STUFFED ZUCCHINI BLOSSOMS
One of the great joys in life for me and my wife are stuffed zucchini blossoms. We were first introduced to these delicious little bites of heaven on our first visit to Rome and have enjoyed them ever since.

Steps:
- mix all the ingredients together and place in small pastry bag, or a ziplock bag with an end snipped off.
- open one end of the blossom gently and squeeze a small amount of cheese into the blossom. Due not overfill, you want enough to almost fill the blossom not to make it bulge.
- Refrigerate the blossoms for about 10-15 minutes while you get the egg mixture together.
- Lightly beat the eggs and add in milk, flour, cheese, and basil. Mix well. Egg Mixture should be about pancake mix thickness. If the mix is too thick the egg coating will be to thick and if its too thin it will run off.
- Heat a large sauté pan and then add about 1/4 inch of cooking oil to the pan.
- Dredge Zucchini Blossom in egg mixture, shed any excess egg and place into hot oil, continue the process till you fill the pan.
- Fry each side of the Blossom until golden brown, about two minutes on each side, the second side may cook faster, keep an eye on them.
- Place finished blossom on paper towels to drain off any excess oil.
- Place blossoms on serving tray and season with grated Romano cheese, sea salt and black pepper.

GOAT CHEESE-STUFFED ZUCCHINI BLOSSOMS WITH ZUCCHINI NOODLES
Steps:
- For the blossoms: Heat the oil to 375 degrees F in a heavy-bottomed pot over medium-high heat.
- Combine the goat cheese, Parmesan, parsley and chives in a medium bowl. Season with salt. Spoon the mixture into a piping bag; cut a hole in the bag. Gently pipe the mixture into the zucchini blossoms and pinch the ends together a bit.
- Whisk together the flour and white wine in a medium bowl. Working in batches so you don¿t crowd the pot, dip each blossom into the batter and then carefully place in the hot oil. Cook until lightly puffed and golden, about 3 minutes. Remove the blossoms from the oil and drain on paper towels. Season with salt immediately.
- For the noodles: Coat a large skillet with some olive oil, add the anchovy, garlic, oregano and some red pepper flakes, and turn the heat to medium. When the garlic gets brown and aromatic, remove it from the skillet and discard. Add the tomatoes, some salt, and 1/4 cup water. Cook, shaking the pan occasionally, until the water is reduced by about half.
- Remove the skillet from the heat, add the zucchini noodles and toss until just wilted. Taste and season.
- Toss the arugula with some olive oil and salt and divide it among 4 dinner plates. Top the arugula with some zucchini pasta and 2 zucchini blossoms, shave some Parmesan over the tops, and serve.
FRIED CHEESE-STUFFED ZUCCHINI BLOSSOMS

- In a medium bowl, whisk together the flour, water and salt until smooth. Set aside.
- In a small bowl combine the goat cheese, cream cheese, heavy cream, basil, and green onion. Mix until smooth. Season with salt and pepper, to taste. Spoon 1 1/2 to 2 teaspoons filling into each blossom. Close the blossoms and gently twist the petals to seal.
- In a large heavy-bottomed saucepan, pour enough oil to fill the pan about a third of the way. Heat over medium heat until a deep-frying thermometer inserted in the oil reaches 350 degrees F. (If you don't have a thermometer a cube of bread will brown in about 1 minute.) Dip the stuffed zucchini blossoms in the batter and allow any excess batter to drip off. Fry for 1 to 2 minutes, turning occasionally, until golden brown. Allow the cooked blossoms to drain on paper towels.
- Season with salt and serve with your favorite marinara sauce or vinaigrette.
THREE CHEESE STUFFED ZUCCHINI BLOSSOMS
This is a good way to use the male blossoms from your zucchini plants. Very good, and very cheesy! You can add more herbs to taste...

Steps:
- Remove pistils from the blossoms, but leave the stems intact.
- Make a paste with the garlic and the salt and put in a bowl with the three cheeses, herbs, and pepper.
- Carefully open the petals of each blossom and stuff about 1 tbsp of the mixture into the base.
- Twist the petals together to seal.
- Finish stuffing all blossoms.
- Dip the blossoms 1 at a time into the beaten egg.
- Coat each blossom with flour.
- In a medium skillet, add enough light olive oil to cover by 1/2 inch.
- Fry the blossoms 3 or 4 at a time, turning occasionally over medium heat until golden brown, Drain on paper towels.

- Make the batter by putting the flour and salt in a bowl or tray where you can dip the flowers into. Add the milk, then gradually add the water a little at a time and beat with a whisk or fork. Keep adding the water until a thick consistency is reached. Whisk for at least 2 minutes and set aside.
