No-Oil Tofu Ranch Dressing image

Welcome to the nutritarian ranch dressing holy grail! Oil-free, no nuts or seeds, no-added-salt, and completely conforming to Dr. Fuhrman's aggressive weight-loss, whole food, plant-based program!

Number Of Ingredients 11

14 oz package firm tofu
1/2 cup water, divided
3 tbsp nutritional yeast
2 tbsp lemon juice
3 tbsp fresh curly parsley, finely chopped ((sub 1 1/2 tbsp dried))
1 1/2 tbsp fresh dill, finely chopped ((sub 3/4 tbsp dried))
1 1/2 tbsp fresh chives, finely chopped ((sub 3/4 tbsp dried))
1 tsp onion powder
1 tsp garlic powder
1/2 tsp ground pepper
1/2 tsp smoked paprika or Cayenne pepper ((optional))

Steps:

  • Start with the "buttermilk" base: Add tofu, 1/2 cup water, lemon juice, nutritional yeast, onion and garlic powders, pepper, and smoked paprika or Cayenne pepper to blender.
  • Blend on high for about 2 to 3 minutes until you get a smooth, creamy consistency.
  • Empty "buttermilk" base into mixing bowl. Fold in dill, parsley and chives.
  • Adjust your consistency by adding 2 tbsp. of water and mixing, until you get the thinness you want. Adjust easonings as necessary.

This is the perfect creamy vegan veggie dip to serve at a party, a potluck, or just for snacking on at home. It's nut-free, dairy-free, oil-free, and delicious!

300 g soft / silken tofu ((1 ¼ cup when blended))
1 tablespoon dried dill weed
2 teaspoons dried parsley flakes
2 teaspoons dehydrated onion flakes
1 teaspoon onion powder
¾ teaspoon garlic powder
¾ teaspoon salt
1 tablespoon + 1 teaspoon fresh lemon juice
fresh or dried dill weed or parsley for garnish ((optional))

Steps:

  • Add all ingredients to a food processor and blend. Stop the food processor once to scrape down the sides. Blend again.
  • Put dip into an airtight container, cover, and place in the refrigerator for at least 1 hour.
  • Serve cold and stir before serving with your favourite veggies, chips, or crackers (see above for more suggestions).

1 teaspoon parsley flakes
1/2 teaspoon dill
1/2 teaspoon basil
1 teaspoon chives
1/4 teaspoon black pepper
1/2 teaspoon black salt (gives unique flavor), regular salt will work too

Steps:

  • Begin by making the Low-Fat Vegan Mayonnaise. It is very simple to make in a blender in 5-minutes.
  • In a large bowl, whisk the mayo and all other ingredients together until smooth.
  • Serve over greens as a salad dressing, or as a dip for endless veggie options.

4 ounces drained soft (silken) tofu
3 tablespoons white miso (fermented soybean paste)
1 tablespoon fresh lemon juice
2 teaspoons Sherry vinegar or white wine vinegar
1/2 teaspoons garlic powder
1/2 teaspoons onion powder
1/4 teaspoons freshly ground black pepper
1/2 cup sour cream
2 tablespoons chopped fresh chives
1 tablespoon chopped fresh flat-leaf parsley
Raw vegetables

Steps:
