The Green Stuff Lime Jello Salad Recipes
LIME GELATIN SALAD I
This is a great recipe my mom got from my aunt. She has made it every year for Thanksgiving. It is a family tradition for us. It can be made a day or two ahead of time, if you like. It looks just beautiful in a cut crystal bowl. Thanksgiving is not the same without it for us! We just 'gobble' it up! Chopped walnuts can be substituted for chopped pecans.

Steps:
- In a large bowl, pour 1 cup boiling water over the gelatin mix. Stir until dissolved, then stir in 1/2 cup pineapple juice. Refrigerate until thickened but not set, about 1 hour.
- Meanwhile, place crushed pineapple and remaining juice in a small saucepan. Bring to a boil, reduce heat, and simmer for about 5 minutes. Remove from heat, and cool to room temperature.
- In a large bowl, blend softened cream cheese and lime gelatin until smooth. Mix in the cooled pineapple. In a medium bowl, whip cream until soft peaks form. Fold into gelatin mixture. Fold in chopped nuts. Pour into a pretty crystal bowl, and refrigerate for at least 4 hours, or until set.

GREEN STUFF (LIME JELLO, CREAM CHEESE, PINEAPPLE, COOL WHIP)
This recipe has been in our family forever. It can be made in many different variations. Cottage cheese instead of or in addition to cream cheese. Crushed pears or mandarin oranges in place of pineapple. The amount of ingredients seem to not matter much because I often forget how much jello or cream cheese, etc to use but it always tastes great. The only word of caution is NEVER use fresh pineapple in jello because it will not gel.

Steps:
- Dissolve jello in hot water. If in a hurry add ice cubes to set a litte faster.
- Mix cream cheese and pineapple in large bowl.
- Add jello.
- Beat until blended.
- Add Cool Whip or any whipped topping and beat for 2 minutes or well blended.
- Pour into large glass pan or bowl and chill at least four hours. I've been known to use the freezer when in a hurry and it works out fine.
- Enjoy!

- Fold in the 1 cup of mini marshmallows. (I use about 3/4 cup).
- Drain fruit and fold into mixture last.

Steps:
- Pour 1/2 cup boiling water into a mixing bowl.
- Add jello and stir until dissolved.
- Add cream cheese, and blend with an electric mixer till light and fluffy.
- Stir in chopped nuts.
- Pour mixture into serving dish.
- Last step: pour lemon-lime soda over mixture.
- Chill in refrigerator until firm.
LIME JELLO SALAD - AKA 'THE GREEN STUFF'
My step-mom first served this salad and it has become a family tradition since. I always make it for holiday dinners and one year I decided to try new things as I was a little tired and bored with the regulars. I didn't make this one year, and my grown son told me that I should not mess with tradition - this salad WAS the holidays. My kids all call this 'the green stuff'. ZWT West (Hawaiian pineapple).

Steps:
- Melt the marshmallows in milk in medium saucepan over medium heat. Stir frequently.
- Pour the milk and marshmallow mixture over lime jello in a large bowl. Stir until dissolved. Stir in cream cheese with beater. Add undrained pineapple. Mix well.
- Cool in the refrigerator for several hours or overnight.
- Blend mayonnaise and cool whip into the jello mixture.
MODIFIED GREEN STUFF - JELLO SALAD
This is based on Recipe #340422 340422. However, I didn't have a banana or Cool Whip, so it came out differently. I made it for Thanksgiving 2013 while DH is on a Zero Fat diet. I should have left out the coconut. Cooking time is minimum chilling time.

- Pour boiling water over gelatin & marshmallows. Stir until marshmellows are mostly melted. Add crushed pineapple.
- Chill until partially congealed. Fold in cottage cheese. Feel free to mix it a couple of times to get the consistency you want. Mine had a tendency for the solution to separate, so I beat it pretty well at the end with a wooden spoon.
