CHOCOLATE-BANANA PUDDING

Steps:
- In a small saucepan, bring cream to a boil over medium-high. Remove from heat and add chocolate. Let sit 5 minutes. Add confectioners' sugar and whisk to combine. Let cool to room temperature.
- Layer 13 chocolate wafers in a 2-quart baking dish. Add half the chocolate mixture, then top with lengthwise banana slices. Top with 13 more cookies and remaining chocolate mixture. Cover and refrigerate until pudding is set and cookies are tender, about 2 hours (or up to 1 day). Top with round banana slices and serve.

MEXICAN CHOCOLATE TOFU PUDDING
Steps:
- In a small pot, combine sugar with 3/4 cup water; bring to a boil and cook until sugar is dissolved, stirring occasionally. Cool slightly. Put the sugar mixture, tofu, chocolate, vanilla, cinnamon, and chili powder in a blender and puree until completely smooth, stopping machine to scrape down its sides if necessary. Divide among 4 to 6 ramekins and chill for at least 30 minutes. If you like, garnish with chocolate shavings before serving.

CHOCOLATE BANANA TOFU MOUSSE/DESSERT
I was requested to make this for a gathering and was a bit skeptical about it. However, it is so easy to make and it tastes great. Nobody knows that it is made with tofu until they are told. Found this recipe in the "Can't Believe It's Kosher" cookbook. Cook time does not include chill time.

Steps:
- Melt chocolate chips in a double boiler or in microwave.
- Place tofu and 1/4 of banana chunks in blender or food processor and puree.
- Add remaining banana in small batches and process until smooth.
- Add vanilla, brown sugar, salt and vinegar and blend.
- Add melted chocolate chips (will be warm), pureeing until smooth and uniform texture.
- Adjust brown sugar to taste.
- Transfer to container and cover.
- Chill at least 2 hours prior to serving.
HOMEMADE CHOCOLATE-BANANA PUDDING
My family, from East Texas, only made banana pudding with chocolate pudding. I did not taste it made with vanilla pudding until after I got married. I converted my wife!

Steps:
- Combine milk and chocolate in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted and mixture is hot, about 5 minutes.
- Mix sugar, flour, and salt together in a bowl. Add some of the hot liquid to the dry ingredients; mix well. Pour dry ingredients into the double boiler and stir well. Cover and cook over a rolling boil, stirring often, until thickened, about 15 minutes.
- Pour some of the hot mixture into the beaten egg yolks, whisking quickly to avoid scrambling the eggs. Pour the mixture back into the double boiler and whisk to combine. Whisk in butter and vanilla.
- Line the bottom of a serving bowl with wafer cookies. Pour in some of the pudding to cover and top with sliced bananas. Repeat layers until all of the pudding is gone, ending with bananas on top.

TOFU CHOCOLATE PUDDING
I personally think that the Mori Nu Silken (Firm) tofu works beautifully for this recipe. Its Vegan and Gluten Free and is a real treat for those wanting Vegan desserts. For an intense chocolate flavour you can increase the chocolate chips to 3/4 cup but 2/3 cup works best for us. Steps:
- Combine the water and chocolate chips on top of a double boiler.
- Stir to melt it until smooth. Set aside.
- Blend the Tofu to puree it until its smooth and lump free.
- Add the melted chocolate to it and blend it once again to combine it well.
- IMPORTANT STEP: Refrigerate this for at least 2 hours. The longer you keep it, better for the tofu and chocolate to mingle. It will thicken.
- You can pipe them into serving bowls/ramekins and serve them plain or with raspberries.
