4 -5 large egg yolks
1/2 cup sugar
1/2 cup milk
16 ounces ricotta cheese (or use 8 oz. ricotta and 8oz. cream cheese,)
2 ounces semisweet chocolate, grated
2 cups whipping cream (heavy)
2 tablespoons cocoa
1 cup espresso, cold (or add 1 oz. coffee liqueur to coffee) or 1 cup very strong coffee (or add 1 oz. coffee liqueur to coffee)
1/4 cup light rum or 1/4 cup brandy
22 lady savoiardi (or more (you find them in Italians food stores)

Steps:

  • Beat egg yolks and sugar in 2 quart sauce pan, beat in milk until sugar is dissolved.
  • Heat to a boil over low to medium heat, stirring constantly.
  • reduce heat and boil for one minute.
  • Cover and refrigerate until cold.
  • Mix egg milk mixture with cheese and grated chocolate, set aside. (refrigerate)
  • Beat whipping cream and 2 tablespoons of cocoa in chilled bowl until stiff, refrigerate.
  • Mix coffee with rum, or brandy and coffee liqueur, (optional)
  • Dip half savoiardi in coffee mixture, ( do not soak)
  • arrange in single layer in ungreased rectangular baking dish (11 X 7 X 1.1/2'')
  • Spread half cheese mixture over savoiardi.
  • Spread half of the whipped cream over the cheese mixture.
  • Repeat with remaining savoiardi, cheese mixture and whipped cream mixture.
  • Sprinkle with cocoa and or grated chocolate.
  • P S You can add vanilla extract when beating eggs and sugar. (optional).

  • Put the egg, sugar and vanilla sugar in a bowl and mix gently to a creamy consistency. Add the mascarpone and fold in to obtain a cream.
  • Put the coffee in a bowl with the coffee liqueur. Dip the biscuits for a second or two in the coffee mixture, letting them absorb just enough to keep firm but not falling apart. Starting with biscuits, arrange in four individual dishes alternating layers of biscuit and mascarpone. Dust with cocoa powder and put into the fridge to set and chill.

  • Place the egg yolks and sugar in a heat-proof bowl and whisk to combine. The mixture will be very thick. Place the bowl with the eggs over the hot water, creating a double boiler. Don’t allow the bowl to touch the water. Cook the eggs and sugar while whisking constantly, about 7-8 minutes or until thick. Remove from the heat.
  • Dollop spoonfuls of the room-temperature mascarpone into the yolk mixture and stir with a rubber spatula to combine. Continue adding the mascarpone until all is incorporated. Add the vanilla and blend.

  • In a small to medium-sized bowl, mix the cooled espresso with 1/3 cup of Kahlua and 1 tablespoon of refined sugar. Set aside.
  • Separate the egg whites from the yolks into two large bowls. Beat the egg whites until they are firm.
  • To make the cream filling, whisk the egg yolks until frothy then add the remaining 1/3 cup of Kahlua. Mix well; then add the mascarpone cheese and remaining 3 tablespoons of refined sugar. Once fully blended, fold in the beaten egg whites.
  • Cover the bottom of an 8-inch square baking dish with a generous layer of cream filling. Using half of the cookies, fully dip each ladyfinger in the espresso & Kahlua mixture and hold there for several seconds. Carefully arrange them in a single layer over the bed of cream.
