WAFFLE-IRON COOKIES
The recipe for these cookies is the easiest to find in my book because the page is a beautiful mess covered with fingerprints, flour smudges and memories of more than 30 Christmases! I made these with my daughters, and now I make them with my granddaughters. -Judy Taylor, Quarryville, Pennsylvania

- In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. In another bowl, whisk flour, baking powder and salt; gradually beat into creamed mixture (mixture will be thick)., Drop dough in batches by tablespoonfuls 3-4 in. apart onto a greased preheated waffle iron. Bake until dark brown, 2-3 minutes., Remove to wire racks to cool completely. Sprinkle with confectioners' sugar.

WAFFLE COOKIES I
Steps:
- Preheat the waffle iron on medium setting.
- In a large mixing bowl, cream the butter and sugar. Stir in the vanilla and salt. Add eggs one at a time, mixing after each addition. Then stir in the flour.
- Drop the batter by heaping soupspoonful onto the waffle grid. Close the cover and bake for about 3 minutes and 20 seconds. Every waffle iron is a little different so you may want to test it on the first couple of cookies. Place finished cookies onto a wire rack to cool.

GRANDMA'S WAFFLE COOKIES (PIZZELLES)
I could always count on finding these authentic Italian cookies in Grandma's freezer, and her house always smelled yummy! They're great dipped in milk. Grandpa was a blacksmith and actually made their waffle iron, which I still have, although I use my modern electric pizzelle maker when making these.

- Combine eggs, sugar, vegetable oil, butter, and anise oil in the bowl of a stand mixer fitted with a paddle attachment. Beat until creamy and well combined. Mix in 1 cup flour, baking powder, and salt until combined. Slowly add remaining flour, 1 cup at a time, mixing on low speed until mixture resembles a thick pancake batter.
- Preheat a pizzelle cooking iron according to manufacturer's instructions. Drop a teaspoon of dough onto each plate of the cooking iron and close the lid. Cook just until steaming slows, 10 to 20 seconds. Repeat with remaining batches of batter.

My mom made these cookies years ago. They are good with or without the frosting. Sorry, the recipe didn't say how long they cook (so I guessed on the prep and cook time), or how much powdered sugar to use, and I haven't made these in awhile so I don't remember. - Cookie: Cream sugar and margarine.
- Add eggs and vanilla, stir.
- Stir in flour, cocoa and salt.
- Mix thoroughly.
- Drop onto hot waffle iron.
- Bake like waffles.
- Frost when cool.
- Frosting: Put ingredients, except powdered sugar in a medium saucepan.
- Boil, add powdered sugar until it gets to desired thickness.
- Cool slightly, frost cooled cookies.

- In large bowl, beat butter and sugar until blended. Beat in eggs, milk and vanilla. In another bowl, whisk flour, baking powder and baking soda; gradually beat into butter mixture., Shape level tablespoons of dough into balls; place 2 in. apart on a preheated waffle iron coated with cooking spray. Bake on medium heat until cookies are golden brown, 3-4 minutes. Remove to wire racks to cool. If desired, dust with confectioners' sugar. Freeze option: Freeze cookies, layered between waxed paper, in freezer containers. To use, thaw in covered containers. If desired, dust with additional confectioners' sugar.

- Melt chocolate over low heat. Cream together sugar and butter or margarine. Add chocolate and mix well.
- Add eggs and dry ingredients. Mix well.
- Heat waffle iorn. Non stick spray can be used to prepare iron.
- Drop about 1 Tablespoon of dough in each section of preheated iron.
- Bake until cookies start to turn brown. Be careful because they can burn easily.

- For Waffle Cookies:.
- Pre-heat oven to 350 degrees F and plug in waffle iron.
- In a stand mixer, cream sugars and butter until fluffy. Add eggs one at a time. In a glass, mix buttermilk and vanilla. In a third bowl, mix dry ingredients, flour, salt and baking soda. Alternate mixing dry ingredients and milk mixture into your batter. Lastly, add food coloring until batter is a golden Eggo yellow.
- The next step will depend on how hot your griddle is. Mine ran very hot and was vintage, so it didn't have an adjustment setting, so my cook time had to be very short. I placed a heaping half cup of the batter onto my greased waffle iron and cooked for thirty seconds (any longer and it would brown too much and lose the Eggo coloring I was going for). After all of my cookies were pressed, I placed them on several baking sheets and baked in the oven for ten minutes each.
- For Buttercream Butter Pat:.
- In a stand mixer, beat room temp butter until fluffy. Add icing sugar one cup at a time. Add whipping cream, salt and desired color (enough yellow food coloring to turn the frosting to a butter-yellow) and whip until very pale and airy. Scoop into a butter-shaped mold created with cardboard and tape, then lined with parchment and chill in freezer until hard. Remove from mold and slice into 1/8-inch thick slices and use heart-shaped cut-out to create your butter pats. This can be done separately and frozen until ready to apply.
- For Syrup:.
- Mix all ingredients in a microwave safe bowl. If mixture is too thick or grainy, heat in microwave at 15 second intervals until desired syrup consistency is reached. Place in piping bag with 1/8-inch circular opening and drizzle over waffle cookies in a continuing 'S' pattern.

- Melt shortening and chocolate on low heat. (I use butter-flavored shortening - BUT NOT BUTTER OR MARGARINE).
- Let cool.
- Combine beaten egg, sugar, milk, and vanilla.

- Combine dry ingredients and pecans. Add to wet mix.

- Heat Waffle Iron.
- In a big mixing bowl combine the softened butter, sugar, eggs, cocoa, and vegetable oil. Mix together well.
- Add in flour, salt, and vanilla. Mix all ingredient together until combined.
- Drop batter by heaping tablespoon onto the generously greased waffle iron.
- Keep the batter towards the center/middle of each quarter of the waffle iron. It will squish towards the outside edges when you close the lid.
- Close the lid and cook for about 1 minute. You can open slightly to test for doneness. All waffle irons vary, so watch closely for the cook time that works best for you.
- After they are done cooking, lift them off of the waffle iron with a fork and cool on a plate or cooling rack.
- Be sure to spray the waffle iron in between each batch to prevent them from sticking.
- While the cookies are cooling, make the frosting.
- Mix the softened butter, powdered sugar, milk, vanilla, and cocoa until creamy and smooth.
- Frost the cooled cookies and add sprinkles if desired.
