe for years. Its from an old New Zealand cookbook and was put forward by a P.M Blake in Mt Maunganui. Every christmas time since I started making it this cheesecake has been requested and relatives look forward to it. And it has never failed!

Steps:
- Crush buscuits finely and combine with melted butter. Mix well and press over base into a 8" (20cm) spring release sponge tin. Refrigerate until set firm.
- Soften gelatine in cold water then heat to dissolve it. Leave it to cool.
- Beat cream cheese until soft and smooth. Add condensed milk and beat well. Add drained pineapple, lemon juice, lemon rind and cooled gelatine mixture.
- Stir thoroughly then spoon into prepared crumb base. Refrigerate until firm. Best overnight.

I came up with this recipe because a brother from church wanted me to try my no bake cheesecake with pineapple. It was a hit and has been requested at every get together ever since. This recipe makes 2 cheesecakes. (trust me in a group, you'll need both!)

Steps:
- In a large mixing bowl mix together the whipped cream, cream cheese and sugar.
- Drain as much of the pineapple juice as you can from the can of crushed pineapple. This step is very important because too much juice left in the pineapple will prevent the cheesecake from setting properly.
- Once the pineapple has been drained, add the pineapple to the rest of the ingredients and mix well.
- Pour the mixture into the prepared graham cracker crusts.
- Refrigerate for at least an hour.
- Enjoy!
