Three Little Asparagus Soups For Spring image

The most daunting aspect of serving three asparagus soups is finding 18 little bowls. But unless you're having Nathan Lane to dinner, who cares if they match? Coffee cups, old-fashioned glasses, mugs, pairs of cupped hands -- all are fine.

2 pounds asparagus, ends trimmed
6 tablespoons butter
4 cups chicken broth
2 pints half-and-half
2 tablespoons olive oil
1 medium onion, chopped
1 cup Arborio rice
2 cups water
1/4 cup all-purpose flour
1 egg, beaten
1/2 cup bread crumbs
Vegetable oil for deep frying
3 ounces raw salmon fillet, skinned, cut into 1/4-inch dice

Steps:

  • Peel 4 asparagus stalks and slice the remainder crosswise into 1-inch pieces. In a large saucepan, melt the butter over medium heat and add the sliced asparagus and 2 of the peeled stalks. Saute 5 minutes or until soft.
  • Add chicken broth, bring to a boil and add half-and-half. Simmer for 10 minutes. Remove the 2 stalks. Continue to simmer for 10 minutes more, stirring occasionally.
  • Pour the soup through a coarse sieve set over a large bowl, pressing the asparagus through with the back of a large spoon. Scrape the pulp into the soup, whisk and refrigerate 1/3 of it.
  • Cut the 2 cooked asparagus stalks into 1/4-inch dice. Set aside. Slice the 2 raw asparagus stalks into 1 1/2- by- 1/8-inch julienne. Set aside.
  • For a risotto quenelle garnish, heat the olive oil in a large skillet over medium heat and saute the onion until soft, about 10 minutes. Add the rice and saute until translucent, about 5 minutes. Stir in the water, 1/3 cup at a time, adding more as water is absorbed, cooking risotto about 10 minutes in all. Add the diced asparagus and cook for 3 minutes, stirring constantly, until rice is al dente. Spread risotto on a plate to cool.
  • Place the flour, egg and bread crumbs in separate shallow bowls. Shape the rice into quenelles (small footballs) with 2 teaspoons, lightly roll in the flour, then the egg, then the bread crumbs.
  • Heat 2 inches of vegetable oil in a small pot to 375 degrees and fry the risotto quenelles until brown and crisp. Drain on paper towels.
  • To serve, remove the cold soup from the refrigerator and remove any solidified butter to larger portion of soup. Heat the unrefrigerated soup till hot and pour into 12 small bowls, adding the reserved asparagus strands to 6 and the quenelles to 6. Pour the cold soup into 6 small bowls, adding the chopped raw salmon to each. Serve each diner with 3 different soups.

1 pound fresh asparagus, trimmed and peeled
5 tablespoons unsalted butter, divided
5 cups chicken broth, divided
2 leeks, white and light green parts only, thinly sliced
1 pound fresh spinach, stemmed, divided
1 teaspoon white sugar
2 ½ tablespoons all-purpose flour
¼ teaspoon salt
⅛ teaspoon ground white pepper
1 cup frozen green peas
½ cup heavy whipping cream, or more to taste

Steps:

  • Cut asparagus stalks into 1-inch pieces; reserve tips in a bowl.
  • Melt 2 tablespoons butter in a Dutch oven over medium heat. Add 1/3 cup chicken broth and leeks; cover and cook until leeks are tender, about 5 minutes. Add asparagus stalks; cover and cook for 3 minutes.
  • Pour remaining 4 2/3 cups chicken broth into the Dutch oven. Bring to a boil; reduce heat and simmer until asparagus is very tender, 10 to 12 minutes. Add 2 packed cups spinach and sugar; cook until spinach is tender, about 5 minutes.
  • Puree soup with an immersion blender until very smooth.
  • Heat remaining 3 tablespoons butter in a small saucepan. Whisk in flour until well blended; cook for 1 minute.
  • Whisk flour mixture into the pureed soup until smooth and blended. Season soup with salt and white pepper. Bring to a boil; reduce heat and stir in peas. Simmer until peas are barely tender, about 3 minutes. Stir in asparagus tips; simmer until tender, about 5 minutes.
  • Pour heavy cream into the soup. Cook until heated through but not boiling, 3 to 4 minutes. Stir in remaining spinach; cook until heated through, about 3 minutes.

4 tablespoons unsalted butter
2 cups thinly sliced leeks, white and light-green parts only, well washed and patted dry (from 2)
3/4 cup thinly sliced shallot
Kosher salt and freshly ground pepper
1 pound asparagus, trimmed and cut into 1-inch pieces (about 2 cups)
3 to 4 cups ( homemade or low-sodium store-bought)
Crème fraîche, for serving

Steps:

  • In a medium saucepan, melt butter over medium heat. Add leeks and shallot; season with salt and pepper. Cook, stirring, until translucent, about 5 minutes. Add asparagus and 3 cups broth; bring to a boil, then reduce heat and simmer, partially covered, until asparagus is very tender, 12 to 15 minutes. Let cool 5 minutes.
  • Working in batches (don't fill it more than halfway), purée asparagus in a blender until very smooth, 1 to 2 minutes a batch, thinning with more broth if necessary. Transfer to cleaned pan, and heat until steaming. Whisk crème fraîche with a little water until it has the consistency of heavy cream. Spoon some on top of each serving, swirling with a toothpick, if desired.

You may also serve it as a light main course, along with some crusty French bread, butter, a side salad, and a chilled white wine. You may also vary it by adding a touch of finely minced fresh dill or tarragon.

1 lb fresh asparagus
6 cups chicken stock (preferably homemade) or 6 cups broth (preferably homemade)
1/4 cup butter (1/2 stick)
3 tablespoons flour
3 large egg yolks
1 teaspoon curry powder (to taste)
1 cup heavy cream (whipping)
salt
fresh ground white pepper

Steps:

  • Remove and discard woody ends from asparagus stalks;scrape spears with a vegetable peeler.
  • Cut off tips and reserve.
  • Dice stalks and combine with stock in a 4- quart saucepan.
  • Bring to a boil and cook, uncovered, 8 to 10 minutes, or until very tender.
  • Cool, then puree in a blender or food processor; set aside.
  • Melt butter over low heat in large heavy saucepan.
  • Add flour and cook, stirring constantly, 2 to 3 minutes.
  • Stir in puree and bring to a boil over medium heat.
  • Add asparagus tips; cover and simmer 8 to 10 minutes or until tips are tender.
  • While soup is simmering, combine yolks,curry, and cream and miz thoroughly with a whisk.
  • Add to soup and heat through but do not let boil.
  • Season to taste with salt and pepper; serve hot.

¼ cup butter
1 pound leeks, chopped
1 onion, chopped
2 quarts water
3 large potatoes, chopped
2 large carrots, chopped
1 bunch fresh asparagus, trimmed and cut into 1 inch pieces
⅓ cup uncooked long-grain white rice
4 teaspoons salt
½ pound fresh spinach
1 cup heavy cream

Steps:

  • Melt the butter in a large pot over medium heat. Stir in the leeks and onion, and cook until tender.
  • Pour water into the pot. Mix in potatoes, carrots, asparagus, and rice. Season with salt. Bring to a boil, reduce heat, and simmer 30 minutes, until vegetables and rice are tender.
  • Stir spinach and heavy cream into the soup mixture, and continue cooking about 5 minutes before serving.
