These banana cookies made with coconut oil are soft and mildly sweet with a subtle coconut flavor. My son likes them with raspberry jam on top.

2 teaspoons coconut oil, or as needed
½ cup twice-sifted coconut flour
1 teaspoon cream of tartar
½ teaspoon baking soda
¼ teaspoon sea salt
1 ⅓ cups mashed ripe bananas
3 large eggs
⅓ cup extra-virgin coconut oil, warmed slightly
1 tablespoon vanilla extract

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C) using the convection setting. Grease 2 cookie sheets with 1 teaspoon coconut oil each.
  • Mix coconut flour, cream of tartar, baking soda, and salt together in a small bowl.
  • Combine mashed bananas, eggs, 1/3 cup coconut oil, and vanilla extract in a separate bowl. Beat with an electric mixer until creamy. Slowly add the flour mixture while continuing to mix.
  • Drop spoonfuls of cookie dough onto the greased cookie sheets. Flatten cookies using the back of the spoon.
  • Bake in the preheated oven until no longer wet, about 35 minutes.

2 cups white flour
1 tablespoon fine sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/8 cup toasted coconut flakes
1/4 cup butter, cold
3/4 cup milk, cold
1/4 teaspoon vanilla
1 large banana, mashed

Steps:

  • Preheat oven to 400 degrees.
  • Combine, flour, sugar, baking powder, soda, salt and coconut in a large bowl.
  • Cut in butter until crumbly, set aside.
  • Add the milk, vanilla and banana together.
  • Make a well in the center of the flour bowl and pour in milk mixture.
  • Stir to moisten only.
  • Drop dough by spoonful onto greased cookie sheet.
  • Bake at 400 degrees for 15 - 20 minutes.
  • Serve hot.

Number Of Ingredients 11

1 3/4 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 beaten eggs
1 cup mashed ripe banana (2 to 3 medium bananas)
1/3 cup cooking oil
2 tablespoons milk
1 teaspoon vanilla
1 (3 1/2 ounce) can flaked coconut, toasted (1 1/2 cups)

Steps:

  • Grease a 9-by-5-by-3-inch loaf pan; set aside. In a large mixing bowl stir together flour, sugar, baking powder, baking soda, and salt. Make a well in the center. In a medium mixing bowl combine beaten eggs, mashed bananas, oil, milk, and vanilla; mix well. Add egg mixture to flour mixture; stir just till combined. (The batter should be lumpy.) Fold in toasted coconut.
  • Pour batter into prepared loaf pan. Bake in a preheated 350 degrees F oven for 50 to 60 minutes, or till a toothpick inserted near the center comes out clean.
  • Cool in pan on a wire rack for 10 minutes. Remove from pan; cool thoroughly on a wire rack. Wrap and store overnight before slicing.

1 egg, slightly beaten
1 ripe banana
1/4 cup sugar
4 tablespoons butter or 4 tablespoons margarine, softened
1/2 teaspoon banana extract
about 2 cups self-rising flour
1 large granulated decorator sugar candy sprinkles (optional)

Steps:

  • Combine egg, ripe banana, sugar, softened butter or margarine, banana extract in a mixing bowl; mix well. Stir in enough flour to make a soft dough. Turn out onto a floured surface; knead lightly a few times. Gently pat dough out and cut out with a biscuit cutter. Place on an ungreased baking sheet and bake at 350 degrees about 15 min-18 minutes.

1 teaspoon salt
6 -7 tablespoons shortening
1 cup milk

Steps:

  • Preheat oven to 450°F Grease muffin pan or cookie sheet.
  • I skip sifting but I fluff my flour before I measure.
  • Mix dry ingredients.
  • "Cut in" shortening. If you don't have a pastry blender, this means using 2 knives and, with a scissor motion, cut across the shortening repeatedly until the mixture is a very fine crumble.
  • Add milk.
  • Stir lightly, just enough to blend ingredients, or biscuits will be tough. Dough will be sticky and cling to fork.
  • Fill greased muffin pan 2/3 full or drop 1" apart on greased cookie sheet.
  • Bake at 450°F 12-15 minutes.
