CHEESE SQUARES APPETIZER
This is a wonderful baked appetizer blending the tastes of Cheddar cheese and jalapeno peppers. The amount of jalapenos used can easily be adjusted to personal taste, although baking does take a lot of the burn out of the peppers. I've made this several times and I never have leftovers. My husband wishes I would make these for him every day. I don't recommend doubling the recipe; make multiple batches instead.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place the eggs into a food processor, and process until light and frothy. Add Cheddar cheese, onion, and jalapeno peppers, and process until smooth. Pour into an ungreased 8x8 inch baking pan.
- Bake in the preheated oven until set, 25 to 30 minutes. Cool for 5 minutes; cut into squares to serve.

- Preheat a broiler. Place the bread on a baking sheet and broil it 1 to 2 minutes per side, until lightly toasted.
- Spread the bread with a thin coating of mayonnaise, then Dijon mustard. Top with 1 pinch salt. Add the shredded cheese and sprinkle with oregano.
- Place the toast bake on the baking sheet. Broil again for about 1 to 2 minutes until the cheese is melted. Enjoy!

- Place the Parmesan cheese, mayonnaise, onion and reserved onion juice in a blender or food processor. Blend thoroughly. Spread the mixture evenly on slices of cocktail rye bread.

These appetizers are so good! The best part is you can make them ahead and freeze them and bake them frozen!

Steps:
- In mixing bowl, cream butter, cheese spread and egg until smooth.
- Stir in chilies, salsa and cheddar cheese.
- Spread about 1 tbsp of cheese mixture on each slice of 1 loaf of bread.
- Top with remaining bread, spread with more cheese mixture.
- Cut each sandwich into 4 squares, place on a greased baking sheet.
- At this point, you can either bake them fresh or freeze and bake later.
- Bake at 350°F for 10-15 minutes.
- To freeze, place in a single layer on a baking sheet.
- Freeze for 1 hour.
- Remove from the baking sheet and store in an airtight container in freezer.
- To bake frozen, place squares on a greased baking sheet.
- Bake at 350°F for 15-20 minutes or until browned and bubbly.
CHEESE TOAST

- In a medium bowl, combine the Cheddar, Monterey Jack, mayonnaise, Parmesan, butter, salt, pepper and seasoned salt.
- Cut the loaf in half lengthwise, then into thirds or fourths. Evenly spread the cheese mixture onto the bread pieces. Wrap each piece in a foil "purse," leaving a little room at the top between the cheese and the foil.
- The bread can either be frozen for later, or baked right away. If baking right away, place on a baking sheet and bake at 350 degrees F for 10 minutes. If cooking from frozen, bake on a baking sheet at 350 degrees F for 20 minutes.
CHEDDAR CHEESE TACO SHELLS

- Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper. Wrap a yardstick or ruler with aluminum foil and suspend it between two 28-ounce cans.
- Sprinkle 1/2 cup of the shredded Cheddar on the baking sheet to form a circle 6 inches in diameter. Repeat with another 1/2 cup of cheese, making 2 circles. Bake the first batch until the cheese melts and turns light brown, 6 to 8 minutes.
- Using a spatula, transfer the cheese circles to the suspended yardstick and drape them over to form taco shells. Let them hang until firm, then carefully remove. Repeat with the remaining cheese.
- Fill the shells with your favorite taco fillings.

- Top 2 slices of the bread with cheese. Place remaining slices of bread over cheese. Spread top of bread slices with half of the margarine.

- Heat oven to 350°F. Line bottom and sides of 13x9-inch pan with foil, leaving foil overhanging at 2 opposite sides of pan; spray foil with cooking spray.

- Cut crust off all slices of bread. Mix all remaining ingredients together in medium sized bowl. Spread cheese mixture evenly over 3 slices of bread and stack slices evenly. Cut the stack into 6 even squares. Once you have finished cutting the entire loaf into layered cheese squares, place squares onto a cookie sheet. Let them harden in the freezer for 15-20 minute Then you can either bake them @ 350 degrees for 10 - 15 minute or put them in a large Ziploc bag and freeze for later use.
