BAKED COSTA RICAN-STYLE TILAPIA WITH PINEAPPLES, BLACK BEANS AND RICE



Baked Costa Rican-Style Tilapia with Pineapples, Black Beans and Rice image

1 cup long-grain white rice
2 cups low-sodium chicken broth
1/4 cup freshly squeezed orange juice
1 lime, juiced
2 tablespoons olive oil
1/4 cup finely chopped fresh cilantro, plus more for garnish
2 garlic cloves, minced
1 teaspoon sugar
Kosher salt and freshly ground black pepper
4 (5 to 7-ounce) tilapia fillets, rinsed and patted dry
2 cups jarred or homemade tomato salsa
1 (15-ounce) can black beans, drained and rinsed
2 cups diced fresh pineapple
2 limes, thinly sliced

Steps:

  • Combine the rice and chicken broth in a pot over medium heat and bring to a boil. Reduce the heat to low, cover, and cook until the rice is tender and has absorbed all of the liquid, about 20 minutes.
  • Preheat the oven to 400 degrees F.
  • In a mixing bowl, whisk together the orange juice, lime juice, oil, 2 tablespoons of the cilantro, the garlic, and sugar; season with salt and pepper. Add the tilapia fillets to the marinade, turning to coat. Marinate in the refrigerator for 20 minutes, turning occasionally.
  • Stir together the cooked rice, salsa, beans, pineapple, and remaining 2 tablespoons of the cilantro in a 2 or 3-quart baking dish. Remove the tilapia from the marinade, reserve the marinade, and lay the fish fillets over the rice mixture, overlapping if necessary. Pour the reserved marinade over the fish. Shingle the lime slices over the fish. Bake until the fish flakes easily, is opaque, and cooked through, 25 to 30 minutes. Garnish with chopped cilantro before serving.

4 teaspoons minced garlic, divided
1 1/2 teaspoons kosher salt, divided
1/4 teaspoon sugar
6 (5 ounce) tilapia fillets
3/4 cup long-grain rice
1 cup chopped onion
2 oranges, peeled, seeded, coarsely chopped
1 (28 ounce) can diced tomatoes, un-drained
1 (15 ounce) can black beans or 1 (15 ounce) can pinto beans, drained, rinsed
1 teaspoon dried oregano leaves
1/2 teaspoon fresh ground black pepper
1/4 teaspoon cayenne pepper

Steps:

  • For the tilapia marinade, combine lime juice, 1 tablespoon olive oil, 2 tablespoons cilantro, 1 teaspoon garlic, 1/2 teaspoon salt, and sugar in a shallow dish.
  • Add tilapia and marinate 15 minutes, turning once.
  • To prepare the bean and rice mixture, cook the rice according to package and keep warm while the tilapia is marinating.
  • Preheat oven to 400 degrees. In a large, skillet or saucepan, heat 2 tablespoons olive oil on medium heat. Add remaining garlic and onions; sauté until translucent, about 5 minutes, stirring. Add 2 tablespoons cilantro, oranges, tomatoes, beans, oregano, 1 teaspoon salt, pepper, and cayenne.
  • Cook, uncovered, until hot, 7 to 8 minutes, stirring occasionally.
  • Transfer hot rice to a 9 by 13 inch baking dish. Spoon the bean mixture on top of rice and gently blend. Slightly overlap tilapia fillets on top and scrape marinade over fillets.
  • Bake 16 to 20 minutes.

3 Tbsp fresh lime juice
3 Tbsp olive oil, divided
4 Tbsp finely chopped cilantro, divided
4 tsp minced garlic, divided
1 1/2 tsp kosher salt, divided
1/4 tsp sugar
6 tilapia fillets, about 5 ounces each
3/4 cup long-grain rice
1 cup chopped onion
2 medium oranges, peeled and sliced into bite-size pieces
28-oz can(s) diced tomatoes, undrained
15-oz can(s) black beans or pinto beans, drained and rinsed
1 tsp dried oregano leaves
1/2 tsp black pepper
1 pinch chili powder, or to taste
OPTIONAL GARNISHES
lime slices (or lime wedges)
orange slices (or orange wedges)
chopped cilantro

Steps:

  • 1. For the marinade: Combine lime juice, 1 Tbsp olive oil, 2 Tbsp cilantro, 1 tsp garlic, 1/2 tsp salt, and sugar in a small bowl. Add the fillets and marinate for 15 minutes, turning once.
  • 2. While tilapia is marinating, cook rice according to package directions.
  • 3. Preheat oven to 400°F.
  • 4. For the bean mixture, heat 2 Tbsp olive oil in a large skillet with high sides over medium heat. Add onion and remaining 3 tsp garlic, and sauté until soft and translucent, about 5 minutes, stirring frequently. Add remaining 2 Tbsp cilantro, oranges, tomatoes, beans, oregano, 1 tsp salt, black pepper and chili powder. Cook, uncovered, until hot, about 7 or 8 minutes, stirring frequently.
  • 5. Transfer cooked rice to a 9x13-inch (or 3-quart) baking dish. Add the bean mixture, and stir gently to mix the beans and rice together. Place fillets, overlapping slightly, on top of the beans and rice layer, and spoon the marinade over the fillets. Bake about 16 to 20 minutes or until the tilapia easily flakes when pierced with a fork.
