CRAB CAKES IN RICE PAPER WITH GINGER-LIME SAUCE



Crab Cakes in Rice Paper With Ginger-Lime Sauce image

Maybe once a year I let myself be talked into making this recipe which is, to be honest, a bit of a pain. But the resulting crab cakes are really fantastic.

2 green onions, thinly sliced
1 large piece fresh ginger, peeled and minced
2 small garlic cloves, peeled and minced
1 jalapeno pepper, seeded and minced
16 ounces crabmeat, picked over
1/2 cup mayonnaise (homemade really best for this recipe)
1/2 cup breadcrumbs (panko, the Japanese variety)
1 teaspoon chili paste
1 egg
1 egg yolk
4 teaspoons cilantro leaves, chopped
salt and pepper
6 sheets rice paper, soaked in water
2 tablespoons vegetable oil
1 cup mayonnaise (homemade)
2 tablespoons cilantro, chopped
1 teaspoon lime zest
2 tablespoons lime juice
2 teaspoons ginger, peeled and grated

Steps:

  • Combine green onion, ginger, garlic, jalapeno, crab meat, mayonnaise, bread crumbs, chili paste, egg, egg yolk, cilantro in a medium sized bowl. Salt and pepper to taste. Cover and refrigerate until ready to use.
  • Working with rice paper takes some finesse, so it's a good idea to practice with one or two until you're comfortable.
  • Line a baking sheet with parchment paper.
  • Fill a large flatish pan with water, and float the rice paper on it for about five minutes.
  • Check the crab mixture. If it's very wet, you'll have to drain or squeeze out some of the moisture.
  • Remove a sheet of rice paper from the water and put it on a clean cutting board. It's easy to tear the rice paper at this stage, so pat it dry gently.
  • Spoon about 3/4 cup of the crab mixture on top and fold the edges of the rice paper over the filling. Set aside on the prepared baking sheet.
  • Repeat with remaining rice papers and filling.
  • Cover the baking sheet with plastic wrap and put it into the refrigerator for a half hour or an hour. This helps keep the crab cakes from breaking up in the next part.
  • In a medium skillet, heat the oil over medium-high heat. Working in batches if necessary, place the crab cakes in the skillet and saute until golden brown. Turn the crab cakes and saute on second side until golden brown.
  • For the sauce:.
  • Combine homemade mayonnaise, chopped cilantro, lime zest, lime juice, grated ginger. Let this sit for at least an hour so the flavors mingle.

Juicy fat little nuggets of crabby goodness! I developed this because of a craving for a sweet-hot crab dish I'd enjoyed at a Thai restaurant. I love crabmeat (jumbo lump, please, none of the frozen/canned yuck for *moi*) but dislike most crab-cake recipes because they are either too bready, or somehow involve cheese. Just me personally: I don't like pairing fish with cheese. These succulent cakes will be our dinner entree for New Year's Eve 2011!

1 lb premium lump crabmeat, drained
1 tablespoon freshly-squeezed lemon juice
1 tablespoon ginger, finely minced
5 green onions, chopped
1/2 red bell pepper, finely minced
2 garlic cloves, finely minced
1 tablespoon vegetable oil
1 teaspoon crushed red pepper flakes
2 tablespoons fresh parsley, chopped
3 tablespoons mayonnaise
1 egg, beaten
1 cup fresh breadcrumb, finely crushed (or panko)
sweet chili sauce (Thai Kitchen brand)

Steps:

  • Gently toss the crabmeat with lemon juice and ginger. Set aside.
  • In oil, saute' onions, pepper, and garlic until it is all soft. Let cool and toss with crabmeat. Add remaining ingredients, except for breadcrumbs.
  • Form into small patties, about 2.5" in diameter. Place on wax paper in freezer for 30 minutes.
  • Remove from freezer and pat with bread crumbs on both sides.
  • Palace on parchment-covered baking sheet and bake for 2 minutes at 350, or until browned.
  • Top with 1 T sweet chili sauce and serve.

Living in Seattle, and having eaten these at Etta's, I can attest that Etta's Crab Cakes are superb. They are included in "I Love Crab Cakes: 50 Recipes for an American Classic" by Tom Douglas with Shelley Lance and have been "rereleased" (so to speak) on numerous other websites. One hour of the estimated preparation time is chilling time. Timing is based on buying (admittedly pricey)Dungeness crab meat. If buying cooked crabs and planning to extract crab meat yourself, add at least an hour.

1 large egg yolk
1 tablespoon cider vinegar
1 tablespoon Dijon mustard
1 tablespoon finely chopped red bell pepper
1 tablespoon finely chopped onion
2 teaspoons chopped parsley
1 teaspoon Tabasco sauce
1/2 teaspoon paprika
1/2 teaspoon chopped fresh thyme
1/4 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
1/4 cup olive oil
1/4 cup sour cream
1 lb fresh dungeness crabmeat, picked clean of shell and lightly squeezed if wet
4 cups fresh breadcrumbs
3 tablespoons chopped parsley
4 tablespoons approx. unsalted butter

Steps:

  • In a small food processor, combine egg yolk, vinegar, mustard, bell pepper, onion, parsley, Tabasco, paprika, thyme, salt and pepper.
  • Pulse to mince the vegetables and combine the ingredients.
  • With motor running, slowly add oil through the feed tube until the mixture emulsifies and forms a thin mayonnaise.
  • Transfer mayonnaise mixture to a large bowl and stir in sour cream, then carefully fold in crabmeat.
  • Gently form into 8 crabcakes, about 3 inches across and ¾-inch thick.
  • Put the fresh bread crumbs in a shallow container and stir in parsley.
  • Lightly dredge the crab cakes on both sides in the bread crumbs.
  • Chill for at least 1 hour (preferably longer).
  • Put 2 large nonstick skillets over medium heat and add about 2 tablespoons butter to each pan. When butter is melted, add 4 cakes to each pan.
  • Gently fry until golden brown on both sides and hot through, turning once with a spatula, about 4 minutes on each side.
  • Depending on appetites, suggest service of two crab cakes per serving, with lemon wedges.
