DIRTY BIRD

Steps:

• In a pitcher, combine the clam-tomato juice, lime juice, orange juice, hot sauce, Worcestershire, black pepper, ginger, salt, bitters and serrano. Stir well.
• To serve, rim a pint glass with salt. Fill the glass with ice, then fill halfway with the Dirty Bird mixture. Top off with Mexican beer, about 5 ounces. Repeat.

THIRSTY BIRD

Steps:

• Mix all ingredients for spice rub in a small bowl and set aside.
• Thoroughly clean and rinse the chicken. Pat dry. Coat inside and outside of chicken with several tablespoons of the rub mix. Refrigerate at least 1 hour or overnight.
• Preheat grill for indirect cooking over medium heat using mesquite chips.
• Pour out half of coke from can. Add lime juice to can and place on drop pan in center of grill. Carefully position chicken upright over the can, adjusting legs to balance. Sprinkle with more spice rub. Cook on covered grill 1 hour or until juices run clear when poked with a fork. Keep the lid closed as much as possible. Using tongs and oven mitts, carefully remove chicken and can from grill. Let chicken rest upright for 10 minutes before lifting off from can. Discard coke. Carve chicken or cut into serving pieces.
• Mesquite chips: soak a handful of mesquite chips in water for about an hour. Remove the chips and mound on a sheet of heavy duty aluminum foil. Fold foil over and crimp edges. Poke 3-4 holes in the top only. When the grill is heated up, place packet directly on the coals.

DIRTY BIRD

Steps:

• In a blender or food processor, add the chipotle peppers, 3 garlic cloves, chicken stock, oregano, cumin, salt, and Mexican chocolate. Blend well.
• In a frying pan add butter, remaining chopped garlic, and chopped onions, saute for 5 minutes. Add chicken breasts. Cook until almost done. Add sauce to pan. Reduce the heat and cook until sauce is thick.

WINTER BIRD PUDDING (BIRD FOOD)

Steps:

• In a large kettle, bring water and margarine to boiling.
• Slowly add cereals and cook, stirring constantly until the mixture is fully cooked and thick.
• Remove from heat.
• Add peanut butter and desired amount of chopped fruit, nuts, and seeds.
• Cool and place in plastic containers.
• Serving amounts depend on how large you make your bird feeders so the"yield" is a guess.
• Note: pack the mixture into chopped off chunks of panty hose or put in pine cones.
• Hang the mixture in protected crooks of trees.
• You can also spread the mixture onto a surface area (don't use aluminum pans; when it's freezing, little bird feet can stick to the metal and suffer injury), set out on ground or picnic bench.
• By placing the food at different elevations, you will attract many species of birds.
• The food can be preserved in a freezer (if there is any left over).
• Just be sure to use it within three to four months.
