OVEN-BAKED ZITI WITH THREE CHEESES

Steps:
- Heat oil in heavy large saucepan over medium-low heat. Add onion, garlic and fennel seeds and sauté until translucent, about 5 minutes. Mix in tomato paste and cook 1 minute. Add tomato sauce, water, oregano and sage. Simmer until mixture thickens slightly, stirring occasionally, about 10 minutes. Stir in 1/4 cup Parmesan. Season to taste with salt and pepper.
- Preheat oven to 450°F. Butter 9x13-inch glass baking dish. In medium bowl combine ricotta cheese and egg. Reserve 1/4 cup mozzarella cheese for topping. Add remaining mozzarella to ricotta cheese mixture and blend. Season with salt and pepper.
- Spread 1/4 of tomato sauce over bottom of prepared dish. Layer 1/3 of pasta over. Drop half of ricotta cheese mixture over by spoonfuls. Spread 1/4 of sauce over. Repeat layering with another 1/3 of pasta, remaining cheese mixture, 1/4 of sauce and remaining pasta. Spread remaining sauce over and sprinkle with reserved mozzarella and remaining 1/4 cup Parmesan. (Can be prepared 1 day ahead. Cover and refrigerate.)
- Cover casserole and bake until heated through, about 40 minutes.

- Preheat the oven to 350 degrees. In a large bowl, combine ricotta cheese, eggs and parmesan cheese; set aside.
- In another bowl, throughly combine hot pasta and pasta sauce.
- In a 13x9 inch baking dish, spoon in 1/2 of the pasta mixture; evenly top with cheese mixture then remaining pasta. Sprinkle with mozzarella cheese.
- Bake 30 minutes or until heated through. Serve, if desired with additional heated pasta sauce.

- Heat olive oil in a large pot over medium high heat. Add pancetta and sauté until slightly crisped, about 5 minutes. Add onion and garlic; turn heat down and sauté for 5 minutes. Add red pepper flakes and tomato paste; sauté for 2 minutes. Add tomato sauce, crushed tomatoes, and salt. Simmer for 20-30 minutes.
- Cook ziti according to package directions. Toss with about two thirds of the pasta sauce. Reserve remaining 2-or-so cups of sauce.
- Preheat oven to 400 degrees. Transfer half of the pasta to a 9×13 baking dish. Spoon the mascarpone over the top in little blobs. Cover with half of the mozzarella and half of the provolone. Cover with about a cup of sauce. Transfer the rest of the saucy ziti on top of your cheese layer. Finish with remaining mozzarella, provolone, and spoon the remaining sauce around on top for prettiness.

- Heat the olive oil in a 5-quart Dutch oven or stockpot over medium heat. Add the onions and garlic and sauté until they start to soften. (Don’t let the garlic burn or it will be bitter.) Add the sausage and ground beef, crumble, and cook until brown. Drain off the fat. Add the tomato sauce, marinara sauce, tomatoes, Italian seasoning, red pepper flakes, and salt and pepper. Stir and simmer over low heat for about 30 minutes.
- Preheat the oven to 375°. Take about half of the sauce and place it in a large bowl to cool. In a separate bowl, add 2 cups of the Mozzarella, all the Ricotta and Parmesan, as well as the eggs. Season with salt and pepper again, if desired. Stir gently together just a few times; do not completely combine. Add the drained pasta to the cheese mixture and toss lightly. Add the reserved cooled meat sauce to the pasta mixture and toss to combine.
- Add half of the pasta mixture to a deep casserole dish or 13″ x 9″ baker. Spoon half of the remaining sauce over the pasta mixture in the pan, then top with half of the leftover Mozzarella. Add the remaining pasta mixture, follow with the remaining sauce, and end with the remaining cheese. Bake for about 25 minutes, or until bubbling. Let stand for about 10 minutes before serving.
