Okinawan Shoyu Pork is the local Hawaii version of Okinawan dish called Rafute. It's basically braised pork belly! This dish is saucy, sweet (thanks to mirin and brown sugar) and savory (hello, soy sauce), and really good with a big bowl of rice.

1 pound pork belly, cut into 1-inch cubes
3 garlic cloves, minced
1-inch knob of ginger, minced
1/4 cup water
1/4 cup soy sauce
1/4 cup sake
3 tablespoons brown sugar
1 tablespoon mirin

Steps:

  • In a pot, over medium-high heat, brown the pork belly on all sides. This should take about 5-minutes.
  • Add the garlic and ginger to the pot. Mix and saute for another minute till the garlic and ginger is fragrant. Then add the water, soy sauce, sake, brown sugar, and mirin.
  • Bring everything to a boil. Then reduce the heat to low. Cover the pot and simmer for 1.5 hours (give it a stir every 20 minutes). The pork is ready when it is tender and easily pierced with a fork.
  • Remove the lid, and turn the heat to medium-high. Let the sauce bubble away and reduce until it becomes thick and glaze-y. Pour it out into a bowl, and serve hot, with rice. Enjoy ^_^

2 pounds pork belly, skin-on
2 large slices of ginger
3 scallions, roughly-chopped
¼ cup yellow miso
¼ cup red miso (or if you prefer, you can just use all red miso or all yellow miso)
4 tbsp. Okinawan black sugar
1 Tbsp. Japanese soy sauce
½ cup awamori (Okinawan distilled whiskey) - this is strongly preferred, but if unavailable, use sake
¼ cup top-quality instant dashi (the dashi is a TFD addition and is very optional)
1 carrot, peeled and cut into fairly-thick pieces
1 clove garlic, crushed
1 piece sliced ginger, ¼" thick
freshly-grated wasabi (strongly preferred), or use powdered real wasabi mixed with water and allowed to sit for 10 minutes (Wasabi is a TFD addition - it's very optional) - to taste
hot Chinese-style mustard to taste
2 baby bok choy - stir-fried until bright green and reserved for garnish
flowering garlic chives, flower buds cut off and used as a garnish (TFD addition, very optional)

Steps:

  • Shave or burn skin hair from pork belly, if needed. Boil and simmer pork about 1 hour with the scallions and ginger - the pork should be completely covered by water at the start.
  • 6 minutes to the end, add 4 cold eggs from the fridge.
  • Skim off oil, remove eggs and put them in an ice bath until cool, then peel and reserve. Also reserve about 1 cup of pork stock and discard solids. Combine reserved pork stock with optional dashi.
  • Slice pork into ½-inch thick pieces. Mix miso, sugar, awamori, soy sauce and ½ cup pork stock / dashi together. Lay pork belly and carrot pieces in a skillet and cover with miso mixture.
  • Simmer on low heat for 1 ½ to 2 hours, adding pork stock as needed to prevent miso from burning. Turn pieces occasionally.
  • In the last 5 minutes, add optional wasabi. Stir once again before serving and add some dots of Chinese mustard to the meat. Garnish with eggs that have been cut in half at the equator, plus baby bok choy and flowering chive heads if you're so inclined.

I think the Okinawans got the slow food concept right on - this was one of my favorite dishes growing up...shoyu pork...eaten over rice, or on top of soba. The soy sauce-marinated, slow-cooked pork with just the right amount of sweet taste (imagine Okinawan brown sugar) is pretty close to perfect...

1 ½ pounds whole pork belly
½ cup soy sauce
½ cup packed brown sugar
½ cup water
½ cup mirin (Japanese sweet wine)
2 teaspoons ground ginger
1 clove garlic, or to taste

Steps:

  • Place pork belly into a large pot, and cover with water about 1-inch above the pork. Bring to a boil over medium-high heat, and simmer for 2 minutes. Discard water and fill pot with fresh water about 1-inch above the pork. Bring to a boil over medium-high heat, then reduce heat to a simmer. Cook until the pork begins to soften, about 1 hour.
  • Remove the pork from the water, and place on a cutting board. Allow pork to cool for a few minutes, then slice off the thick skin and discard. Cut the remaining pork meat into 1-inch wide slices. Set aside.
  • Combine the soy sauce, brown sugar, 1/2 cup water, mirin, ginger, and garlic in a large saucepan, and bring to a boil over high heat. Add the sliced pork belly, then bring to a boil again. Reduce heat to low, and place a sheet of aluminum foil directly over the meat and sauce. Simmer uncovered until the pork is tender, 30 to 45 minutes, turning the pork several times to cook evenly.
